Guacamole

Here is a recipe for that upcoming get to together.

Guacamole
Mrs. Joe Glanville, JR.

3 or 4 large lettuce leaves
5 very ripe avocados
1/2 onion, finely chopped
salt
pepper
1/4 teaspoon chili powder
juice of 1 lemon
1 teaspoon olive oil

peel and seed avocados and mash with fork. Add onion, tomato, lemon juice, olive oil and chili powder. Salt and pepper to taste. Serve on lettuce leaf bed. Serve immediately as it will tun dark and watery if it sets more then an 1 hour. Serves 3 to 6.

Cream-Cheese Salad

Here is a salad recipe from 1967 Kansan`s Silver Spoon Cookbook.

Cream-Cheese Salad

1 No. 2 1/2 can crushed pineapple, well drained
1 small can pimientos, finely cut
1 package marshmallows, melted and cooled
2 packages cream cheese
1 cup mayonnaise
1 cup nutmeats, finely chopped
1 cup whipped cream, whipped

Combine pineapple, pimientos, and marshmallows. Add cream cheese, mayonnaise and nutmeats. Add whipped cream. mix gently and chill.

Pumpkin Bread

Tis the season for Pumpkin.....

Pumpkin Bread

3 1/2 cups flouir, sifted
3 cups sugar
4 eggs, beaten
1 cup butter
2 teaspoon baking powder
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
3 teaspoon vanilla
1/2 cup water
2 cups pumpkin

Mix all ingredients by hand at one time. Bake in loaf pan, small coffee cans or deep glass dish. Bake for 30 minutes at 350 degrees.


I used the loaf pans and come up with 2 loafs.

* remember the metal coffee cans.....

Banana Nut Bread

Here is another banana bread recipe for you to try.

Banana Nut Bread

1 3/4 cups flour
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1/4 teaspoon soda
1 1/4 teaspoon cream of tartar
2 large or 4 small bananas, mashed
1 cup nutmeats, chopped

Cream shortening and sugar. Add 2 well beaten eggs and mashed bananas. Sift flour, soda and cream of tartar together. Add nutmeats. Pour into greased and floured loaf pan. Bake 1 hour at 350 degrees. cool on rack.

Berry Bean Bake

Here is a recipe for baked beans with a twist....cranberries.
Would be perfect for that Christmas holiday next week or for that supper planned for a gathering of sorts.

Berry Bean Bake

2 cups dry navy beans ( can substituted for any other dry beans I would think, I used great northern beans)
1/4 pound lean salt pork
1 medium onion, cut up
1/2 cup light molasses
1/2 teaspoon dry mustard
1 cup cranberries ( can use cranberry sauce)1/2 cup sugar

Cover washed beans with 6 cups of water. Bring to a boil and boil 2 minutes. Cover and let stand 1 hour. Cook until tender. Drain, reserving liquid. Put beans in baking pot. Cut thru pork rind, every 1/2-inch making cuts 1-inch deep. Bury onion and pork in beans , leaving rind exposed. Mix 1 cup liquid with remaining ingredients. Mix thru beans. Add enough bean liquid to cover beans. Cover and bake 6 to 8 hours at 300 degrees. Uncover pot last hour.

Tomato-Corn Boheme

Here is a tomato -corn recipe for you`all to try.

1 No. 303 can tomatoes
1 No. 303 can whole kernal corn, well drained
3/4 cup celery, diced
1 large onion, finely chopped
1/4 cup margarine or butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup buttered cracker crumbs

Combine all ingredients except cracker crumbs in well greased 2-quart casserole. Cover with crumbs and bake covered 1 hour at 375 degrees.

Chcolate Ice Box Dessert

Remember the when you used vto call the frig the ice box?????

Choclate Ice Box Dessert

2 large chocolate almond bars
14 large marshmallow, cut into small pieces
1/4 cup milk
vanilla wafer crumbs
1 cup whipped cream

Melt chocolate bars, marshmallows and milk in double boiler. Cool and fold in whipped cream. Line bottom of 8-inch square pan with vanilla wafer crumbs. Spread chocolate mixture over crumbs. Top with more crumbs. Refrigerate 24 hours. To serve, cut into squares and decorate with whipped cream and maraschino cherry.

Choclate Crunch No-bake Cookies

Here doesn`t love no-bake anything.....

Choclate Crunch No-Bake Cookies

1 stick margarine
2 sqaures choclate
2 cups sugar
1/2 cup milk
1 teaspoon vanilla
1 small box grape nuts

Melt margarine and chocolate. Add sugar and milk. Cook over medium heat for 5 minutes, stirring constantly. Remove from heat and add vanilla and grape nuts. Mix thoroughly. Drop by teaspoonfuls onto waxed paper. Let stand about 1 hour.

Tomato Soup Cake

2 Tablespoon butter or shortening
1 cup sugar
2 eggs, well beaten
1 can tomato soup
1 1/2 teaspoon cinnamon
1 teaspoon soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups flour, sifted
1/2 cup raisins
1/2 cup nutmeats

Cream butter and sugar. Add eggs and milk until smooth. Sift cinnamon, soda, baking powder , salt and flour. Add alternately with soup. Bake 45 minutes at 350 degrees.

Apple Walnut Cobbler

Since this is the week before Christmas , I have decided for each day give you two recipes instead of one.Merry Christmas!!!!!!!!

Apple Walnut Cobbler

1/2 cup sugar
1/2 teaspoon cinnamon
3/4 cup walnuts, chopped
4 cups apples, thinly sliced or 1 No. 2 can pie apples
1 cup flour, sifted
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, well beaten
1/2 cup evaporated milk
1/3 cup butter

Mix 1/2 cup sugar , cinnamon and 1/2 cup nutmeats. place apples in bottom of 8 x 2-inch glass dish. Sprinkle with cinnamon mixture. Sift dry ingredients. Combine egg, milk and butter. Add dry ingredients at once and mix until smooth. Pour over apples. Sprinkle with remaining nutmeats and bake 50 minutes at 325 degrees. Serve with ice cream or cinnamon topped whipped cream.

Sour Cream Rolls

Sour Cream Rolls

1 cake or 1 package yeast
1/4 cup lukewarm water
1 pint dairy sour cream
1/4 cup sugar
2 teaspoon salt
3 1/2 to 4 cups flour
1 cup cornmeal

Soften yeast in lukewarm water. Combine sour cream , sugar and salt. Beat 1 cup flour, softened yeast and cornmeal. Stir in enough additional flour to make a soft dough. Turn out on lightly floured boar. Knead until satiny, about 10 minutes. Round dough into ball. Place in greased bowl. Brush lightly with melted shortening. Cover. Let rise in warm place until double in bulk, about 2 hours. Punch down dough. Turn out on lightly floured board. Cover and let stand 10 minutes. Shape into desired shapes. Place in greased muffin tin. Brush with melted shortening. Cover and let rise in warm place until double in bulk, about 45 minutes. Bake 20 minutes at 375 degrees. Remove and brush lightly with butter.

Baked Zucchin

I know it is winter here in ozarks but but hey here is a recipe to put on file for those summer time zucchini from the garden...this past summer mine didn`t do very good...because of drought.

Baked Zucchini

1 1/2 pound zucchini
1/2 cup sharp cheddar cheese, grated
2 Tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon oregano

Wash zucchini and cut in quarters. Arrange in baking dish. Sprinkle with salt and pepper, grated cheese and oregano. Drizzle butter over top. Bake 20 minutes or until tender, at 350 degrees.Serves 4.

Cut tomato in quarters, 3/4 way thru. place cottage cheese in tomato and top with cherry.

Hot Milk Cake

Here is another cake recipe....hmmm I like Cake!!!

Hot Milk Cake

3 eggs, well beaten
1 1/4 cup sugar
1 1/2 cup flour
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
3 teaspoon butter or margarine and enough milk to make 1 cup

Combine all ingredients except milk and butter. Bring milk and butter to a boil. Add to other ingredients. Mix well. Bake 35 to 40 minutes at 350 degree.

Gold Wonder Cake

Since I didn`t put a recipe on yesterday, I put 2 on today, both desserts. This first one tastes just like shortcake.

Gold Wonder Cake

2 1/4 cup cake flour
2 teaspoon baking powder
3/4 teaspoon salt
1 cup sugar
1/2 cup vegetable shortening
1 teaspoon vanilla
5 egg yolks
3/4 cup milk

Line bottom of loaf pan with paper, then grease. Sift flour and measure. add baking powder, salt and sugar. Place shortening in bowl. Sift dry ingredients. Add vanilla, egg yolks and half of the milk. Mix and beat 2 minutes. Add remaining milk and beat1 minutes longer. Bake 1 hour at 350 degrees

Cinnamon Rolls

I just love cinnamon rolls.

Cinnamon Rolls

1 package dry yeast
1/4 cup warm water
1 cup milk, scalded
2 Tablespoon shortening
1 teaspoon salt
1 egg, well beaten
2 Tablespoon sugar
3 1/2 cup flour, sifted

Soften yeast in warm water. Combine milk, shortening, sugar , salt and cool to lukewarm. Add soften yeast and egg. Gradually stir in flour to form soft dough.Beat vigorously. cover and let rise in warm place until double in bulk, about 2 hours.
Roll 1/2 dough on lightly floured surface to rectangle 1/4-inch thick. Brush with 4 Tablespoon margarine. Sprinkle mixture of 1/2 cup sugar and 3 teaspoon cinnamon and roll as for jelly roll. Seal edges and cut into 1-inch slices. Place ingreased baking pan. cover and let rise until double in size. Bake 25 minutes at 375 degrees. Makes 24 rolls. Remove from pans, cool and frost with confectioners icings.

Confectioners icing

Add sufficient top milk or cream to 1 cup confectioners sugar to make a spreading consistency.

Four-Bean Salad

This would also be good for Christmas or that picnic come Spring/Summer time, or maybe during a warm day in the winter.

Four-Bean Salad

1 1-pound can green beans, drained
1 1-pound can cut yellow wax beans, drained
1 1-pound can red kidney beans , drained
1 1-pound can Lima beans, drained
1 medium green pepper, thinly sliced in rings
1 medium onion, thinly sliced and separated into rings

Combine all ingredients

DRESSING

1/2 cup sugar
1/2 cup wine vinegar
1/2 cup salad oil
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon dried tarragon leaves
1/2 teaspoon basil leaves
2 teaspoons parsley , snipped

Combine all ingredients and drizzle over vegetables. Cover and marinade several hours or overnight. Before serving stir and drain. Serves 12.

Tossed Vegetable Salad

1/2 medium head of lettuce, cut into bite-sized pieces
2 small tomatoes, cut into bite-size pieces
10 radishes, thinly sliced
2 carrots, peeled and sliced thinly
4 green onions, minced
2 stalks celery, thinly sliced

Combine all ingredients in order given. Add salad dressing. Season with salt, pepper and garlic salt. Toss until well coated. Keep chilled until ready to serve.

