Lemon Gelatin with cheese

Here is another good recipe using gelatin from 1967 Kansan`s Silver Spoon cookbook. It seems like their is alot of gelatin recipes that were put in this book that the Kansan put out.

Lemon Gelatin With Cheese
Mrs. Herbert Lipp

2 packages lemon gelatin
2 cups water, hot
2 cups lemon-lime carbonated beverage
1 1/2 cups crushed pineapple, drained
3/4 cup grated carrots
1 cup whipped cream
parmesan cheese

Mix gelatin , boiling water and lemon-lime beverage. Pour into 9 x 13 glass dish. While still syrup, add drained crushed pineapple and grated carrots. Chill until firm. Whip cream and ice the chilled gelatin. sprinkle liberally with finely grated parmesan cheese.

Scalloped Chicken

Here is a different way to fix that scuptious chicken, for those of you that are bored with the same old way. This recipe is another one from 1967 Kansan`s Silver Spoon Cookbook.

Scalloped Chicken
Mrs. Virgil Sullivan

1 chicken, 4 to 5 pounds
1 package noodle-vegetable soup mix
1/2 cup butter or margarine
1/2 cup flour
2 cups chicken broth
1 1/2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups fresh bread crumbs
2 egg yolks, beaten
1/2 cup chicken broth
2 egg whites , stiffly beaten
1 can ( 6 oz) mushrooms, sliced ( optional)
1/2 cup stuffed olives, sliced ( optional)

Cook chicken and let cool. Cut from bone in small pieces. About 1 1/2 hours before serving, arrange chicken in greased 19 x 9 x 2-inch baking dish. Sprinkle with salt and pepper. Heat oven to 325 degrees. Melt 1/2 cup butter. Stir in flour, 2 cups broth and milk. Cook until thickened. Remove from heat. Stir in salt,pepper, crumbs, egg yolks and chicken broth. Fold in egg whites. Pour over chicken and bake 1 hour.
Saute mushrooms in 2 Tablespoons butter 3 to 4 minutes. Add olives and heat. Serve chicken topped with mushroom-olive mixture.



Suggestion: cook chicken by boiling.

Hello Dolly

This recipe is a repeat as it is in the convience food section of this cookbook put out by the Kansan, it is really good. Two different women submitted this recipe and it is about the same, so here it goes, oh yea it is from 1967.

Hello Dolly

1/2 pound butter or margarine
1 cup graham crackers
1 cup coconut
1 cup chocolate chips
1 can sweetened condensed milk

Melt butter. Place all ingredients as listed in layers in 8-inch square pan. Spread evenly, but do not mix. Pour sweetened condensed milk over top. Bake at 350 degrees until milk turns golden brown.

Carrot nut Bread

Here is a recipe for bread using carrots and it is another from the past of the year 1967 and from the Kansan`s Silver spoon Cookbook

Carrot Nut Bread
Mrs. Donald Garrison

3/4 cup salad oil
1 cup sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1 cup carrots, grated
1/2 cup nutmeats, chopped
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon soda
1/4 teaspoon salt

Mix salad oil, sugar and eggs. Add carrots, nutmeats and vanilla. Add dry ingredients that have been sifted together. Mix well and pour into greased loaf pan. Bake 1 to 1 1/2 hours at 325 degrees.

Beauty Salad

Ok , I don`t think would make you beautiful, but it would hurt to try and see, any who here is the recipe and it is from 1967.

Beauty Salad
Mrs. H. L. Corp

2 packages lemon gelatin
1 can crushed pineapple ( No. 2 can)
1 small package cream cheese
1/3 pound marshmallows, cut up
1 cup cream, whipped
1/2 cup salad dressing
2 packages raspberry or cherry gelatin

Dissolve lemon gelatin according to package directions. Let cool until syrupy, but not set. Drain crushed pineapple, saving juice. Combine pineapple, cream cheese, marshmallows, whipped cream and salad dressing. Add to cooled gelatin. Mix well and add juice drained from pineapple. Pour into oblong dish and place in refrigerator until set. Dissolve raspberry gelatin according to package directions. chill until syrupy. Pour over lemon gelatin mixture. Chill until set. At serving time, cut into squares and serve on lettuce leaf. Garnish with salad dressing.

