Overnight Cookies

1 cup butter
2 cups sugar
2 egg, well beaten
1 teaspoon soda
1 teaspoon cream of tartar
1 cup nutmeats
4 cups flour
Combine ingredients and shape into roll. place in refrigerator overnight. Slice and bake in hot oven.

Applesauce Cookies
Ohh applesauce......

3/4 cup shortening
1 cup brown sugar, packed
1 egg
1/2 cup applesauce
2 1/4 cup sifted flour
1/2 teaspoon soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon cloves
1 cup raisins
1/2 cup nutmeats
Cream shortening, sugar and egg. Add applesauce and blend in flour, slat and spices. Add raisins and nutmeats and drop by teaspoon on greased cookie sheet. Bake 10 to 12 minutes at 375 degrees.

Maraschino Cherry Bars

1/2 cup flour
1/4 teaspoon soda
1/8 teaspoon salt
1/2 cup brown sugar, firmly packed
1 cup oatmeal
1/3 cup butter, melted
Sift together flour, soda and salt. Add brown sugar, oatmeal and butter .Mix well. press firmly into ungreased 9-inch square pan.
TOPPING
1 /4 cup flour
3/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs, beaten
3/4 cup maraschino cherries, chopped
1/2 cup coconut
1/2 cup nutmeats
combine all ingredients thoroughly. Spread over base mixture and bake 30 minutes at 350 degrees. Cool and cut into bars.

1/2 cup confectioners sugar
1 cup butter or margarine
pinch of salt
4 eggs, slightly beaten
2 cups sugar
4 Tablespoon lemon juice
Cream butter; ad sugar, salt and flour and mix thoroughly. Press into 9 x 13 -inch pan. bake 20 minutes at 350 degrees or until light brown. Remove from oven.
Combine eggs, sugar and lemon juice and mix thoroughly. Pour over baked ingredients and bake 25 minutes longer. Cook for 5 to 10 minutes then sprinkle with confectioners sugar. Cut into squares.

Sift flour and measure. Sift with soda, spices and salt. Add raisins and nutmeats. Cream shortening and add suygar gradually. Beat until light and fluffy. Add eggs and beat thoroughly. Add dry ingredients, alternately with applesauce. Drop by Tablespoon onto cookie sheet. Bake 12 to 15 minutes at 400 degrees. Makes 50 medium cookies

1 cup flour, sifted
1 cup butter, softened
1 1/2 cup flaked coconut
Sift together cornstarch, confectioners sugar and flour. Blend in butter until soft dough is formed. If desired, chill dough. Roll into small balls 1/2-inch in diameter. Roll in coconut. Flatten with floured fork. Place on greased baking sheet 1 inch apart. Bake 20 minutes or until lightly browned at 300 degrees. Makes 3 1/2 dozen

Snappy Turtles
These could also be considered a candy to a point....but we will say they are a cookies.

Mrs. Frances Spalding
1 1/2 cups enriched flour
1/4 teaspoon soda
1/4 teaspoon salt
1/2 cup butter or margarine
1/2 cup brown sugar, firmly packed
2 eggs
1/2 teaspoon vanilla
1/8 teaspoon maple flavoring
Sift together flour, salt and soda. Cream butter or margarine, and add brown sugar slowly. Add 1 egg and 1 yolk. ( Reserve white) Beat well. Blend in vanilla and maple flavoring. Add dry ingredients gradually. Dough will be soft. Chill, if desired.
Arrange 5 pecan halves, for each cookie, to resemble head , feet of turtle. Mold dough into balls. Dip bottom into egg white and press lightly onto pecan halves. Use 1 rounded teaspoon dough . Bake 10 to 12 minutes at 350 degrees. Cool. Frost.

1/2 cup semisweet chocolate morsels
1 Tablespoon butter or margarine
1/4 cup milk
1 cup powdered sugar
Combine first three ingredients, in top of double boiler. Heat over boiling water until melts. Remove from heat . Add powdered sugar and blend.

Chip Chocolate Oatmeal Cookies
I know it should read chocolate chip oatmeal cookies, but that is how the recipe is titled chip chocolate oatmeal cookies.