Yum Yum Pineapple salad

1 No. 2 can crushed pineapple
1 cup sugar
2 envelopes unflavored gelatin
1/2 cup cold water
2 Tablespoon lemon juice
1 cup cheddar cheese, shredded
1 cup whipped dessert topping

Soak gelatin in cold water 10 minutes. Heat pineapple and sugar until sugar is dissolved. Add gelatin and lemon juice. When mixture is almost congealed add cheese and whipped cream.

24-hour Salad

Ok, a fruit salad is considered a dessert ...right, at least I think so...fruit is healthy....yummy. This would be good for Christmas dinner!

24-Hour Salad

2 cups chunk pineapple
2 cups seeded white cherries or Tokay grapes
3 cups marshmallows
1 cup nutmeats
2 egg, beaten
juice of 1 lemon, strained
1/4 cup coffee cream
4 Tablespoon sugar
1/2 pint whipping cream
pinch salt

cook eggs, lemon juice, cream, sugar and salt in double boiler until thicken. cool and add whipping cream. Mix dressing with fruit, marshmallow and nutmeats. Refrigerate at least 24 hours.

1 cup flour, sifted
1/3 cup sugar
3 teaspoon baking powder
1/2 teaspoon salt
1 cup oatmeal
1 Tablespoon cinnamon
1/2 cup raisins
3 Tablespoon oil
1 egg, beaten
1 cup milk

Combine all ingredients in one bowl. Stir only until dry ingredients are moistened. Fill greased muffin tins. Bake 15 minutes at 425 degrees. Makes 18 muffins

Suprem Surprize

2 slices bacon
1 small onion
1 No. 303 can sauerkraut
1 No. 303 can stewed tomatoes
2 Tablespoon brown sugar
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup croutons, seasoned

Mince bacon strips and brown thoroughly. Add finely chopped onion and cook until golden brown. Add sauerkraut, tomatoes and remaining ingredients. Cook slowly 20 minutes. Pour into 2-quzrt baking dish and bake 30 minutes at 350 degrees. Put croutons on top during last 5 minutes.

Itaian Pizza

Tired of eating that turkey yet? Here is a recipe that doesn`t have turkey in it........

Italian Pizza

1 package active dry yeast
1/4 cup warm water
1 cup hot water
2 Tablespoon shortening
1 1/2 teaspoon salt
3 to 3 1/2 cups flour
1 chopped onion
2 cloves garlic
2 teaspoon celery salt
1 teaspoon oregano
1 teaspoon basil
1 small can tomato paste
1 can tomatoes
1 package mozzarella cheese
1 package provolone cheese
1 package cheddar cheese
Romano and Parmesan cheese
any desired topping, such as Italian sausage or anchovies

Dissolve yeast in 1/4 cup warm water for 5 minutes. Add hot water to shortening and salt. Cool. Add yeast mixture. Add flour ,one cup at at time, until stiff dough is formed. Beat well and then knead on board until smooth and elastic. Let rise until double in bulk, about 1 hour.
Meanwhile combine onion, garlic, celery salt, oregano, basil, tomato paste and tomatoes in pan and cook until thick. Grate three packages of cheese and combine.
Divide dough into three parts, roll thinly and put in oiled pizza pans. Spread with sauce. Sprinkle grated cheese over sauce and sprinkle Romano and Parmesan cheese on top. Add desired meat topping. Bake 20 to 30 minutes at 425 degrees. Cut into wedges and serve.

Hasty Pudding

Here is that Hasty pudding that you all about...at least a recipe for it....


Hasty Pudding

1 cup brown sugar
1 cup water, boiling
1 Tablespoon vanilla
3 Tablespoon butter

Combine ingredients in square cake pan. Stir until dissolved.

Cake

1/2 cup sugar
3/4 cup flour, sifted
1/2 cup milk
1 teaspoon baking powder
pinch salt
1/2 cup raisins, floured
1 cup nutmeats, ground

Combine all ingredients. Mix well and pour in middle of sauce. Do not stir. Bake 30 minutes at 350 degrees. Serve with whipped cream.

Gertrude`s Chocolate Cake

Gertrude`s Chocolate Cake

2 cups sugar
2 cups flour
1 stick margarine
1/2 cup shortening
4 Tablespoon cocoa
1 cup water
1/2 cup buttermilk
2 egg, beaten
2 teaspoon cinnamon
1 teaspoon vanilla
1 teaspoon soda

Sift sugar and flour. Combine margarine, shortening, cocoa and water. Bring to boiling point and pour over dry ingredients. Stir well. Add buttermilk, eggs, cinnamon,vanilla and soda. Mix well and pour into flat pan. Bake in oven until done.

Icing

1 stick margarine
4 Tablespoons cocoa
6 Tablespoons milk
1 teaspoon vanilla
1 box confectioners sugar
1 cup pecans

Combine margarine, cocoa and milk and bring to a boil. Add confectioners sugar, vanilla and pecans. Pour over cake as soon as it comes out of oven.

Banana Bread

Who doesn`t like Banana Bread.

Banana Bread

2 cups sugar
1 cup butter or margarine
4 large eggs, well beatn
6 large bananas
2 cups flour , sifted
1 teaspoon salt
2 Tablespoon baking powder
2 teaspoon soda
1 cup nutmeats
1 cup raisins, cooked and drained

Combine sugar and shortening and stir until well blended. Add beaten eggs and mashed bananas. And blend well. Add dry ingredients, then add raisins and nutmeats. Pour into 2 greased loaf pans and bake 1 hour at 325 degrees.

ICING

2 Tablespoons butter
1/2 cup brown sugar
1 1/2 cup confectioners sugar
1/2 cup milk

Bring butter, brown sugar and milk to a boil, stirring constantly. Remove from heat and cool. Add conf3ectioners sugar. Beat until smooth enough to spread. Additional confectioners sugar may be needed.

Cranberry Salad

Here is recipe for that cranberry salad for the Thanksgiving holiday or make it for Christmas.

Cranberry Salad

1 can or jar cranberry sauce
lettuce
cream cheese
mayonnaise
finely chopped celery
nutmeats

Chill cranberry sauce. Place a slice on lettuce leaf. Press mixture of cream cheese and mayonnaise thru pastry tube. Sprinkle chopped celery and nutmeats. place another slice of cranberry sauce on top and garnish with cheese and mayonnaise mixture and nutmeats.

Food For the Gods

Ok, I know their is only one God, but this is the name of the recipe.......

Food For the Gods

9 heaping Tablespoons cracker crums
2 cups sugar
1 heaping teaspoon baking powder
1 cup nutmeats, chopped
1/2 pound dates, chopped
6 eggs, separated

Mix cracker crumbs, sugar, baking powder, nutmeats and dates. Add beaten egg yolks. Mix well intil all is a crumbly mass. Beat egg whites very stiff. Fold in egg whites thoroughly. Bake in 9 x 13 x 2-inch cake pan for 3/4 hour at 325 degrees. Cool. Serve with whipped cream. Will keep a week if wraped in wax paper.

Date Nut Dessert

Here is a recipe using Dates........

Date Nut Dessert

3 egg whites
1 cup sugar
1 teaspoon vanilla
14 soda crackers, crushed
1/2 cup nutmeats, finely chopped
12 dates, finely chopped

Beat egg whites very stiff and continue beating while adding sugar and vanilla. Then add soda crackers, dates and nutmeats. Bake 20 minutes at 325 degrees. Serve with whipped cream. Serves6.

Orange Crunch Muffins

Ok , here is a bread recipe I know I didn`t put on last friday...it was a very busy day, two docotrs appointments.

Orange Crunch Muffins

2 cups flour
1/3 cup sugar
 1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup grape nuts
2 eggs, slightly beaten
1 cup orange juice
1 Tablespoon peel
1/3 cup salad oil or melted shortening

Sift flour, baking powder and soda. Add salt and sugar. Add eggs, orange juice, peel and oil. Stir in grape nuts and pour immediatley into paper cups in muffin tins. Fill 2/3 full and bake 20 minutes at 375 degrees. Makes 12 to 15.

This week of shopping

We sometimes go to town more then once a week, to get certain things for the girls or things we need and forgot during that first trip to town/grocery store. We live about 15 miles out.

This week I think I did pretty good. I have been couponing for about a couple of months now. I just have to brag alittle this week , since I saved more then I usually do.

First trip--We went to Walmart and I saved a total of 20.00 just from Walmart. I had a total of 16 coupons that I used. Most were grocery related.. The coupons varied from .40 to 1.00 off on the different products....It was nice to see the numbers drop....

Today wasn`t a real big saving as the first trip , but it`s a savings none the less.
I went to Walmart and used a Dawn dish Soap coupon that came from a Sunday paper insert.I saved .50 there...yayay

Then I went to the grocery store and used several coupons there and they double up to .50 coupons...I saved about 10.00 there. I had a  couple of coupons from coupons.com , one for Butterball turkey and saved 3.00 off , of course had to buy 4 crescent dinner roll, in which I had coupons for those as well., so the on the turkey , I saved 3.00 plus 1.60 on the four dinner crescents... I also had a coupon for Hormel Ham and saved 2.00 off on that. I also got a peel-it coupon on the turkey and two of the crescents...yay

I just love saving on things.......I wish I could save more.

I so love couponing. My mom used to do some couponing when I was growing up , but not a whole lot...just a few items and she wouldn`t use them on sale items.

Green Beans

Here is a different way to fix green beans...could fix them for the upcoming holiday.

Green beans

2 packages frozen green beans, french style ( could use canned as well)
4 slices bacon
1 small onion
1 Tablespoon sugar
1 1/2 to 2 Tablespoon flour
1/2 cup cream or half and half
1/4 cup mayonnaise
salt and pepper to taste

Fry bacon and onions until done. Add sugar and flour, then add cream and mayonnaise, which have been mixed together. Add beans and heat.

Wild meat Stew

I was trying to come across a turkey recipe of sorts, but then came across this recipe for all those deer hunters out there...my hubby and youngest being two of them. This recipe is from 1968.

Wild Meat Stew

2 pound elk, deer or antelope, cubed
salt and pepper to taste
1/2 cup olive oil
1 pound small onions
1 cup red wine
1 can tomato sauce
1 teaspoon whole spice
1 bay leaf

Season meat; brown on all sides in oil. Top with onions and pour in wine. Add tomato sauce and spice. Cook slowly without stirring for 1 1/2 hours or until tender.

Apple Walnut Brownies

Whats goes together better then apples and walnuts and this combination are in the form of brownies.

1/2 cup shortening
2 squares unsweetened chocolate
2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup walnuts, broken
1 cup apples, finely chopped

Cream sugar, shortening and eggs. Add chocolate and dry ingredients, then apples and nutmeats. Bake 40 minutes at 350 degrees. When cool , spread with chocolate icing.

