Cranberry Nut Bread

I know cranberries aren't in season right now, but here is a recipe for when they are.....

Cranberry Nut Bread
Mrs. John Billaci

1 cup fresh cranberries
1 cup sugar
3 cups flour
4 teaspoon baking powder
1 teaspoon salt
1/2 cup walnuts, chopped
1 egg
1 cup milk
1 Tablespoon orange rind, grated
2 Tablespoon shortening, melted

Put cranberries thru food chopper and mix with 1/4 cup sugar. Sift together remaining sugar, flour, baking powder and salt. Add nutmeats and orange rind. Beat eggs slightly and combine with milk and shortening. Add first mixture and fold in cranberries. Bake in greased pan 1 hour at 350 degrees.

Cranberry-Pumpkin Muffins and bread

I know here in the Ozarks its not really fresh cranberry time of the year....but here is a recipe for them.......might be able to use canned cranberries if you can find any.......Remember I do type word for word from the recipes in the Kansas City Kansan Silver Spoon Cookbook.

Cranberry-Pumpkin Muffins and Bread

31/2 cups flour, sifted
1 Tablespoon baking powder
1 teaspoon salt
1/2 teaspoon allspice
1/3 cup salad oil
2 eggs
3/4 cup canned pumpkin
1 1/2 cup fresh cranberries, coarsely chopped

Preheat oven to 400 degrees. sift flour, baking powder, salt, sugar and allspice together. Beat oil, eggs, and pumpkin until blended. Add all at once to sifted ingredients and stir until mixture is just blended. Fold in Cranberries. Spoon mixture into greased muffin pans or 8 x 4 x3 -inch loaf pan.
Bake 20 to 25 minutes or until muffins or loaf is lightly browned. Let stand 5 minutes before removing from pan. Serve warm or cold. Makes 12 muffins.


* Taste the batter and put sugar in to taste....I think I put about a cup in.........

Cranberry Kitchen Cookies

I have decided the extra recipe will be cookie recipes since the 1 of October is home made
 cookie day. So here starts the first recipe....

Cranberry Kitchen Cookies
Mrs. Vincent C. Solomon

1/2 cup margarine
1 cup granulated sugar
3/4 cup brown sugar, packed
1/4 cup milk
2 Tablespoon orange juice
1 egg
3 cups flour, sifted
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup nutmeats, chopped
1 1/2 cups cranberries, chopped

Cream butter and sugars; then add milk, orange juice and egg. Sift flour, baking powder, and baking soda and salt. Combine with butter and sugar mixture and blend well. Stir in nutmeats and cranberries. Place teaspoonfuls on greased cookie sheet or you may bake as bars in 11 x 15 x1-inch pan. Sprinkle with granulated sugar on top of cake and bake 10 to 15 minutes at 375 degrees.

Cranberry Salad

Here is recipe for that cranberry salad for the Thanksgiving holiday or make it for Christmas.

Cranberry Salad
Mrs. Ben Honza

1 can or jar cranberry sauce
lettuce
cream cheese
mayonnaise
finely chopped celery
nutmeats

Chill cranberry sauce. Place a slice on lettuce leaf. Press mixture of cream cheese and mayonnaise thru pastry tube. Sprinkle chopped celery and nutmeats. place another slice of cranberry sauce on top and garnish with cheese and mayonnaise mixture and nutmeats.

Cranberry Crunch

Here is a recipe you can save for when fresh cranberries are in the stores.

Cranberry Crunch
Mrs. James D. Vossen

1 ( 2-pound) package cranberrries
4 long stalks celery
2 cups miniature marshmallows
1 cup sugar
1 cup English walnuts, chopped
1 cup crushed pineapple
1 pint whipping cream, whipped

Combine cranberries, nutmeats and celery and put through food grinder. Add pineapple and sugar. Add whipped cream. Place in bowl and decorate top with marshmallows ( about 1/3 cup). Let set for 24 hours in refrigerator.

Cranberry Bread

Keeping with my schedule, Here is a bread recipe.

Cranberry Bread
Mrs. Wiley Morris

2 1/4 cup flour
1/4 teaspoon salt
2 teaspoon baking powder
2 eggs, slightly beaten
1 1/4 cup cranberries, sliced
1 1/4 cup sugar
1/2 teaspoon soda
3 Tablespoons shortening
1 cup nutmeats
juice of 1 orange
1 teaspoon orange rind ( I assume grated)

Mix orange juice with boiling water to make 1 cup. Sift dry ingredients two times. Add shortening, eggs and orange juice. Mix well. Fold in nutmeats and add sliced cranberries. Pour batter into two medium -sized tin cans , which have been well-greased and dusted with flour. Bake 1 hour at 325 degrees. Stand on end 24 hours before cutting.

* could cook in laof pan as well, as tin coffee cans are a thing of the past.

Cranberry Wreath Salad

I know , really not cranberry time, but save this recipe when it is and have it for that special dinner party and family gathering during the holidays. Of course , since it calls for canned cranberries , have now.

