Ok, when I made this I did cheat and used butter for the shortening, or rather margarine.
Eggless, Milkless and Butterless cake
Mrs. John O. Fife
2 cups brown sugar
2 cups water, hot
2 Tablespoons shortening
1 teaspoon salt
1 1/8 teaspoon cinnamon
dash cloves
1/2 teaspoon allspice
3 cups sifted flour
1 teaspoon baking soda
1 cup raisins
1 cup nutmeats, chopped
Boil sugar and water, shortening, salt, rasisins and spices 5 minutes. When col, add flour and soda dissolved in 1 teaspoon hot water. Bake in 9 x 13x 2-inch cake pan, 45 minutes at 325 degrees. Cake can be served plain or with confectioners sugar icing or whipped cream.

Tomato Soup Cake

1 cup sugar
2 eggs, well beaten
1 can tomato soup
1 1/2 teaspoon cinnamon
1 teaspoon soda
1 teaspoon baking powder

1/2 cup raisins
1/2 cup nutmeats
Cream butter and sugar. Add eggs and milk until smooth. Sift cinnamon, soda, baking powder , salt and flour. Add alternately with soup. Bake 45 minutes at 350 degrees.

Hot Milk Cake
Here is another cake recipe....hmmm I like Cake!!!
Hot Milk Cake
Mrs. Larry Lee Frye, SR.
3 eggs, well beaten
1 1/4 cup sugar
1 1/2 cup flour
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
3 teaspoon butter or margarine and enough milk to make 1 cup
Combine all ingredients except milk and butter. Bring milk and butter to a boil. Add to other ingredients. Mix well. Bake 35 to 40 minutes at 350 degree.

Since I didn`t put a recipe on yesterday, I put 2 on today, both desserts. This first one tastes just like shortcake.

Pound Cake
I love making pound cake when I have alot of eggs, like now, I might make pound cake today.I do have alot of pound cake recipes...which one to make, anyway here is one from 1968.
Pound Cake

1/3 cup vegetable shortening
2 sticks margarine
3 cups sugar
5 eggs
3 1/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup milk
2 Tablespoon lemon extract
Cream shortening, margarine and sugar together. Add 1 egg at a time, beating well after each addition. Use electric mixer for this creaming, but beat remainder by hand. Sift flour, salt and baking powder together3 times. Add alternately with milk in 3 parts and beat well after each addition. Add lemon extract. Bake in well-greased and floured tube pan for 1 1/2 hours at 325 degrees. Cool on rack before taking from pan.( should be almost cold before taking from pan)

Apple Cream Coffee Cake

Apple Cream Coffee Cake

1/2 cup walnuts, chopped
2 teaspoons ground cinnamon
1/2 cup granulated sugar
1/2 cup butter or margarine
2 eggs
1 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup commercial sour cream ( buttermilk)
1 medium apple, peeled, cored and sliced
Mix nutmeats with cinnamon and 1/2 cup sugar. Cream shortening until creamy, then add 1 cup sugar, gradually and beat mixture until light and fluffy. Add eggs, one at a time, beating after each addition. Add vanilla and blend well. Sift dry ingredients and add alternately with sour milk.
Spread half of dough in bottom of well greased 9-inch tube pan. Place slices of apples on batter and sprinkle with half of walnut mixture. then put remaining batter in pan and sprinkle with walnut mixture on top. Bake 40 minutes at 350 degrees. or test with cake tester. cool before removing from pan.

Oatmeal Cake
Here is a oatmeal cake recipe.
Oatmeal Cake
Mrs. John Merritt
1 stick margarine
1 1/2 cup boiling water
1 cup quick cooking oatmeal
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/2 cup flour
1teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla
1 cup raisins
1/2 cup nutmeats
1 teaspoon soda
Cut margarine in small pieces in large mixing bowl. Add boiling water and oatmeal. Let stand for 20 minutes. Add brown sugar, white sugar and 2 unbeaten eggs. Mix well and pour into cake pan. Bake 30 minutes at 350 degrees. Ice with broiled frosting.
Broiled Frosting
5 Tablespoons brown sugar, heaping
2 Tablespoons sweet cream or milk
1/2 cup nutmeats
3 Tablespoons butter
1/2 cup coconut
1 teaspoon vanilla
Melt butter, then add other ingredients. Spread on warm cake and put in oven or broiler annd brown.

Grandma`s Warcake
This cake is similar to raisin bread and it is from 1967 Kansas City Kansan`s Silver Spoon Cookbook of that year.
Grandma`s Warcake
Mrs. Tom Selby
2 cups sugar
2 cups boiling water
1 Tablespoon shortening
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1/8 teaspoon nutmeg
1 cup raisins

3 cups flour

1/2 teaspoon soda

2 large eggs
1 can fruit cocktail ( No. 303 size)
1/2 teaspoon vanilla
Mix flour, sugar ,soda and salt. Add eggs, fruit cocktail and vanilla. Bake in loaf pan at 325 degrees until done.
Icing
1/2 cup sugar
3/4 cup evaprated milk
1/4 cup margarine
1/2 cup coconut
Combine first three ingredients and cook 10 minutes. Add coconut.

Banana Nut Cake
This recipe can also be made as cupcakes. I made these back in the summer and didn`t want to heat up the house with the oven ( gas) and I made these in my toaster oven. The recipes that need to baked now are made in their because my gas oven is out of commission right now.....anywhoo here is the recipe.