Fruit salad

Ok, I consider fruit salad to be somewhat of a dessert and a more healthy one to a point. This recipe is from 1967.

Fruit Salad

bananas
apples
1 cup walnuts
2 Tablespoons vinegar
2 Tablespoon flour
2 Tablespoon water
1 teaspoon mustard
1 Tablespoon celery seed
1/2 pint whipping cream
1 egg

Use equal amounts of apples and bananas. Combine egg, vinegar, water , flour, mustard and celery seed. Cook indouble boiler. Add whipped cream. Combine with bananas and apples and numteats. Salad should be made about 1/2 hour before serving as bananas will discolor.

Okra and Tomato Casserole

Okra and Tomato Casserole

1 meduim can okra, drained and rinsed with water
1 medium size can tomatoes, drained ( save juice)
2 slices soft buttered bread, cubed
1 package pimiento cheese ( 8 slices), cubed ( save 2 slices)
4 to 6 slices bacon for topping

Grease Shallow 7 x 10 x 2-inch pan. make 2 layers of okra, tomatoes, bread and cheese. Cut bacon into 1-inch pieces and spread over entire top. Tuck 2 pieces of cubed cheese around bacon. Spoon tomato juice carefully over bacon. Do not salt. Bake 45 minutes at 350 degrees.

Lick-A-Dab

Here`s simple recipe

Lick-A-Dab

1 1/2 pound ground bbef
salt and pepper to taste
sliced potatoes
sliced onions
1 can red beans or pork and beans
2 cans tomatoes
bacon

Brush a large deep baking dish with butter. Spread ground beef on bottom;salt and pepper to taste. cover with layers of potatoes, onions, beans and tomatoes. ( Small amount of sugar maybe added to tomatoes). Top with bacon. cover and bake for 2 hours in moderate oven.

*brown the ground beef
** moderate oven temp 350degrees.

Triple Orange Ring Mold

This recipe is under salads, but I think it could be a dessert also...You do usually eat jello for dessert.

Triple Orange Ring Mold

2 package orange gelatin
2 1/2 cups boiling water
1 can mandarin ornages ( 11-oz), drained
1 pint orange sherbet

Dissolve gelatin in boiling water. Add juice from orange. Mix well. When mixture is thick, but not solid, beat with rotary beater until frothy. Add sherbet and mandarin oranges. Blend well. Pour into 10-inch ring mold. Chill. Unmold when ready to serve and garnish with water cress. Serves6.

Lemon Custard Fruit Salad

2 eggs, well beaten
juice of 2 1/2 lemons
3/4 cup sugar
1 package miniature marshmallows
1  1-pound can pineapple chunks
6 ripe bananas

Combine eggs, lemon juice and sugar. Cook over low heat until thicken. Pour over marshmallow, pineapple and bananas. Serves 12.

k, lets get back into the swing of things and here is a bread recipe---banana at that, I love home-made banana bread, in which I make when I have bananas starting to turn, thats when the bananas mash up good.....mmmmmgoooooodddd......

Velvet Banana Bread

5 large ripe bananas
4 eggs, well beaten
1 cup shortening
2 cups sugar
 4 cups flour, sifted
2 teaspoons soda
1 teaspoon salt
1 cup walnuts, chopped

Beat bananas until liquid.Combine with eggs and set aside. Cream together shortening and sugar until fluffy. Add banana mixture and blend. Add sifted dry ingredients and stir until smooth. Fold in nutmeats. Pour into well greased loaf pans. Bake 40-45 minutes at 350 degrees. Makes 2 loaves.

Squaw Corn

Ok, this may be a good way to fix your corn for the upcoming holiday feast. This recipe was in published main catergory of the 1968 Kansas City Kansan Silver Spoon Cookbook, but it can be a side dish.....corn.

Squaw Corn

6 slices bacon
3 eggs, slightly beaten
2 cups ( 1 pound) cream corn
1/4 teaspoon salt
dash pepper

Cut bacon into small pieces. Fry until done. Drain off grease. Combine bacon, eggs, corn, salt and pepper and cook over low heat, stirring occassionally until eggs are cooked.

* I added a small onion, chopped...( I love onions)

Island Barbecued Ribs

 When I make this recipe , I cheated abit making it. i will give first how the recipe call for , then how I fixed it. Again this recipe is from 1968.....my way is alot simpler for those that are busy out there.

Island Barbecued Ribs

2 1/2 to 3 pounds ribs
1 Tablespoon lemon juice
1/2 cup brown sugar
1 ( 15 oz) can crushed pineapple
2 ( 8 oz) cans tomato sauce

Brown ribs in oven. Pour off fat and reduce heat. Sprinkle with lemon juice, brown sugar and pineapple. Pour tomato sauce over ribs and bake. This same sauce can be used over pork roast or backbones.

* I browned my ribs in skiller, then put in crockpot and then sprinkle with lemon juice, brown sugar and pineapple. Then pour tomato sauce over it and let cook for about 6-8 hours. ( I used pork ribs)

Coconut Confetti

1 6-oz package semi-sweet chocolate morsels
2 Tablespoon white corn syrup
1 Tablespoon water
1 1/2 cupwater

In double boiler, over hot not boiling water, melt chocolate pieces with corn syrup and water. Then stir in coconut lightly. Drop mixture by heaping teaspoonfulls onto waxed paper lined cookie sheet. Refrigerate until firm. Makes about 24.

Buttermilk Pecan Candy

1 cup buttermilk
1/2 cup butter
1 teaspoon soda
2 cups sugar
3 Tablespoon white syrup
1 teaspoon vanilla
2 cups sugar, sifted ( I know a repeat, I left this sugar out)
2 cups pecans, chopped

Combine and cook to soft ball stage. Beat until creamy. Add pecans. pour into buttered pan and cut when cool.

Danish pastry

Ok, I have fallen behind on the bread recipes , so here is one...Fridays has been busy.

Danish Pastry

1 package dry yeast
1/4 cup warm water
1/3 cup granulated sugar
1 teaspoon salt
1/4 cup shortening
1 cup scalded milk ( cooled)
2 eggs
1/4 teaspoon vanilla
1/4 teaspoon lemon extract
1/4 teaspoon mace
3 1/2 to 4 cups flour
1 cup soft shortening ( would use butter or margarine here)
1 egg, beaten

Combine yeast and water. Mix sugar, shortening, milk and salt. Beat in eggs, add yeast, extracts, mace and 3 cups flour and mix well. add rest of flour. mix and let rise until doubled. Roll 1/3-inch thick and dot with 1/2 cup soft shortening. fold and seal edges, then dot with rest of soft shortening. fold and seal edges. place in greased bowl. Cover and let rest 20 minutes. Roll 1/3-inch thick and shape into rolls. Roll 1/4-inch thick and brush with butter or margarine, sprinkle with brown sugar and cinnamon and chopped nutmeats, and then either roll and cut into separate rolls or place in ring and slash every inch about 1/2 way thru roll. let rise until double. Bake 25 to 30 minutes at 350 degrees or until brown.

ICING

1/4 cup orange juice
1 cup confectioners sugar

Combine two ingredients and mix well. Spread on pastry while still warm.

Jellied Corn beef Salad

ok , I really don`t like jellied salads, but here is a recipe for one anyway.

Jellied Corn Beef Salad

1 envelope plain gelatin
1/4 cup water
1 1/2 cups tomato juice
3 hard cooked eggs, chopped
1/2 cup cucumbers, chopped
2 cups celery, chopped
1 Tablespoon onion, chopped
1 teaspoon lemon juice
1 teaspoon salt
1 ( 12-oz) can corned beef
1 1/2 cups mayonnaise

Soften gelatin in cold water. Heat tomato juice and add gelatin mixture. Stir until dissolved. Add lemon juice and salt. Chill until partially set. In another bowl combine eggs, cucumbers, celery, onion, corned beef and mayonnaise. Fold into gelatin mixture and pour inot 1 1/2 quart mold. Chill.

Party Roll-Ups

 Here is a good recipe for maybe that upcoming holiday party or just a everyday weeknight meal.

1 1/2 pounds steak,1/4 inch thick ( You can use tender mock steak, or why noit try pork steak)
1 1/2 cups prpeared herb-seasoned stuffing
2 Tablespoons shortening
1 can (10 1/2-oz) condensed mushroom soup
1/3 cup water
parsley

Cut steak into 6 pieces ( about 8 x 4-inch ). Pound with meat hammer. Place 1/4 cup stuffing near center of each meat piece. Roll; tuck in ends and fasten with skewers or toothpicks. In skillet brown roll-ups in shortening; pour off fat. Stir in soup and water . Cover and cook over low heat about 1 1/2 hours or until tneder. Stir occassionally. Garnish with parsley. Serves 6.

1/2 cup butter or margarine
1 cup graham cracker crumbs
1 cup shredded coconut
1 6-oz package semi-sweet chocolate morsels
1 6-oz package butterscotch morsels
1  15-oz can sweetened condensed milk
1 cup nutmeats, chopped

Melt butter in 13 x9 x 2-inch baking pan. Sprinkle crumbs evenly over butter. ( Tap sides of pan to distribute crumbs.) Sprinkle on coconut, chocolate morsels and butter scotch morsels. Pour sweetened condensed milk, evenly over top. Sprinkle with nutmeats and press lightly into pan. Bake 30 minutes at 350 degrees. Cool in pan and cut into 40 1 x 2-inch pieces.

Chcolate Cake

1/2 cup vegetable shoretning
2 cups sugar
2 eggs, beaten
2 teaspoons soda
1 pinch salt
1/2 cup buttermilk
1 teaspoon vanilla
2 cups flour
2/3 cup cocoa

Mix all ingredients in order given. After mixing, add 1 cup boiling water. Add it slowly. Do not leave mixture set. Pour at once into prepared greased and floured round cake pans. Bake 30 to 40 minutes at 350 degrees.

* frost how you wish or eat without frosting.

Cranberry Crunch

1 ( 2-pound) package cranberrries
4 long stalks celery
2 cups miniature marshmallows
1 cup sugar
1 cup English walnuts, chopped
1 cup crushed pineapple
1 pint whipping cream, whipped

Combine cranberries, nutmeats and celery and put through food grinder. Add pineapple and sugar. Add whipped cream. Place in bowl and decorate top with marshmallows ( about 1/3 cup). Let set for 24 hours in refrigerator.

Ham slice-rye Bread Dressing Balls

Hmmmm, this could be a great way to use that left-over Ham meat from the up coming holidays. It would also be different way to fix that ham for the holidays.

