I know, alittle late on the Irish recipe , but better late then never, lol.
Irish Soda Bread
Mrs. joseph w. Ruzick
4 cups flour
1 teaspoon salt
1 teaspoon sugar
1 1/3 to 1 1/2 cups buttermilk
1 Tablespoon caraway seeds , optional
Sift dry ingredients. Make a hollow in the center and pour in 1 cup buttermilk. mix with hands and add enough more buttermilk to make a firm , but not dry dough. Turn onto a floured board and knead lightly. Shape into a round loaf and cut across top so that is will not crack .Sprinkle with carawy sees, if desired. Place in buttered skillet and bake 40 to 45 minutes at 350 degrees.
( This is the traditional bread of Ireland. It shouold be broken, not cut and is usually served with hot tea.)

Grandma`s Warcake
This cake is similar to raisin bread and it is from 1967 Kansas City Kansan`s Silver Spoon Cookbook of that year.
Grandma`s Warcake
Mrs. Tom Selby
2 cups sugar
2 cups boiling water
1 Tablespoon shortening
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1/8 teaspoon nutmeg
1 cup raisins
walnuts, if desired
3 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon soda
Combine sugar, water, shortening, salt, cinnamon, ginger, cloves, nutmeg, raisins and walnuts, if desired and bring to a boil. Boil 5 minutes. cool. combine with sifted flour, baking powder and soda. Bake in moderate oven until cake tester comes out clean.
* I baked this cake at 350 degrees

Carrot Celery Salad
Carrot Celery Salad
1 box celery gelatin ( don`t know if it is still available, I haven`t never seen it)
1 or 2 carrots
1 cup celery, diced
3 or 4 radishes
garlic salt to taste
salt
Prepare gelatin unsing 1 1/2 cups hot water and 1/2 cup cold water. Pour into 10 x 6 x 2-inch pan. Slice carrots into rounds. Dice radishes. Combine all ingredients and chill.

Russian Potatoes
These potatoes are really good and yummy. I bet they would be good with fresh potatoes dug from the garden, just had to put that in , as I am getting ready to plant some potatoes this week, hopefully before it rains.

1 small onion, minced
salt and pepper
2 Tablespoons butter
3 Tablespoon sour cream
Peel and cube potatoes. combine with onion, salt and pepper. Cover with boiling water and simmer until tender. Drain. Add butter and sour cream and cover. shake pan gently. Let stand a few minutes before serving. Serves 4.

Ok, don`t ask me to pronounce this, because I really don`t think I can. It taste like cornbread.

4 teaspoon baking powdr
1 teaspoon salt
4 eggs, beaten
1/2 pound bacon, diced
1/2 pound brick cheese, diced
1 cup green onions, diced
1/2 pound butter, melted
3 cups buttermilk
2 teaspoons lemon or vanilla flavoring
sift cornmeal, flour, baking powder and salt. Add eggs. Add bacon, cheese, green onions, melted butter and buttermilk. combine slowly and thoroughly. Add flavoring and pour into 9 x 12-inch greased pan. Bake 1 1/2 hours at 350 degrees.

new appliances...
The new stove
The kitchen has gotten a new frig and a new stove this year. The old frig would take it`s spells in freezing in the frig department, not the freezer part. I really don`t like frozen milk, or eggs, or jello.
The old stove was from the 1950`s , I think and the oven didn`t work and it was soo small. The stove had a compartment on the side to store your pots and pans. the new stove is 30-inchs , the standard size, so their is a gap on both sides of the stove., But I soo love having a oven again and having a frig that doesn`t freeze.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon soda
1 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
3/4 cup shortening
1 egg, beaten
1 cup ripe bananas, mashed ( 3 bananas)
1 3/4 cup quick oatmeal
1/2 cup nutmeats
sift flour, sugar, soda, salt, nutmeg and cinnamon. cut in shortening. Add egg and beat well. add bananas, oatmeal and nutmeats. Mix well. Bake 10 minutes at 375 degrees.

Barbeque Limas
Ok, I really don`t like lima beans, but I am sure their is some of you out that do and this recipe is for you.
Barbeque Limas
4 cans lima, drained
3/4 cup brown sugar
1/2 cup catsup
1/3 cup dark corn syrup
1 medium onion, diced
2 or 3 teaspoons liquid smoke
2 or 3 drops tabasco
bacon
combine all ingredients, topping with bacon. Bake 1 hour at 325 degrees.

Ok, I have not tried this one, but I am sure it is good.

O.E. Bright
1 pound ground beef
3/4 cup diced processed cheese food
1/2 cup vienna bread crumbs
1 cup milk
1 egg, unbeaten
2 teaspoons sugar
1/3 cup barbeque sauce
2 teaspoons seasoned salt
3 teaspoon minced onion or 3 teaspoon onion juice
Mix thoroughly; place in loaf pan and bake 2 hours at 350 degrees

Biscuits
When I made these biscuits...they really didn`t rise that good, but then again I did bake them a toaster oven...get my new stove wednesday......
Hence...no yeast in these.

1/2 teaspoon salt
2 teaspoon sugar
1/2 cup shortening
1 egg, unbeaten
2/3 cup sweet milk
sift flour, baking powder, cream of tartar, salt and sugar. Add shortening and blend until cornmeal consistency. Pour milk into flour mixture slowly. Add egg and stir to stiff dough. knead 5 times and roll out. Bake on cookie sheet 10 to 15 minutes at 450 degrees.

Lemon angel Pie
Anybody say lemon pie and I am there. this recipe is very rich to say the least and lemon on top of that.

4 egg whites
1 teaspoon vinegar
1/4 teaspoon salt
1 1/4 cup sugar
Beat egg whites until frothy. Add salt and vinegar. Beat until stiff. Add sugar gradually and beat well. Spread into greased pie tin and bake 1 hour at 275 degrees.
Filling
4 egg yolks
2 teaspoons lemon rind, grated
1/3 cup sugar
3 Tablespoon lemon juice
1 cup whipped cream
2 Tablespoons sugar
Beat egg yolks until light. Add remaining ingredients. Cook over hot water until thickened, stirring constantly. Cool. Beat whipped cream with sugar. Add 1/2 whipped cream to lemon filling. Spread mixture over meringue crust .Spread remaining cream over top. Refrigerate overnight.

Green Bean Salad

1 large can wax beans
1 small can kidney beans
1 small can lima beans
1/2 red onion
1/2 green pepper
1 jar pimientos, chopped
1/2 cup celery
1 cup sugar
3/4 cup white vinegar
1/4 cup water
1 teaspoon salt
combine sugar, vinegar, water and salt and bring to a boil. Pour over other ingredients and refrigerate overnight.