2 cups flour ,sifted
1 1/4 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1 cup bananas, mashed
1/2 cup nutmeats, coarsely chopped ( walnuts preferred)
1/2 cup shortening or margarine
1 1/2 cups sugar
2 eggs , well beaten
1 teaspoon vanilla
3/4 cup buttermilk
Sift together flour, baking powder, soda and salt. Cream shortening and sugar thoroughly. Add egs and beat well. Add bananas and nutmeats and beat well. Add flour to creamed mixture alternately with milk, a small amount at a time. Beat well after each addition. Add vanilla and bake in 2 layers 25 to 30 minutes at 375 degrees. Ice with favorite icing. Put sliced bananas between layers.

Cola Cake

2 cups flour
2 cups sugar
1 cup cola beverage
1/2 cup butter
1/2 cup shortening ( omitted this, use either butter or shortening, not both)
3 Tablespoons cocoa
2 eggs, well beaten
1 teaspoon vanilla
1 1/2 cup miniature marshmallows
1 teaspoon soda
1/2 cup buttermilk
6 Tablespoons cola beverage
3 Tablespoons cocoa
1/2 cup butter
1 box confectioners sugar ( 3 cups)
1 teaspoon vanilla
1 cup nutmeats
Sift together flour and sugar. Boil cola beverage, 1/2 cup butter or shorteing and 3 Tablespoons cocoa. Add to flour and sugar mixture. Combine eggs, vanilla , marshmallows, soda and buttermilk. mix with flour and sugar mixture and pour into greased 9 x 13 inch pan. Bake 60 minutes at 300 degrees. Five minutes before cake is done, boil 6 Tablespoons cola beverage, 3 Tablespoons cocoa and 1/2 cup butter. Remove from heat and add confectioners sugar , vanilla and nutmeats and spread over hot cake.

Lemon Gelatin Cake
This dessert recipe comes from the Kansan`s Silver Spoon Cookbook of 1967. It is very good and easy to make.
Lemon Gelatin Cake
Mrs. Sherm Price
1 box lemon cake mix
4 eggs
3/4 cup salad oil
1 teaspoon lemon extract
1 package lemon gelatin
1 cup boiling water
Pour boiling water over gelatin and set aside to cool. Mix together cake mix, salad oil, eggs and extract. Pour cooled gelatin in batter. Bake in 13 x 9-inch loaf pan for 35 minutes.
Icing
2 cups confectioners usgar
lemon juice
Combine ingredients until spreading consistency. After taking cake out of oven, prick with meat fork and spread icing over it while cake is hot.
This recipe is like the gelatin recipes of the past.

quick cherry cobbler
This recipe comes from 1967 and is good. I did not measure my butter, I just cut it up and put on. This recipe is like the dump cake.
Quick Fruit Cake

1 1-pound 6-oz can cherry pie filling
1 1-pound 2-oz package white cake mix
1/2 cup butter, thinly sliced
Put pie filling into 9 x 9 x 2-inch baking pan and spread evenly. Sprinkle with dry cake mix evenly over filling. Cover cake mix with butter slices. Bake 1 hour at 350 degrees. Serves 8.

1 cups golden raisins, cooked and chopped( I just put them in like they was)
1 cup strong black coffee, cold
1 teaspoon nutmeg
1teaspoon cinnamon
1 teaspoon cloves
1 teaspoon allspice
Cream sugar nad shortening. Add eggs and cream. Sift flour, soda, and spices together. Add sifted mixture alternately with cold coffee. Stir in raisins, nutmeats and chopped apples. Bake in 9 x 12-inch loaf pan 1 hour at 350 degrees. Loaf pan may be used. Top with favorite icing or sprinkle with chopped nutmeats. One cups of candied fruit may be added before baking.

butternet pound cake
Well i have been so busy as not to put recipes from the Kansan`s silver spoon cookbook of 1967 . I have canning jellies as noted in previous post. I have made 1 batch of plum and 1 batch of peach jelly. so now here is the recipe
Butternut pound cake

2 cups sugar
3 cups flour, sifted
1/2 cup shortening
2 stciks of butter
1 cup milk
4 eggs
2 Tablespoons butter flavoring
Cream shortening and butter until fluffy. Add egg one at a time, beating after each addition. Add flour and milk alternately in 3 parts. Add flavoring. Grease and flour angel tube pan. Start in cold oven and cook 2 hours at 325 degrees. Cool on cake rack.

Cream shortening and butter until fluffy. Add egg one at a time, beating after each addition. Add flour and milk alternately in 3 parts. Add flavoring. Grease and flour angel tube pan. Start in cold oven and cook 2 hours at 325 degrees. Cool on cake rack.

Strawberry Cake
Strawberry Cake
Dorothy Bettnbrock
1 package white cake mix
1 package strawberry gelatin
1/2 cup water
3 Tablespoon flour
4 eggs
1 cup cooking oil
1/2 10-oz box frozen strawberries
Mix all ingredients about 4 minutes, using moderate speed on mixer. Bake in 3 8-inch greased layer cake pans for 30 minutes at 350 degrees.
Frosting
1 box confectioners sugar
1 stick margarine
1/2 box frozen strawberries
Mix all ingredients thoroughly.
Hint. I would crush the berries in food processor or a blender, so their is no big chucks of strawberries or would probably be good using fresh berries as well.Another hint make sure you have all ingredients , I forgot to pick up confectioners sugar ,I though I had enough ..needless to say we are eating this cake without frosting.. it is still good.