Ham-Slice-Rye Bread Dressing Balls

1 smoked center -cut ham slice, 1-inch thick
1 egg, beaten
2 teaspoons prepared mustard
2 Tablespoons water
1/2 teaspoon carawy seed
1/3 cup chopped onion
3 cups soft rye bread crumbs

Mix egg, mustard and water. Add caraway seeds, onion and crumbs. mix and shape into 8 balls, using about 1/4 - cup mixture for per ballo. Place ham slice and balls on rack in an open roasting pan. Bake 1 hour at 300 degrees.

1 stick margarine
1/4 cup shortening
1 cup powdered sugar
1 egg
1/2 teaspoon almond or lemon extract
1/2 teaspoon vanilla
2 cups flour
1/2 teaspoon soda
1/2 teaspoon cream of tartar

Cream margarine, shortening and powdered sugar. Add egg, almond or lemon extract and vanilla. Sift together flour, soda and cream of tartar. Mix all together and form into balls the size of walnut. Press drown with bottom of glass dipped in granulated sugar. Bake 10 minutes at 400 degrees.

Pound Cake

I love making pound cake when I have alot of eggs, like now, I might make pound cake today.I do have alot of pound cake recipes...which one to make, anyway here is one from 1968.

Pound Cake

1/3 cup vegetable shortening
2 sticks margarine
3 cups sugar
5 eggs
3 1/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup milk
2 Tablespoon lemon extract

Cream shortening, margarine and sugar together. Add 1 egg at a time, beating well after each addition. Use electric mixer for this creaming, but beat remainder by hand. Sift flour, salt and baking powder together3 times. Add alternately with milk in 3 parts and beat well after each addition. Add lemon extract. Bake in well-greased and floured tube pan for 1 1/2 hours at 325 degrees. Cool on rack before taking from pan.( should be almost cold before taking from pan)

Apple Cream Coffee Cake

Apple Cream Coffee Cake

1/2 cup walnuts, chopped
2 teaspoons ground cinnamon
1/2 cup granulated sugar
1/2 cup butter or margarine
2 eggs
1 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup commercial sour cream ( buttermilk)
1 medium apple, peeled, cored and sliced

Mix nutmeats with cinnamon and 1/2 cup sugar. Cream shortening until creamy, then add 1 cup sugar, gradually and beat mixture until light and fluffy. Add eggs, one at a time, beating after each addition. Add vanilla and blend well. Sift dry ingredients and add alternately with sour milk.
Spread half of dough in bottom of well greased 9-inch tube pan. Place slices of apples on batter and sprinkle with half of walnut mixture. then put remaining batter in pan and sprinkle with walnut mixture on top. Bake 40 minutes at 350 degrees. or test with cake tester. cool before removing from pan.

German potato Salad

Here is a good potato salad recipe from 1968. I know here in the Ozarks picnic season is gone but, potato salad can be eaten year round, at least that's my feelings.

German Potato Salad

5 medium size potatoes
1/8 teaspoon garlic salt
1/4 teaspoon onion salt
1/4 teaspoon celery salt
pinch ground mustard
1 egg, beaten
1 teaspoon vinegar
1 Tablespoon celery leaves, optional
4 slices bacon
 Boil potatoes unpeeled. When cool, remove peelings and slice or dice. Mix together salt, onion salt,celery salt, mustard and beaten egg, vinegar and celery leaves. beat well. Cut bacon into small pieces and fry until crisp. Add bacon drippings to egg mixture and beat. Pour dressing over potatoes. Serve potato salad warm.

Salmon Loaf quickie

2 flat cans salmon ( cannot get flat cans here, so I substitued a 14 oz can)
1 beaten egg
1/2 cup minute rice
1 teaspoon celery salt

Mix together and mold into loaf. Place in a greased flat baking dish. Bake 25 minutes at 375 degrees.

Oatmeal Cake

Here is a oatmeal cake recipe.

Oatmeal Cake

1 stick margarine
1 1/2 cup boiling water
1 cup quick cooking oatmeal
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/2 cup flour
1teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla
1 cup raisins
1/2 cup nutmeats
1 teaspoon soda

Cut margarine in small pieces in large mixing bowl. Add boiling water and oatmeal. Let stand for 20 minutes. Add brown sugar, white sugar and 2 unbeaten eggs. Mix well and pour into cake pan. Bake 30 minutes at 350 degrees. Ice with broiled frosting.

Broiled Frosting

5 Tablespoons brown sugar, heaping
2 Tablespoons sweet cream or milk
1/2 cup nutmeats
3 Tablespoons butter
1/2 cup coconut
1 teaspoon vanilla

Melt butter, then add other ingredients. Spread on warm cake and put in oven or broiler annd brown.

Buttermilk Candy

Here is a recipe sure to please, and a candy recipe at that, get ready for that candy making time.

Buttermilk candy

2 1/2 cups sugar
1 cup buttermilk
1/2 cup butter
2 Tablespoons light corn syrup
1 scant teaspoon soda
1 teaspoon vanilla
1 cup nutmeats

Combine all ingredients except vanilla and nutmeats in large pan. Bring to a boil and cook until soft ball stage. Remove from heat anbd add vanilla and nutmeats. Beat until firm. Pour into buttered 8 x 8 -inch square pan. Cut into squares when cool.

Super Coffee Cake

Here is another coffee cake recipe, it was in the bread section, sometimes these can be like bread, sometimes they are baked in loaf pan.

Super Coffee Cake

3/4 cup soft butter
1 cup sugar
3 eggs
1 1/2 teaspoon vanilla
1/2 cup molasses
1 1/2 teaspoon baking powder
2 teaspoon soda
1/4 teaspoon salt
3 cup flour
1 1/3 cup dairy sour cream
Filling

Heat oven to 350 degrees. Grease 2 - 9 x 5 x3-inch loaf pans. Combine eggs, butter, sugar, vanilla and molasses and mix well. sift together flour, baking powder, salt and soda. Add to creamed mixture, alternately with sour cream. Put about 1 1/4 cups of mixture in each loaf pan. sprinkle each with 5 Tablespoons filling. Repeat with remaining mixture and filling. Bake 55 to 60 minutes at 350 degrees. Cool slightly in pans before removing.

Filling

1/2 cup brown sugar, tightly packed
1/2 cup nutmeats
1 1/2 teaspoon cinnamon

Stuffed Tomato-Tuna Salad

What is better then homegrown tomatoes stuffed with tuna salad for lunch, or a light dinner.

Stuffed Tomato_Tuna salad

4 medium sized tomatoes
1 Tablespoon salt
lettuce leaves

Remove skins from tomatoes, Scoop out hollow at the stem end of each tomato. Add 1/4 teaspoon salt to the inside of each tomato. Invert on tray and chill 1 hour.

Tuna Salad

1 ( 6 1/2-oz) can grated tuna
1/4 cup onion,diced
1/4 cup celery, chopped
3 small sweet pickles, chopped
1/2 cup mayonnaiuse
1/4 teaspoon salt
1/4 teaspoon black pepper

Mix all ingredients and toss lightly. Remove tomatoes from refrigerator and fill each tomato with salad. Arrange on freshly washed lettuce leaves. Serves 4.

Shrimp Remoulade

Shrimp Remoulade ( French)

1/4 cup cooking oil
2 Tablespoons white vinegar
1 teaspoon paprika
dash Tabasco sauce
1/2 teaspoon salt
2 Tablespoon hot prepared mustard
1 Tablespoon horseradish( cream style)
1/4 cup celery, chopped fine
2 Tablespoons green onion, chopped
1/2 pound frozen shrimp ( or 1 5-oz can)

Place all ingredients except shrimp in a bowl. Stir well. Add shrimp and toss gently. Cover and chill 30 to 60 minutes. Serve on lettuce leaves. Serves 4.

Tutti-Frutti Bread

1 box pound cake mix
1/4 cup candied cherries, chopped
1/2 cup pecans or walnuts

Mix pound cake as directed on box. Fold in fruit and nuts and pour into greased and floured loaf pan. bake 40 to 50 minutes at 350 degrees, or until done. cool completely before slicing.

Mix all ingredients together in order given. cover and refrigerate for 1 to 2 hours before serving.

Mother`s Old Fashioned Pot Roast

This recipe is so good, brings back memories of and smells of yesterday. This recipe is from 1961.
Again it is from the Kansas City Kansan Silver Spoon Cookbook.



Mother~s Old Fashioned Pot Roast of Beef or Pork

Basic recipe

1  3-to- 5 lb beef or pork roast
2 Tablespoon cooking fat or oil
1 Tablespoon salt
1 teaspoon black pepper
1 teaspoon monosoduim glumate ( I left this out)
2 whole bay leaves
6 whole black pepper seeds( I use the gourmet style peppercorns, like for your pepper grinder)
6 cups cold water ( add at different intervals)

Put cast iron Dutch oven or deep fryer on hottest fire. Add cooking oil. While this is heating combine salt, black pepper and monosoduim glumate together and rub all over roast. Place bay leaf and whole pepper seeds in pan, put roast in to sear ( brown well) all over, but do not scorch or burn. When completely browned and crusted in place in position you want to cook it in, and add 1 cup cold water. Cover with lid so steam can be vented. When liquid starts to boil, turn heat just low enough to keep boiling. After about 20 minutes it should sound like it is frying. When this occcurs, turn roast over and add 1/2 cup water, replace lid, let cook until " frying" bergins again. Turn roast over and add 1/2 cup water and continue turning and adding water until all water is used. Meat should be extremely tendr, juicy and deeply browned and of delicous flavor.

For vegetable dinner prepare the following while above is cooking.

Beef Dinner

1 whole potato per person, quartered
1 whole carrot per person, quartered
1 large stalk celery per person,quartered
1 whole sweet onion, cut into 8 wedges
1 leaf parsley, broken rather fine

When meat is cooked, remove from pan , add four cups water to juice, place vegetables in it, seasoning it lightly with salt and pepper, place meat on top of vegetables, bring to a boil, reduce heat and cook slowly until desired doneness for vegetable is obtained.
Arrange on large platter, meat in center and vegetables around the edge and sprig of parsely snd repeat vegetable arrangement around platter with parsley dividing the servings.

Pork dinner

1 whole potato per person, quartered
1 whole onion, cut into 8 wedges
1 whole parsnip per person, quartered
(other vegetables may be added if desired)

Cook as for beef dinner.

Butter Crunch Confecection Cookies

I admit I have not tried these, since I cannot make fudge or candy very good, I always have trouble with the different stages of cooking. of course this recipe has dates, and I don`t much like dates.

Butter Crunch Confection Cookies

1 package ( 8 oz) dates, chopped
1/2 cup water
Butter crunch ( recipe below)
1 can ( 4oz) coconut, toasted

Cook dates in water until thick. cool, ( Dates and water may be mixed in blender until thick)
Fold in 2 1/4 cups butter crunch and toasted coconut. Roll into cyclinder, 2 inches wide. Roll in rest of butter crunch to coat outside. Refrigerate several hours or overnight. Slice 1/4-inch thick for cookies.Makes 2 or 3 dozen.