Apricot Salad

Ok this is another salad from 1967 Kansan`s Silver Spoon Cookbook .

apricot Salad

2 boxes orange gelatin
2 cups hot water
1 can apricots ( No. 2 1/2 can) , drained and mashed
1 large can pineapple, drained
1 package miniature marshmallows
1 cup apricot and pineapple juice
2 Tablespoons flour
1/2 cup sugar
1 egg, beaten
1 cup whipping cream or whipped dessert topping

Combine gelatin and hot water. Combine apricots , pineapple, marshmallows, apricot and pineapple juice, flour, sugar and egg. Cook until thickened. Cool. Fold in whipped cream or whipped dessert topping. Add to gelatin mixture and chill.

Man Pleasing Meat Loaf

Ok , I don`t know if this is man pleasing or not , but is sure good as meatloaf goes. And again this is from 1967 Silver Spoon Cookbook from the Kansan newspaper.

Man Pleasing Meat Loaf
Mrs. David Neal

1 pound ground beef
1 small onion, chopped
1/2 cup oatmeal
1 egg
2 Tablespoons milk
1/2 green pepper, chopped
1 can tomato sauce ( 8 oz)

Combine all ingredients except tomato sauce. Mix well. Shape loaf and put in 8 x 8-inch pan. Add 1/2 cup water. Bake 20 minutes at 450 degrees. Pour tomato sauce over loaf and bake additional 20 minutes.

* Remember oven times may vary due to oven

Cheese Cake Pie

erOk who doesn`t love cheese cake, not I.

Cheese Cake Pie

1 cups graham cracker crumbs, finely ground
1/4 cup sugar
1/4 cup margarine or butter , melted
2 8-oz packages cream cheese, softened
2 eggs
1/3 cup sugar
1/2 cup evaporated milk
1 teaspoon vanilla
1 can cherry, peach or blueberry filling

combine graham cracker crumbs, sugar and melted butter or margarine and press onto bottom and sides of a 9-inch pie pan. Build up edge of crust about 1/4-inch above rim. Beat cream cheese until fluffy. add eggs and sugar and beat until smooth. Add milk gradually. Add vanilla and beat until smooth. Pour into crust. Bake 45 minutes at 300 degrees. Cool. Pie will settle as it cools. Top with pie filling. Chill.

Yum-Yum salad

The title of this recipe sums it up....yum-yum. It is from 1967 Kansan`s Silver Spoon Cookbook, in which alot of good recipes are in this....can`t find it no more .


Yum-Yum Salad

2 cups pineapple, drained
juice of 1 lemon
1 cup sugar
2 Tablespoons unflavored gelatin
1/2 cup cold water
1 cup American cheese, grated
1/2 pint cream, whipped until stiff
2 Tablespoons green pepper
2 Tablespoons pimiento

Heat pineapple, lemon and sugar. Stir until sugar is dissolved. Dissolve gelatin in 1/2 cup water and let stand 10 minutes. Add this to hot pineapple mixture. Add cheese, whipped cream, green pepper, pimientos and put in vcool place to set.

Tender Baked Beef Stew

What is better then homemade chili or a stew of some sort when the wind is howling at the door, or bitter cold outside, like it has been here in the ozarks.

Tender Baked beef stew

2 Tablespoons salt
2 pounds stew meat, cut in 1-inch cubes
1 large onion, sliced ( ok I chopped mine)
1 teaspoon garlic salt
4 cups boiling water
1 Tablespoon salt
lemon juice
1 teaspoon sugar
worcestershire sauce
1/2 teaspoon pepper
paprika
dash allspice
6 carrots, cut in quarters
6 medium potatoes, diced
1/2 cup cold water
1/4 cup flour

Brown meat in fat for about 20 minutes. Sprinkle with garlic salt. Add onion, water, salt, lemon juice, sugar, Worcestershire sauce, pepper,paprika and allspice. Cover and bake 3 1/2 hours at 375 degrees. Add carrots and potatoes and bake 2 more hours. Remove from oven. Mix cold water and flour and add to stew. A can of peas or tomatoes also may be added.

Harvest pie

Ok, this is good around Thanksgiving here in the ozarks, as can not find mincemeat in other time,lololl.

Harvest Pie

1 9-inch pie crust
2 cups mincemeat
1/2 cup pumpkin
1 teaspoon pumpkin pie spice
1/2 cup brown sugar
pinch salt
1 egg, well beaten
1/4 cup cream
1 cup milk

Line pie pan and fill with mincemeat. Combine pumpkin,spice, brown sugar , salt, egg, cream and milk. Mix well and pour over mincemeat. Bake 45 to 50 minutes at 400 degrees.