1/4 cup water
2 teaspoons vanilla
3 teaspoon black walnut flavoring

6 cups quick cooking oatmeal, uncooked
Combine ingredients in order listed. Blend well. Bake 8 to 10 minutes at 350 degrees. Take out before they seem quite done. Makes 8 to 10 dozen cookies.
Add chocolate chips to them before baking of course ...I think the person who submitted this recipe forgot them way back in 1968.

1 cup canned crushed pineapple with syrup
1/4 cup butter
1 cup brown sugar
2 eggs
1/2 cup rolled oats
1/2 cup coconut
1 Tablespoon orange rind, grated
2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon soda
1 teaspoon cinnamon
Combine apricots and pineapple. let stand several hours. Blend in butter and sugar. Add eggs and beat well. Stir in oatmeal, coconut, orange rind and mixed fruit. Stir in dry ingredients and combine well. Drop from a teaspoon on greased baking sheets. Bake about 12 minutes at 350 degrees.

Mix brown sugar and melted butter together. Add sifted flour, soda, beaten egg, milk and chocolate and nutmeats. Bake on greased and floured cookie sheets 9 to 10 minutes at 350 degrees.
Frosting
1 square unsweetened chocolate
2 Tablespoons hot water
3 Tablespoons butter
Confectioners sugar
Combine chocolate , hot water and butter. Add enough confectioners sugar to spread easily.

1 cup peanut butter, crunchy
1 teaspoon vanilla
Beat egg and sugar together until light and fluffy. Add 1/2 cup peanut butter and continue beatin. Stir in remaining peanut butter. Add vanilla. Bake 6 to 8 minutes at 375 degrees. Chopped peanuts maybe added. ( there is no flour in these cookies).

Combine shortening, sugar , 1/2 cup brown sugar, egg yolks, water, flour, salt, baking powder, soda and vanilla. Spread on a cookie sheet and press down to cookie thickness. Sprinkle with chocolate bits. Bake 20 to 25 minutes at 350 degrees. Cut into squares when cool

1/4 cup sugar
3 Tablespoon butter

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 egg
3/4 cup raisins, cooked
Combine syrups and molasses and heat to boiling point. Add sugar, butter and milk. Sift together flour, soda, salt and nutmeg, cinnamon, and allspice. Add to mixture. add egg and raisin. Mix well. Roll each teaspoon of dough in sugar and place on buttered cookie sheet. Bake 15 minutes at 350 degrees.

1/2 cup butter or margarine
3 squares unsweetened chocolate
1 1/2 cup sugar
3 eggs
1 1/2 cups all-purpose flour
1 1/2 cups peanuts
Melt butter or margarine and chocolate over low heat, stirring constantly. Remove from heat and stir in sugar. Add unbeaten eggs, one at a time, beating well after each addition. Blend in flour and add peanuts. Chill dough at least 2 hours. drop by rounded teaspoonfuls onto greased baking sheets. Bake 12 to 16 minutes at 350 degrees. Cookies should be spring bacvk when touched lightly. Makes 4 dozen.
Peanut Brownie Drops

1/2 cup butter or margarine
3 squares unsweetened chocolate
1 1/2 cup sugar
3 eggs
1 1/2 cups all-purpose flour
1 1/2 cups peanuts
Melt butter or margarine and chocolate over low heat, stirring constantly. Remove from heat and stir in sugar. Add unbeaten eggs, one at a time, beating well after each addition. Fruitaroons
Here is another recipe that calls for fruit cocktail.

1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon soda
1 cup brown sugar, firmly packed
1/3 cup shortening
1 egg, unbeaten
2 Tablespoons sour or sweet cream
1 1/2 cups toasted coconut
1 cup quick cooking oatmeal
1 cup ( 1-pound can) fruit cocktail, well drained
1/3 cup nuts, chopped
1/4 cup marachino cherries, chopped
Sift together flour, baking powder, soda and salt. Cream well brown sugar and shortening. Blend in egg and cream. Add dry ingredients. Stir in coconut, oatmeal, fruit coctail, nutmeats and marschino cherries. Drop by rounded teaspoonfuls onto greased baking sheets. Bake 15 to 18 minutes at 375 degrees. Makes 3 dozen.