Butter Crunch

1/2 cup butter or margarine
1/4 cup brown sugar, packed
1 cup all purpose flour
1/2 cup chopped pecans or walnuts

Heat oven to 400 degrees. Mix all ingredients by hand. Spread in ungreased 13 x 9 1/2 x 2-inch pan. Bake 15 minutes. Take from oven and stir with spoon. Cool. Makes 2 1/2 cups.


Ok, these wouldn`t be tht bad except for the dates.

Puffed Crackers

Puffed Crackers

round or square soda crackers
ice water
salt
paprika
butter

Place crackers on cookie sheet in a single layer and soak in ice water for 10 to 15 minutes. Remove from water gently with slotted pancake turner. Place on pan far enough apart to allow to expand. Sprinkle with salt and paprika and dot with butter. Bake 45 minutes at 350 degrees or until crackers are puffed and brown and thoroughly dry.

Crab meat dip

1/2 pound cream cheese
1/2 cup mayonnaise
1/4 teaspoon Worcestershire sauce
1 small jar pimientos, chopped
1 can crab meat, drained
1 teaspoon onion,grated
1 teaspoon lemon juice
1/2 teaspoon salt

Combine all ingredients. Chill

Hamburger Stroganoff

I do believe that a good stroganoff in comfort food to the core.
This recipe was from way back in the year 1961, from the Kansas City Kansan Silver Spoon cookbook and it took first place in that year, so it was also in the 1971 year cookbook, hence that is how have obtained, My mom didn`t have the year 1961.


Hamburger Stroganoff
Evelyn Brownrigg

1/2 cup minced onion
1 clove garlic, minced
1/4 cup butter
1 pound ground beef
2 Tablespoons flour
2 teaspoon salt
1 pound fresh mushrooms or 8-oz can mushrooms ,sliced
1   121/2-oz can cream of chicken soup,undiluted
1 cup sour cream
2 Tablespoons minced parsley

Saute onion and garlic in butter over medium heat. Add meat and brown. Add flour, salt, pepper and mushrooms. Cook five minutes. Add soup, simmer uncovered 10 minutes, stir in sour cream. Heat thru. Sprinkle with parsley. Serve with noodles, rice or spaghetti.

Apple Dessert

Apples are in season , and here is a recipe for those apples. This recipe comes from The Kansas City Kansan Silver Spoon Cookbook--it got first place in the 1961 and it was in the book of that year as well as the the one in 1971 for the past winners of the last decade.


Apple Dessert

2 cups sugar, 1 white and 1 brown
1 cup shortening, ( when I made this I used margarine)
2 eggs
2 cups flour
2 teaspoon baking powder
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup chopped nuts
4 cups diced apples

Cream sugar and shortening. Add eggs and beat. sift flour , baking powder, soda, cinnamon and nutmeg. Mix with apples and nuts. Mixture will be rather firm, but apples will provide juice while baking. Batter is thick ,so it will have to spread into baking pan with a spoon. Bake in a 350 degrees oven for 30 minutesa. Serve with whipped cream or ice cream.

South of the Border Cornbread

1 large cornbread mix,( or use homemade works just fine as well)
1/2 cup onion, cut finely and sauteed
1/2 cup bacon, cut finely and sauteed
1/2 cup jalapeno peppers
1 cup American cheese ( or try a different cheese), grated

Prepare cornbread mix as directed. Pour 1/2 of mixture in greased 9-inch square pan. Sprinkle with onion and bacon. cover with peppers and sprinkle cheese on top. Pour remaining batter over top and bake according to directions on cornbread mix box.

If using own homemade-----pour half of batter in pan then add baconand onions on top of batter in pan, then peppers and sprinkle cheese on top of that. Pour remaining batter on top and bake like you bake it.....you could even sprinkle alittle cheese on top during the lasat , I say 5 minutes.

Caraway Coleslaw

Remember those Sunday dinners...My mom would make the best coleslaw, This isn`t her recipe but it comes pretty close, my family really don`t have any recipes written down, it was always alittle of this and a little of that, but then again that was always the best food.

Caraway Coleslaw

3 cups cabbage, finely shredded
1 Tablespoon prepared mustard
1/4 cup mayonnaise
1 Tablespoon sugar
2 Tablespoon lemon juice
1/2 treaspoon salt
1/2 teaspoon onion,grated
1 teaspoon caraway seed

Combine all ingredients except cabbage. toss with cabbage and chill at least 20 minutes before serving. serves 4.

1 teaspoon onion soup mix
1 Tablespoon sour cream
salt

Mix all ingredients and shape into patties. Refrigerate for 1/2 hour. Broil on foil and serve on hot toasted buns.

Strudelettes

 This recipe has been in two of the Kansas City Kansan`s Silver Spoon cookbook. the first time was back in 1961, the second in the Kansan`s Anniversary Cookbook ....Award winners from the past decade, of 1971. It was in the category of Cakes, Cookies and took first place in the category.

Strudellettes

1 1/2 cups sifted flour
1/2 cup ( 1 stick) butter or margarine
3 egg yolks ,beaten
1 teaspoon lemon rind
1 Tablespoon lemon juice
3 egg whites
1/2 cup sugar
1 cup ground walnuts
10x ( confectioners powdered sugar)

Sift flour into medium-size bowl; cut in butter or margarine with a pastry blended or two knives until mixture is crumbly; stir in mixture of egg yolks, lemon rind and lemon juice; blend lightly with fork to form a dough.
Divide and shape into 24 small balls; place in shallow pan; chill at least 4 hours.
Beat egg whites until foamy in medium-sized bowl; beat in sugar, 1 Tablespoon at a time, until mixture stands in stiff peaks; fold in ground nuts.
Roll out each ball of dough to a 4-inch round on a lightly floured pastry cloth or board; spread with 2 Tablespoons of nut mixture; roll up like jelly-roll fashion; arrange seam side down, on ungreased cookie sheet.
Bake in moderate oven ( 350 degrees) 15 minutes or until golden; cool on wire racks; slice each diagonally into three pieces; sprinkle with confectioners sugar. Makes 6 dozen.

Italian Cheese Bread

Did anyone say Cheese, oooooo I love cheese.I love to go to Heather Hill in Ozark,Missouri behind Lamberts and try their cheeses.

Anywhoo this recipe is from 1968 and an award winning recipe.


Italian Cheese Bread
Mrs. Irene Brown

1/4 pound or 3/4 cup natural Swiss cheese
1/4 pound or 3/4 cup sharp natural cheddar cheese
4 1/2 cups all-purpose flour, sifted
1/4 teaspoon salt
2 teaspoons granulated sugar
2 packages yeast
1 cup warm water
6 eggs, well beaten
1 cup margarine
1/2 cup parmesan cheese, grated

Cut cheese into 1/4-inch cubes. Sift flour with salt and sugar. dissolve yeast in warm water. Cream margarine and stir in beaten eggs and yeast, then gradually add flour. Beat until satiny. Stir in cheese. Cover and let rise until double in bulk. Gently stir dough down. Let rise again and then put in well-greased tube pan. Let rise again until doulbe in bulk. Bake about 40 minutes at 350 degrees. Let cool 20 minutes before removing from pan.

vinaigrette Dressing

What better as a side then a salad, of course this dressing could be put on green beans, asparagus or cauliflower. This recipe comes from 1968 Kansan Silver Spoon Cookbook.



Vinaigrette Dressing

2 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoonh dry mustard
1/2 teaspoon paprika
3/4 teaspoon garlic powder
1 Tablespoon chopped chives
3 Tablespoons cider vinegar
1/2 cup olive oil
2 Tablespoons pickle relish
2 Tablespoon lemon juice

In cruet or similar container, mix salt, pepper, mustard, paprika, garlic powder, chives and vinegar. Let mixture stand for 1 hour or more to bring out full flavor of spices. Add olive oil and relish and lemon juice. shake well.
Pour over chilled vegetables and refrigerate about 1/2 hour before serving.Partially good on vegetable salad, green beans, asparagus or cauliflowerettes.

Patio Burgers

I know alittle late for that Labor day cookout, but hey a person can cookout anytime , right.
This recipe came out of the Kansan cookbook of 1968.

Patio Burgers
Mrs. Howard H. Miller

1 Tablespoon shortening
1/2 cup onion,chopped
1/2 teaspoon chili powder
2 Tablespoon flour
1 teaspoon Worcestershire sauce
1 pound ground beef
1 teaspoon salt
1/8 teaspoon pepper
1 bottle lemon-lime carbonated drink ( sprite or 7-up or something like that)
3/4 cup catsup
hamburger buns

Melt shortening in skiller. Add meat and onions. cook ,drain off grease and add drink. Stir in remaining ingredients, cover and cook for 15 minutes. Spoon on toasted buns.

This is like sloppy joes or what they call juicy burgers.

Irish Soda Bread

I know, alittle late on the Irish recipe , but better late then never, lol.

Irish Soda Bread
Mrs. joseph w. Ruzick

4 cups flour
1 teaspoon salt
1 teaspoon sugar
1 1/3 to 1 1/2 cups buttermilk
1 Tablespoon caraway seeds , optional

Sift dry ingredients. Make a hollow in the center and pour in 1 cup buttermilk. mix with hands and add enough more buttermilk to make a firm , but not dry dough. Turn onto a floured board and knead lightly. Shape into a round loaf and cut across top so that is will not crack .Sprinkle with carawy sees, if desired. Place in buttered skillet and bake 40 to 45 minutes at 350 degrees.
( This is the traditional bread of Ireland. It shouold be broken, not cut and is usually served with hot tea.)

Grandma`s Warcake

This cake is similar to raisin bread and it is from 1967 Kansas City Kansan`s Silver Spoon Cookbook of that year.

Grandma`s Warcake

2 cups sugar
2 cups boiling water
1 Tablespoon shortening
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1/8 teaspoon nutmeg
1 cup raisins
walnuts, if desired
3 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon soda

Combine sugar, water, shortening, salt, cinnamon, ginger, cloves, nutmeg, raisins and walnuts, if desired and bring to a boil. Boil 5 minutes. cool. combine with sifted flour, baking powder and soda. Bake in moderate oven until cake tester comes out clean.


* I baked this cake at 350 degrees

Carrot Celery Salad

Carrot Celery Salad

1 box celery gelatin ( don`t know if it is still available, I haven`t never seen it)
1 or 2 carrots
1 cup celery, diced
3 or 4 radishes
garlic salt to taste
salt

Prepare gelatin unsing 1 1/2 cups hot water and 1/2 cup cold water. Pour into 10 x 6 x 2-inch pan. Slice carrots into rounds. Dice radishes. Combine all ingredients and chill.