Cranberry Wreath Salad

1 package strawberry gelatin
1 cup hot water
1 cup canned cranberries, whole or jellied
dash salt
1 14-oz can crushed pineapple
1 package lemon gelatin
1 1/2 cups boiling water
3/4 of 3-oz package cream cheese, softened
1/4 cup salad dressing
dash salt
1/2 pint heavy cream, whipped

Disolve strawberry gelatin in hot water. Add cranberries and salt. Pour into 6 1/2 cup ring mold. chill until firm. Drain pineapple and reserve syrup. Dissolve lemon gelatin in boiling water. Add marshmallow and stir until melted. Add reserved syrup. chill until partially set. Blend cream cheese, salad dressing and salt. Add to marshmallow mixture. Stir in pineapple.If mixture is thin, chill until it will mound slightly when spoons. Fold in whipped cream. Pour over strawberry gelatin. Chill.


sorry about that the paper seems to left out the how many marshmallows, just take a gander of how many to use,....I would say a small package.

Cranberry Salad

I know it is not really the time of the year for cranberries, but here is a recipe that can be added to your collection and make it during the cranberry season.

Cranberry Salad
Mrs. Elmer dollard

1 pound cranberries
1 orange
2 apples
2 packages cherry gelatin
2 cups boling water
1 1/2 cup sugar


Grind cranberries, orange, and apple in food chopped. Mix gelatin, boiling water and sugar. cool. Add ground fruits to gelatin mixture and pour into 13 x9 x2-inch dish. chill thoroughly. cut into squares. serves 16. Salad may be served on a slice of pineapple and topped with whipped cream.

Cranberry Sour cream Salad

ok , I know this is not cranberry season, but hey a person can eat cranberries all year long. Cranberry Sour Cream Salad Mrs. D. S. Berry 1 package raspberry gelatin 1 cup water , hot 1 can cranberry sauce 1 pint sour cream Dissolve gelatin in hot water. Cool. Add cranberry sauce and sour cream. Mix well and pour into individual lightly oiled salad bowls. Chill until firm. Makes 10 to 12 individual molds. Cream Cheese Dressing 1/2 pint whipping cream 6 marshmallows, quartered 1 package cream cheese ( 3 oz) Combine ingredients and chill overnight. At serving time whip until light and fluffy. spoon over salad molds.

Cranberry Salad

here is another great cranberry salad recipe from 1967 Kansan`s Silver Spoon Cookbook


Cranberry Salad
Mrs. Herbert Lipp

1 pound cranberries
3/4 cup small marshmallows
1 cup sugar
1 pint whipping cream
1 cup crushed pineapple, drained

Grind cranberries. Add sugar and let stand 2 hours in small bowl. Whip cream and add marshmallows. Let stand 2 hours. Combine mixtures and add pineapple. Let stand several hours in refrigerator before serving.

Cranberry Bread.. turkey dinner

This recipe is excellent with butter or just plain.. It comes from the Kansan`s Silver Spoon cookbook of 1967. This would be good for just any occasion, not just around the holidays. Though a person might not find all the ingredients except around the holidays, ( Thanksgiving and Christmas)

Cranberry Bread
Mrs E. A. O`Donovan

2 cups flour, sifted
3/4 cup sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup shortening
3/4 cup orange juice ( I squeeze my own)
1 Tablespoon orange rind, grated
2 eggs, well beaten
1 cup cranberries, coarsely chopped
1 cup green glace cherries, chopped

Sift flour, sugar, bakiing powder, soda, and salt together. Cut in shortening until mixture resembles coarse cornmeal. Combine orange juice, and rind with well beaten eggs. Pour at once into dry ingredients, mixing until dampened. Dust Chopped cranberries and cherries with 1 Tablespoon flour. Carefully fold into batter. Spoon into well-greased 1 1/2 quart casserole or loaf pan. Bake 1 hour at 350 degrees. Cool before removing from pan. Ice with confectioners sugar icing or serve with butter,

Or just eat the way it is.

Turkey dinner.....cranberries..Cranberry salad

Usually we here on the farm just get a can of cranberries, usually the jellied kind. My dad liked Cranberries, so we always put them out for Thanksgiving and for Christmas, the can variety. I am gonna post two different recipes for cranberries, which one might show up this year for Thanksgiving. Here goes the first one; cranberry Salad ,which is from the Kansan`s Silver Spoon cookbook of 1967.


Cranberry Salad

1 pound cranberries, ground ( I used the canned variety ,whole berry)
2 cups sugar
1 medium can pineapple, crushed
4 cups miniature marshmallows
1 cup nutmeats, chopped , ( I used walnuts)
1 pint whipping cream, whipped

Combine sugar, pineapple, marshmallows and nutmeats. Let stand overnight. Fold in whipped cream abnd cranberries. Let set for 4 hours before serving.
