Bacon Muffins

Who doesn't love muffins and bacon?

Bacon Muffins
Mrs. John O. Fife

2 slices bacon
1 Tablespoon sugar
1 cup milk
1 beaten egg
1 cup flour
1/2 teaspoon salt
4 teaspoon baking powder
1 cup cornmeal

Cut bacon into small pieces and fry slowly until crisp. Add sugar, milk and egg. Sift flour , salt and baking powder. Mix with cornmeal and add to first mixture. Stir just until dry ingredients are moisten. Fill greased muffin pans, 2/3 full. Bake 20 to 25 minutes at 4002 degrees.

Suprem Surprize

This could probably be made as a main dish....I think....or not!



Supreme Surprize

2 slices bacon
1 small onion
1 No. 303 can sauerkraut
1 No. 303 can stewed tomatoes
2 Tablespoon brown sugar
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup croutons, seasoned

Mince bacon strips and brown thoroughly. Add finely chopped onion and cook until golden brown. Add sauerkraut, tomatoes and remaining ingredients. Cook slowly 20 minutes. Pour into 2-quzrt baking dish and bake 30 minutes at 350 degrees. Put croutons on top during last 5 minutes.

Green Beans

Here is a different way to fix green beans...could fix them for the upcoming holiday.

Green beans
Irene Brown

2 packages frozen green beans, french style ( could use canned as well)
4 slices bacon
1 small onion
1 Tablespoon sugar
1 1/2 to 2 Tablespoon flour
1/2 cup cream or half and half
1/4 cup mayonnaise
salt and pepper to taste

Fry bacon and onions until done. Add sugar and flour, then add cream and mayonnaise, which have been mixed together. Add beans and heat.

Okra and Tomato Casserole

Okra is a acquired taste. This could be a main dish.

Okra and Tomato Casserole

1 meduim can okra, drained and rinsed with water
1 medium size can tomatoes, drained ( save juice)
2 slices soft buttered bread, cubed
1 package pimiento cheese ( 8 slices), cubed ( save 2 slices)
4 to 6 slices bacon for topping

Grease Shallow 7 x 10 x 2-inch pan. make 2 layers of okra, tomatoes, bread and cheese. Cut bacon into 1-inch pieces and spread over entire top. Tuck 2 pieces of cubed cheese around bacon. Spoon tomato juice carefully over bacon. Do not salt. Bake 45 minutes at 350 degrees.

Squaw Corn

Ok, this may be a good way to fix your corn for the upcoming holiday feast. This recipe was in published main catergory of the 1968 Kansas City Kansan Silver Spoon Cookbook, but it can be a side dish.....corn.

Squaw Corn

6 slices bacon
3 eggs, slightly beaten
2 cups ( 1 pound) cream corn
1/4 teaspoon salt
dash pepper

Cut bacon into small pieces. Fry until done. Drain off grease. Combine bacon, eggs, corn, salt and pepper and cook over low heat, stirring occassionally until eggs are cooked.

* I added a small onion, chopped...( I love onions)

Crnogorski Prijesnac

Ok, don`t ask me to pronounce this, because I really don`t think I can. It taste like cornbread.

Crnogorski Prijesnac

3 cups yellow cron meal
2 cups flour ,sifted
4 teaspoon baking powdr
1 teaspoon salt
4 eggs, beaten
1/2 pound bacon, diced
1/2 pound brick cheese, diced
1 cup green onions, diced
1/2 pound butter, melted
3 cups buttermilk
2 teaspoons lemon or vanilla flavoring

sift cornmeal, flour, baking powder and salt. Add eggs. Add bacon, cheese, green onions, melted butter and buttermilk. combine slowly and thoroughly. Add flavoring and pour into 9 x 12-inch greased pan. Bake 1 1/2 hours at 350 degrees.

Bacon Lettuce Tomato Salad

This recipe has just what the title says in it...you know you can`t wrong with anything with bacon in it and plus it uses the bacon drippings to make the dressing the goes in the salad......to me that is extra special.

Bacon Lettuce Tomato Salad

1 head lettuce
8 slices of bacon
3 slices white bread
1 clove garlic, minced
3 Tablespoons salad oil
2 Tablespoons white vinegar
3 Tablespoons onion, finely chopped
1/4 cup mayonnaise
1/2 teaspoon salt
1 tomato , thinly sliced

Core, rinse and drain lettuce. Chill in plastic bag. Cook bacon until crisp. Drain and crumble. Drain all but 3 Tablespoons drippings from skillet. Trim crust off bread. Cut bread into cubes. Add garlic to drippings in skillet. Saute cubes until crisp. Remove from skillet with slotted spoon and drain on paper towels. Stir salad oil, vinegar and onion into skillet. Cool, then mix with mayonnaise and salt. Tear enough lettuce into bite-size pieces to measure 5 cups. Refrigerate remaining lettuce for another time. Toss torn lettuce in salad bowl with mayonnaise mixture, bacon , bread cubes and tomato. Serve at once. Serves 6.

Hot Ziggities

Yea, we are almost done with the recipes from appetizers and soups from 1967 Kansan`s Silver Spoon cookbook and all that will be left is main dishes, salads, breads and ooh the desserts....yummmy. Just one more recipe to go after this one.

This recipe calls for water chestnuts, yum.

Hot Ziggities
Mrs. H. L. Spencer

1 can water chestnuts, drained
1 cup soy sauce
bacon strips

Soak water chestnuts in soy sauce for 30 minutes. Remove water chestnuts and wrap each in bacon. Secure with toothpick. Broil until bacon is crisp. Serve warm