Russian Potatoes

These potatoes are really good and yummy. I bet they would be good with fresh potatoes dug from the garden, just had to put that in , as I am getting ready to plant some potatoes this week, hopefully before it rains.

Russian Potatoes

4 medium potatoes
1 small onion, minced
salt and pepper
2 Tablespoons butter
3 Tablespoon sour cream

Peel and cube potatoes. combine with onion, salt and pepper. Cover with boiling water and simmer until tender. Drain. Add butter and sour cream and cover. shake pan gently. Let stand a few minutes before serving. Serves 4.

Crnogorski Prijesnac

Ok, don`t ask me to pronounce this, because I really don`t think I can. It taste like cornbread.

3 cups yellow cron meal
2 cups flour ,sifted
4 teaspoon baking powdr
1 teaspoon salt
4 eggs, beaten
1/2 pound bacon, diced
1/2 pound brick cheese, diced
1 cup green onions, diced
1/2 pound butter, melted
3 cups buttermilk
2 teaspoons lemon or vanilla flavoring

sift cornmeal, flour, baking powder and salt. Add eggs. Add bacon, cheese, green onions, melted butter and buttermilk. combine slowly and thoroughly. Add flavoring and pour into 9 x 12-inch greased pan. Bake 1 1/2 hours at 350 degrees.

new appliances...

The new stove


The new frig


The kitchen has gotten a new frig and a new stove this year. The old frig would take it`s spells in freezing in the frig department, not the freezer part. I really don`t like frozen milk, or eggs, or jello.

The old stove was from the 1950`s , I think and the oven didn`t work and it was soo small. The stove had a compartment on the side to store your pots and pans. the new stove is 30-inchs , the standard size, so their is a gap on both sides of the stove., But I soo love having a oven again and having a frig that doesn`t freeze.

Banana Oatmeal Cookies

Banana Oatmeal cookies

1 1/2 cups flour
1 cup sugar
1/2 teaspoon soda
1 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
3/4 cup shortening
1 egg, beaten
1 cup ripe bananas, mashed ( 3 bananas)
1 3/4 cup quick oatmeal
1/2 cup nutmeats

sift flour, sugar, soda, salt, nutmeg and cinnamon. cut in shortening. Add egg and beat well. add bananas, oatmeal and nutmeats. Mix well. Bake 10 minutes at 375 degrees.

Barbeque Limas

Ok, I really don`t like lima beans, but I am sure their is some of you out that do and this recipe is for you.

Barbeque Limas

4 cans lima, drained
3/4 cup brown sugar
1/2 cup catsup
1/3 cup dark corn syrup
1 medium onion, diced
2 or 3 teaspoons liquid smoke
2 or 3 drops tabasco
bacon

combine all ingredients, topping with bacon. Bake 1 hour at 325 degrees.

Barbequed Meat and Cheese Loaf

Barbequed Meat and Cheese Loaf

1 pound ground beef
3/4 cup diced processed cheese food
1/2 cup vienna bread crumbs
1 cup milk
1 egg, unbeaten
2 teaspoons sugar
1/3 cup barbeque sauce
2 teaspoons seasoned salt
3 teaspoon minced onion or 3 teaspoon onion juice

Mix thoroughly; place in loaf pan and bake 2 hours at 350 degrees

Biscuits

When I made these biscuits...they really didn`t rise that good, but then again I did bake them a toaster oven...get my new stove wednesday......

2 cups flour, sifted
4 teaspoon baking powder
1/2 teaspoon cream of tartar
1/2 teaspoon salt
2 teaspoon sugar
1/2 cup shortening
1 egg, unbeaten
2/3 cup sweet milk

sift flour, baking powder, cream of tartar, salt and sugar. Add shortening and blend until cornmeal consistency. Pour milk into flour mixture slowly. Add egg and stir to stiff dough. knead 5 times and roll out. Bake on cookie sheet 10 to 15 minutes at 450 degrees.

Lemon angel Pie

Anybody say lemon pie and I am there. this recipe is very rich to say the least and lemon on top of that.

Lemon Angel Pie

4 egg whites
1 teaspoon vinegar
1/4 teaspoon salt
1 1/4 cup sugar

Beat egg whites until frothy. Add salt and vinegar. Beat until stiff. Add sugar gradually and beat well. Spread into greased pie tin and bake 1 hour at 275 degrees.

Filling

4 egg yolks
2 teaspoons lemon rind, grated
1/3 cup sugar
3 Tablespoon lemon juice
1 cup whipped cream
2 Tablespoons sugar

Beat egg yolks until light. Add remaining ingredients. Cook over hot water until thickened, stirring constantly. Cool. Beat whipped cream with sugar. Add 1/2 whipped cream to lemon filling. Spread mixture over meringue crust .Spread remaining cream over top. Refrigerate overnight.

Green Bean Salad

1 large can green beans
1 large can wax beans
1 small can kidney beans
1 small can lima beans
1/2 red onion
1/2 green pepper
1 jar pimientos, chopped
1/2 cup celery
1 cup sugar
3/4 cup white vinegar
1/4 cup water
1 teaspoon salt

combine sugar, vinegar, water and salt and bring to a boil. Pour over other ingredients and refrigerate overnight.

new cheerios flavors

Their is in our area two new flavors of Cheerios ( or the clown would say donut seed varieties) I have tried both new varieties. the Dulce De Leche Cheerios--caramel flavored cheerios and Mulitgrain peanut butter flavor....I do like caramel and peanut butter...I think of these two varieties I prefer the peanut butter. I would recommend if these are in your area to try them both and see what you think....

Chicken in the Garden

Ok, I know, their is always chickens in my garden, but this is a recipe, duh i know again this is a recipe blog,lol.....Chicken with vegetables.....yum.

Chicken in the Garden

1 cup celery and leaves, sliced
2 Tablespoons cooking oil
2 cups chicken or turkey, cooked ( this would be good to use leftover chicken or turkey )
1 package frozen peas and carrots
3/4 cup chicken broth
1 Tablespoon cornstarch
1 Tablespoon soy sauce
dash pepper
1/2 teaspoon instatn onion ( note - I put 1 cup chopped onion instead of instant onion)

Saute celery in oil for 3 minutes. Add chicken and brown lightly. Add rest if ingredients, except half the broth and cornstarch. Cook 10 minutes, then add remaining broth and cornstarch. Stir until thickened well. Serve hot on buttered toast or Englash Muffins. Serves 4

Southern cornbread

Here is a Delicios cornbread recipe from 1967...hmm, I think back in the day, alot of people made fresh -made bread more then they do now, at least I think.

Southern Cornbread

2 cups cornmeal, sifted
1 teaspoon baking powder
4 Tablespoons oil or melted shortening
1 teaspoon salt
1 teaspoon soda
2 eggs
buttermilk

Heat oil in iron skillet. To sifted cornmeal, add salt , soda and baking powder. Pour in enough buttermilk to moisten, then stir in whole egg and hot oil. Add enough buttermilk to make mixture of cake batter. Pour in skillet and bake until brown, about 45 minutes at 475 degrees. this recipe also can be used for corn muffins or corn sticks.

Jelly Pie

Is it anything better then jelly that is home-made, I think not. This recipe calls for jelly and I used plum jelly that I made myself, but can use any other variety as well.

Jelly Pie

5 eggs ( reserve whites of 2 eggs)
2 Tablespoons sugar
1 cup sugar
1 cup jelly
1/2 cup butter
1 pie crust , unbaked

Beat butter and jelly together. Add eggs and 1 cup sugar. Bake in 1 crust 20 to 30 minutes until filling does not stick to spoon when tested. Beat reserved egg whites with 1 Tablespoon sugar. Spread over pie when it is done. Return to oven and brown 5 minutes.

Black Raspberry Gelatin Salad

Here is another gelatin salad from the year 1967...boy they ate alot of gelatin back then...I would eat more gelatin or rather make it more if my frig didn`t freeze things.

Black Raspberry Gelatin Salad

1 package black raspberry gelatin
1 cup hot water
juice from 1 can blueberries
whipped dessert topping

Reserve 6 Tablespoons blueberry juice. Combine gelatin, water and remaining blueberry juice. Cool. Whip dessert topping and add 6 Tablespoons blueberry juice. Combine with gelatin after it has jelled.

Savory Beef Stew

Ok, this recipe called for using a dutch oven, I do have one, but I made this in the crockpot. My toaster oven won`t hold a dutch oven....waiting for a new stove.

Savory Beef Stew

2 Tablespoon shortening
2 pounds stew meat, cut in chunks ( used fajita meat)
1 large onion, sliced
4 cups boiling water
1 Tablespoon salt
1/4 cup sugar
1 teaspoon wocestershire sauce
1/2 teaspoon black pepper
1 cup celery, chopped
6 carrots, cut in quarters ( used baby carrots)
6 medium potatoes, diced
1/4 cup flour
1/2 cup cold water

Brown stew meat in shortening on all sides. Add onion, boiling water, salt , sugar, worcestershire sauce and pepper. Cook in dutch oven. Cover and simmer for 2 1/2 hours. Add vegetables when stew meat is almost done. Simmer stew for another hour until all vegetables are tender. Pour cold water into a shaker and add flour. Shake hard to blend. Remove dutch oven from heat and push meat and vegetables to side. Stir in flour and water mixture. Cook, stirring constantly until gravy thickens. Cook gently about 5 minutes longer. Serves 6 to 8.

Sour Cream Coffee Cake

Sorry for not posting earlier, but I have been out delivering Girl Scout cookies.

Sour Cream Coffee Cake

1 cup butter
2 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
1 teaspoon almond extract
2 cups cake flour ( measure before sifting)
1 teaspoon baking powder
1/4 teaspoon salt

Cream together butter, sugar and eggs. Fold in sour cream and flavoring gently into creamed mixture. Fold in dry ingredients. Spoon batter into greased floured angel food or Bundt cake pan. cover with half of topping then repeat. Bake 1 hour at 350 degrees.

Topping
1/2 cup nutmeats, chopped ( almonds recommended)
1 teaspoon cinnamon
2 Tablespoon brown sugar

Combine ingredients and mix well. Use blender for best results.


Oh yea , this recipe is from 1967 and is sure good.

1/4 pound butter ,melted
2 cups graham cracker crumbs
1 8-oz package cream cheese, softened
1 cup confectioners sugar
1 cup pecans, broken
1/2 pint whipping cream, whipped
1 can cherries

Melt butter in 9 x 9-inch cake pan. Stir in graham cracker crumbs. Pat around bottom and sides. Bake 10 minutes at 325 degrees. Combine cream cheese and sugar. Mix well. Spread cream cheese mixture over cracker crust. Sprinkle pecans over cheese. whip cream almost to butter and spread over pecans. Top with cherries. Chill at least 24 hours.

Stained Glass Salad

This salad is very pretty to look at, after it is made.

1/2 box raspberry gelatin
1 box raspberry gelatin
1 box pineapple gelatin
1 package whipped dessert topping
1 red apple
1 yellow apple

Prepare 1 box raspberry gelatin using 1 1/2 cups hot water and 1 cup cold water. Pour into large glass dish. Cool. Whip dessert topping. Prepare 1/2 box raspberry gelatin. Cool until syrup. add to dessert topping. prepare pineapple gelatin. cool and pour on top of other gelatin mixture. Let set. Cut 2 apples into small wedges. Mix together and place on top of gelatin when it is set. Cut into squares for serving.

Easy Chicken Casserole

This chicken recipe is from 1968, enjoy!

Easy Chicken Casserole

1 cup rice, uncooked
1 can mushroom soup
1 package dehydrated onion soup
1 1/2 soup cans milk
1 large frying chicken, cut in pieces ( could use chicken tenders as well, non-breaded type)
salt and pepper

combine rice, soups and milk. Place in 3-qt casserole. Put chicken on top, skin side down and add salt and pepper to taste. Bake, uncovered for 3 hours at 250 degrees. Turn chicken once. Serves 4.


* when I made this, I cooked in the oven at 350 degrees, but then again I used chicken tenders, I also added broccoli. the cooking time was about 30-45 minutes, when the chicken tenders were done.

Sugar Cinnamon Loaf

This recipe is from 1967 and who doesn`t like cinnamon and sugar together.

Sugar Cinnamon Loaf

2 packages yeast
1/4 cup water
1 cup milk, scalded
1/2 cup sugar
1 Tablespoon salt
1/4 cup shortening
5 1/2 to 6 cups flour, sifted
2 eggs
2 Tablespoons butter, melted
1 Tablespoon cinnamon
1/2 cup sugar

Soften yeast in warm water. Scald milk and add 1/2 cup sugar, salt and shortening. Cool to lukewarm. Add 2 cups flour and mix well. Add enough more flour to make a soft dough. Turn on floured board. Knead until smooth, about 10 minutes. Place in greased bowl and grease top. Cover and let rise 2 hours. Punch down and divide in 2 pieces. Shape into small balls and let rise 10 minutes.
Roll each piece into long narrow rectangle 6-inch x 20 -inches. Brush with 2 Tablespoons butter. Sprinkle with sugar cinnamon mixture. Roll as for roll and seal ends. Place on 2 greased 8 1/2 x 4 1/2 x 2-inch pans. Brush tops with butter and let rise until doubled in size, about 1 hour. Sprinkle with sugar cinnamon mixture. Bake 45 to 50 minutes at 375 degrees.

mexican Dip



I know this looks so good and it is good as it looks. I made this for superbowl sunday and it was a hit..and the team I was rooting for won...yahooo for me, anyway on to the recipe.

This recipe was in our local supermarket flyer a couple of weeks ago, I was planning on making something like this anyway, I just forgot where I put my recipe at.


Mexican dip


1 can ( 15 1/2-oz) refired black beans ( i used just plan old refried beans)

1 Tablespoon chili powder

1/2 teaspoon ground cumin

1 cup sour cream

1 cup Kraft Shredded cheddar cheese

3 green onions, sliced

1/3 cup sliced black olives

1 tomato, chopped


Mix beans, chili powder and cumin; spread onto bottom of 9-inch pie plate. top with layers of remaining ingredients. Refrigerate several hours.


* I imagine what this would taste like with fresh green onions and tomatoes from the garden....yummmmmy

Date Bars

Ok, here is a recipe using Dates...I really don`t care for Dates to eat, so this is for all those date lovers out there in blog land..

Date Bars

1 egg
1/2 cup sugar
1/2 cup butter or margarine, melted
1 cup dates, chopped and pitted
1/4 cup walnuts, chopped
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Beat eggs. Add sugar, and melted butter or margarine. Mix in dates and walnuts. Sift to combine flour, salt and baking powder and add to first mixture. Spread in greased pan. Bake 30 minutes at 350 degrees. Cool, cut into bars. Roll in powdered sugar.

Red Cabbage Slaw

Ohh the taste of slaw, brings back memories of dinner on the ground.
Why not save this recipe for the summer time or for that special dinner.

Red Cabbage Slaw

5 cups cabbage, finely shredded ( mix it up, use one small head of red cabbage and one small head of green)
1 Tablespoon salt
1/3 cup wine vinegar
1/2 cup salad or olive oil
1/3 cup parsley, snipped
1/3 cup green pepper, minced
2 cloves garlic, minced

Sprinkle cabbage with salt and let stand 20 minutes. Rub and squeeze cabbage until juice flows. Squeeze out as much juice as possible, discard. Mix remaining ingredients and pour over cabbage. Mix well. Cover and chill severval hours. Serves 6.

Sweet and Hot Chicken

This recipe was the award winner in the main dish catergory of the Kansan`s Silver Spoon Cookbook of 1968, It was published May 31, 1968.I did do things alittle different when I made it though.

Sweet and Hot Chicken
Mrs. Vincent C. Solomon

1/2 cup butter ( used Margarine)
1/2 cup red current jelly ( or light colored tart jelly)
1/4 cup Worcestershire sauce
1 large clove garlic, minced
1 Tablespoon mustard
1 teaspoon powdered ginger
1 cup orange juice
3 dashes Tabasco sauce
1 quartered chicken or 2 to 4 cornish hens( I used chicken tenders)

Combine all ingredients, except chickens and heat, stirring until jelly is melted and sauce is smooth. Cool. Place chicken in baking dish and pour sauce over it and let marinate over night. Turn occussionally. ( I only marinated it for 6 hours)

Topping 4 Tablespoons butter
2 Tablespoon mustard
1/4 cup brown sugar

Combine these ingredients and spread over chicken the next morning. Place lid on baking dish and cook1 hour at 350 degrees. Uncover and increase temperature to 400 degrees. Baste frequently until chicken is even dark brown. Serve with rice.

Mother`s Italian Bread

I am not Italian, at least I don`t think so, but here is a bread recipe that is good.

Mother`s Italian Bread
Mrs. F. E. Haas

1 1/4 cups luke warm water
1 package yeast
1 teaspoon salt
2 teaspoon sugar
1 Tablespoon shortening
3 to 3 1/4 cups flour

Dissolve yeast in water and add salt, sugar, shortening and 1/2 the flour. Beat with mixer and add rest of flour. Place dough in a greased the top of dough. Let rise 1 hours. Roll to 15-inch x 15-inch roll. Taper ends. Make diangonal cuts in loaf. Brush with water and let rise 1 hour. Brush with water again and bake 35 to 40 minutes at 375 degrees.


This recipe is copied exactly from the Kansan`s Silver Spoon Cookbook.
The recipe means to roll the dough out to 15 x 15-inch , then roll up as like a jelly-roll, then brush with water.

Apricot Dessert Bars

These could be great for that Superbowl party, dessert wise anyhow.

Apricot Dessert Bars

2 1/2 cups apricots, cooked and drained
3/4 cup sugar
1/4 cup apricot juice
2 cups sifted flour
1 teaspoon salt
1/2 teaspoon soda
3/4 cup butter or margarine
1 cup sugar
1 1/2 cup flaked coconut
1 1/2 cup walnuts, chopped

Combine apricots, 3/4 cup sugar and apricot juice. Cook over medium heat about 5 minutes, until slightly thickened. Cool. sift together flour, salt and soda. Cream butter or margarine and 1 cup sugar. Mix butter and flour together. Blend in coconut and walnuts. Reserve 1/2 cup crumbs, press remaining crumb mixture in bottom and half way up sides of greased 13 x 9 x 2-inch pan. Bake 10 minutes at 400 degrees. Spread apricot mixture over partially baked crust. Sprinkle with remainin crumb mixture. Return to oven. Bake 20 to 25 minutes or until golden brown. Cool. Cut into bars and serve with whipped cream.

Triple Treat Gelatin Salad

Here is another gelatin salad from 1967.

Triple Treat Gelatin Salad

2 packages cherry gelatin
2 cups hot water
1 cup cold water
1 can cherry prepared pie mix
1 8-oz package cream cheese
1 small can crushed pineapple, drained
1/2 cup pecans, finely crushed

Dissolve cherry gelatin in hot water. Add cold water. Add pie mix to gelatin mixture and mix well. Pour into flat baking dish or large gelatin mold. Let cool until set. When gelatin is molded, spread soften cream cheese on top, evenly and then spread pineapple on top of cheese. Sprinkle nutmeats over all and let stand 1 hour before serving.

Beef Stroganoff

This is the last main dish type recipe in the written in the info section ( where it tells about the judges of the contest that the paper judged) of the 1968 Kansan`s Silver Spoon Cookbook.

who was Wyandotte County Commissioner 2nd district.

Beef Stroganoff

1 standing rib roast, cut 2 inches thick
1 cup celery, cut in small pieces
1/2 cup onion, finely cut
1/2 cup green pepper, finely cut
1 1/2 cups rice, uncooked
1 stick butter
1 can water chestnuts
3 Tablespoons cooking oil
2 cans bouillon with 2 cans water
1/2 teaspoon garlic, minced
1 Tablespoon onion soup mix, if desired
2 small cans mushrooms, sliced
1/2 cup water
1 teaspoon salt ( more if desired)
black pepper to taste

Cut standing rib roast into bite-size pieces. cook meat, celery, onion, garlic, salt, pepper and onion soup mix in pressure cooker until brown, 5 to 10 minutes. Add 1/2 cup water and pressure cook for 15 minutes. Disconnect and let pressure drop. this can be cooked in large frying pan on stove for 1 hour. In large frying pan, brown rice in butter until it is golden. Add green pepper, water chestnuts, bouillon anbd water and cook until done. If more water is needed, add small amounts at a time and stir. Add mushrooms to rice mixture and combine with meat mixture and cook 5 to 10 minutes longer.This mixture may be served hot with roll or it may be served with sour cream sauce in pastry shell.

Sour Cream Sauce

1 ( 12-oz) carton sour cream
1/2 can bouillon
1/2 can mushrooms soup , golden
2 Tablespoons Worcestershire sauce

Combine ingredients and heat to piping hot and serve over stroganoff.

Pastry Shell

2 cups all-purpose flour
1 teaspoon salt
1/2 cup oil
1 egg white
1/4 teaspoon baking powder
water

Mix with fork. roll out and place in muffin tins or individual pie plates. Bake and pour in stroganoff

Bread Supreme

Here is a recipe from 1967.

Bread Supreme

1 cup milk, scalded
2 Tablespoons sugar
1 Tablespoon salt
2 Tablespoons shortening
1 cup water
1 cake yeast
6 cups flour

Combine sugar, shortening, salt and liquid in large mixing bowl. Cool to lukewarm and add yeast which has been soften in lukewarm water. Add 3 cups flour and beat thouroughly. add remaining flour gradually and mix to a dough that will not stick to hands. Knead lightly on floured surface 8 to 10 minutes. Place in greased bowl. Cover and let rise in warm place until double in bulk, 2 to 2 1/2 hours. Punch down and knead about 2 minutes. Let rise again until double in bulk. Knead down and divide into 2 portions for loaves. Cover and let rest for 15 minutes. Mold in loaves and place on greased pans. Cover and set in warm place to rise until double in bulk. Bake 40 to 45 minutes at 400 degrees. Place on racks to cool.
Brush with butter and cover lightly for softer crust.

Cad`s Angel Pie

I know this recipe calls for crushed graham crackers, but when I made this pie , I bought a graham cracker crust and just rolled a few graham crackers fine to sprinkle on top....oooohhhh , it was so good.

Cad`s Angel Pie

15 graham crackers
1/2 pound marshmallows
1/2 cup milk
1 cup whipping cream, whipped
1 small can crushed pineapple ( I drained this)

Melt marshmallows with milk in top of double boiler. Cool. Whip cream and fold in marshmallow mixture. Fold in crushed pineapple. Roll graham crackers finely and line bottom of 9 or 10-inch glass pie pan with half the graham crackers. Pour filling in and cover with other half of graham crackers. Chill.

Three bean Salad

I know it is really not bean salad weather here now, but keep this recipe for future use...summer picnics.

Three Bean Salad

1 No. 303 can kidney beans, drained
1 No. 303 can yellow wax beans, drained
1 No. 303 can green beans, drained
1/2 cup onion, sliced
1 green pepper, sliced

Combine all ingredients

Dressing

1/2 cup vinegar
1/2 cup salad oil
1/2 cup sugar
1 teaspoon salt
1/4 teasapoon pepper

Mix and pour over bean mixture. Marinate overnight in refrigerate before serving.

Barbecue Sauce

I know this isn`t really a main dish, It might be in a category of sauces and dressings and such...hodge-podge catergory at least. Anyway, I think it`s kinda of a main dish, when you are having a barbeque, you do need sauce to make it a barbeque...right, lol

Barbeque Sauce

2 cans tomato puree
3 cloves garlic, chopped finely
1 cup white sugar
2 teaspoons celery seed
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 1/2 teaspoons chili powder
1 1/2 cups cider vinegar
salt and pepper to taste

Combine all ingredients and boil 1/2 hour or until thick.

Caramel Pecan Rolls

Home-made cinnamon rolls---all I can say is yummmmmmmmy!!!!!!!
You know a person can eat these in the morning and then go exercise them off,lol.

Caramel Pecan Rolls

1 package yeast
1 cup water, warm
1/4 cup granulated sugar
1 teaspoon salt
2 Tablespoons margarine, soft
1 egg
3 1/4 to 3 1/2 cups flour
1/3 cup margarine , melted
1/2 cup brown sugar, packed
1 Tablespoon corn syrup
2/3 cup pecans
1/2 cup granulated sugar
2 teaspoons cinnamon
1 cup raisins, if desired

Dissolve yeast in warm water. Stir in 1/4 cup sugar, salt, 2 Tablespoons margarine, egg and 2 cups flour. Beat until smooth, then work in enough remaining flour to make dough easy to handle. Knead for a few minutes until smooth. Grease large bowl. Put dough in dough, then turn so greased side is up. Cover and refrigerate up to 4 to 5 days, if desired.
To use at once, let dough rise until double in bulk. Combine melted margarine, brown sugar, corn syrup and nutmeats. Pour into greased oblong, 13 x 9 1/2 x 2-inch . Combine 1/2 cup sugar and cinnamon. Roll out dough to 1/2-inch thickness. Spread with a little butter and sprinkle with raisins, if desired and sugar and cinnamon. Roll up lightly, cut in 1 -inch slices and place on top of sugar mixture. Let rise until double, 1 1/2 to 2 hours. Bake 25 to 30 minutes at 375 degrees. For plain cinnamon rolls, omit margarine and brown sugar, mixture in boottom of pan.

one bowl cobbler

What is better then a home made cobbler, I from the frozen section at the store, I think not. Here is a easy recipe for a cobbler and it only requires one bowl.

One-Bowl Cobbler

1 cup flour
1 cup sugar
1teaspoon baking powder
1/8 teaspoon salt
1 egg, unbeaten
2 medium cans tart red cherries, well drained

Mix flour, sugar, baking powder, salt and egg into crumbs. Sprinkle over fruit dotted with butter. Bake until lightly browned at 350 degrees. Serve warm with or without cream.

Green Stuff

I know what a title to a recipe Green Stuff, considering lime gelatin is one of the ingredients, I would say so, the color is definitely green.

Green Stuff

1 box lime gelatin
1 box whipped dessert topping
1 can applesauce
1 cup hot water

Add hot water to gelatin and cool until slightly thickened, but not congealed. Fold whipped topping into gelatin. Stir in applesauce. Refrigerate until firm.

Homemade Chili

This makes alot of chili and you know here in the ozarks it is chili weather. This recipe comes from the Kansan`s Silver Spoon Cookbook of 1968, Richard Walsh-3rd District Commissioner contributed this recipe for that year.

HomeMade Chili

3 pounds ground beef
2 ( 6-oz) can tomato paste
2 medium onions, chopped
2 ( 3-pound) cans kidney beans
salt and pepper
Chili powder to taste

Brown ground beef slightly, add remaining ingredients and cook until vegetables are tender. Serves 6 to 8.

Pumpkin bread

I know it is not really pumpkin time, but a person can have pumpkin bread anytime right, or at least that is what I think. A person can find canned pumpkin most of the time in the grocery store.

Pumpkin Bread

3 1/3 cup flour
2 1/2 cups sugar
2 teaspoon soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
2 cups pumpkin
4 eggs
2/3 cup water
1/2 cup nutmeats
1/2 to 1 cup raisins, optional

Mix dry ingredients. Make a hole in center and add pumpkin, eggs, oil and water. Mix until smooth. Add nutmeats and raisins. Pour into 2 well greased loaf pans. bake 1 hour at 350 degrees.

Apple Pie

Who doesn`t like apple pie, not anyone I suppose, Apple pie is one of my favs.

Apple Pie

1 cup sugar
2 Tablespoon flour
1 teaspoon nutmeg
1/2 cup orange juice
1/3 cup butter, melted
apples to fill pie pan
pastry crust

Mix together sugar, flour, nutmeg, oorange juice and butter. Peel and cut apples into small chunks. Add to flour mixture and mix thouroughly. Butter a pie pan heavily before putting in pastry. Fill with apple mixture and make strips for top. Bake 15 minutes at 400 degrees and then reduce heat and bake 35 to 40 minutes at 250 degrees.

Oven Fried Eggplant

In keeping with the schdule, here is a recipe using eggplant and fried in the oven.

Oven Fried Eggplant
Mrs. Marvin Custer

1 large eggplant, peeled
2 eggs, beaten
1 Tablespoon cold water
1/4 teaspoon salt
1 stick butter
cracker crumbs

Cut eggplant in 3/4-inch slices. Add cold water and salt to beaten eggs. Melt shortening in 13 x 9-inch baking dish. Dip each slice in egg mixture, then into cracker crumbs. Bake 30 minutes at 375 degrees. Turn slices and bake additional 15 minutes. Serves 6.

showtime rotisserie



I soooo love my showtime rotisserie, in fact I have two, the compact one the one shown. I have made turkey, the white meat is so moist, you wouldn`t believe how moist; made hamburgers, chicken-white meat is also moist; corn on the cob-ooh so good.

The first one was the compact one , in which I had to have and did not buy from Ronco, but from an individual who didn`t like it, I truly love mine, the second one, I forgot where I got it at, but it came with the tray on top, as seen in photo, in which makes excellent corn, while the rotisserie cooks the meat or whatever you are rotissering. It also comes with a flavor injector , in which I have used to inject melted margarine with a few spices in to turkey, and chicken.

I highly recomend this product, whatever the size, All I can say is yummmmmmmy, when I use it to cook any of my meals!

Moussaka

Ok, I really don`t know how to pronounce this recipe, and I have to admit that I have not tried it either...Lamb is sooo expensive, if you find it in the store at all. This recipe comes from 1968.

Moussaka

2 pounds lamb, ground
1 eggplant
1 can tomatoes
6 Tablespoons prepared bread crumbs
salt and pepper
3 Tablespoons parmesan cheese

Pat 1 pound ground lamb into 10 x 6-inch glass baking dish. cover with thinly sliced and peeled eggplant. Add 1/2 can tomatoes and 3 Tablespoons crumbs
Season with salt and pepper. Repeat with second layer and top with Parmesan cheese. Bake 1 hour at 350 degrees.

Refrigerator Rolls

Here is another recipe for refrigerator rolls, this one from 1967.


Refrigerator Rolls
Mrs. Vona Odneal

1 cake yeast
1/4 cup water, lukewarm
2/3 cup fat
2/3 cup sugar
1 cup potatoes, mashed and hot
1 cup potato water, hot
3 eggs, well beaten
4 to 5 cups flour

Dissolve yeast in lukewarm water. Place fat, sugar, salt, mashed potatoes and potato water in large mixing bowl. Stir until fat and sugar are melted and mixture cools to lukewarm. Add eggs and mix well. Add 2 cups flour and mix well. Add sufficient enough flour to make a soft dough. Turn onto a well floured board and knead in flour until dough is smooth and can be easily handled. Dough must be soft. Do not use more flour then needed. Place in lightly oiled bowl and allow to rise until double in size. Knead down and shape into rolls. Allow to rise to double size. Bake 12 to 15 minutes at 400 degrees. Makes approxiamately 50 rolls. This dough will keep several days in refrigerator.


The recipe calls for salt, which wasn`t in the list of ingredients, I would say use about a 1 -1 1/2 teaspoon salt in this recipe, the usual for refrigerator rolls.

Fruit Cocktail Cake

2 cups flour
2 cups sugar
2 teaspoon soda
1/2 teaspoon salt
2 large eggs
1 can fruit cocktail ( No. 303 size)
1/2 teaspoon vanilla

Mix flour, sugar ,soda and salt. Add eggs, fruit cocktail and vanilla. Bake in loaf pan at 325 degrees until done.

Icing
1/2 cup sugar
3/4 cup evaprated milk
1/4 cup margarine
1/2 cup coconut

Combine first three ingredients and cook 10 minutes. Add coconut.

Gain dish Soap

I know can you believe it Gain washing powders , now has dish soap, I do believe it is a good product, this is my second bottle. I really don`t know if they have any for dishwasher machines though, my dishwasher is my own two hands, simple things around here .
I maybe dating myself, but remember the old dish soap commercial , where they say it is good for your hands....well this dish soap don`t dry yours hands out. And it is not a bad price either.

I so love the Gain laundry detergent as well
