Pineapple Delight
Patricia Miller
1 Tablespoon butter
1/2 cup sugar
1 egg, well beaten
1/2 pint whipped cream
1 ( No. 2 ) can crushed pineapple, drained
2/3 pound vanilla wafers
nutmeats( optional)
Cream butter and sugar; add egg and beat well. Add pineapple, whipped cream and nutmeats, if desired. Roll out wafers finely. Place half of in bottom of pan. Pour in mixture and top with remaining wafers. Chill

24 hour Dessert
24-Hour Dessert
Mrs. Howard H. Miller
1 9 No. 2 ) can pineapple
1 pound miniature marshmallows
juice of 1 lemon
1 pint cream, whipped
1 ( No. 2 . ) can cherries
4 egg yolks, beaten
1 heaping Tablespoon cornstarch
Drain pineapple and cherries; reserve liquid. Mix fruit and marshmallows. add enough fruit juice to lemon juice to make a 1 cup. Add egg yolks and cornstarch to juice and cook until thickened. Fold in whipped cream. Refrigerate 24 hours. Serve 10

Ice Box Dessert
This has a simple name.....
Ice Box Dessert
Mrs. Mabel Rentro
1 1/2 pound vanilla wafers, crushed
3 egg yolks, beaten
1 1/2 cup sugar
1/2 cup butter or margarine, melted
1 large can crushed pineapple, drained
1 cup nutmeats
Beat eggs; add sugar, pineapple and nutmeats. Line a 9 x 13-inch pan with part of rolled wafers ( save enough for top) Add pineapple mixture and sprinkle with wafer crumbs. Refrigerate overnight. Top with whipped cream. Serves 12 to 15.

1 large can crushed pineapple
1/2 cup sugar
1 Tablespoon flour
1 Tablespoon water
1 cup coconut, for top, or nutmeats , or combinations, if desired
Mix pineapple, sugar, flour and water. Sprinkle coconut over top and bake approximately 30 minutes at 375 degrees.

1 ( 1 pound 4 oz) can crushed pineapple, undrained
1 package vanilla pudding mix
1 pint heavy cream
1/2 cup maraschino cherries, chopped
1 pint cream or 2 packages dessert whipped topping , whipped
1 orange chiffon cake
Combine pineapple and vanilla pudding mix and cook over medium heat, stirring constantly until very thick./ Cool and chill. split cake in 3 layers. Whip cream and fold into pineapple mixture. Add cherries and spread generously between layers and on top of cake. refrigerate until ready to serve.

Pineapple-Nut Salad

1 package lemon gelatin
2 packages cream cheese
1 large can crushed pineapple
juice from crushed pineapple
1 small can pimientos
1/2 cup celery, chopped
2/3 cup walnuts, chopped
1/2 pint whipping cream, whipped
1/8 teaspoon salt
Boil pineapple juice and mix with gelatin. When it begins to jell, add crushed pineapple and cheese mashed with pimientos, celery and walnuts. Fold in whipping cream and place in mold. Chill.

1/2 cup margarine or butter, melted
2 eggs, well beaten
1 cup crushed pineapple, drained ( no. 2 can)
1/2 pint cream, whipped

Mandarin Salad
I like Mandarin oranges when they are really sweet. This is the last salad recipe from the 1967 Kansas City Kansan Silver Spoon Cookbook .
Mandarin Salad
Mrs. Howard H. Miller
1 package orange gelatin
1 cup boiling water
1 6-oz can orange juice concentrate
1 11-oz can mandarin oranges, drained
can cold water
2 Tablespoon lemon juice
1 9-oz can crushed pineapple, undrained
Dissolve gelatin in boiling water. Add orange concentrate, water, lemon juice and pineapple. Let stand until mixture thickens. Add oranges and chill until firm. Before serving top with whipped cream. Serves 6.

1/2 package miniature marshmallows
2 beaten eggs
2 Tablespoon cornstarch
5 Tablespoon sugar
1 Tablespoon butter
1 pint whipping cream
Black walnuts
Moisten cornstarch with pineapple juice. Add sugar, eggs and butter. Cook until thicken and cornstarch is thoroughly cooked. Cool and add pineapple, marshmallows and whipped cream. Sprinkle with nutmeats.

Pineapple-Cottage Cheese Salad
My hubby and I had somewhat of a version of this the other day for lunch with out the cheese and the oysters or lettuce.
Pineapple-Cottage cheese salad
Mrs. Joe Glanville JR.
2 to 4 lettuce leaves
4 sliced canned pineapple ( we used crushed)
4 scoops cottage cheese
2 slices American cheese
1 small can smoked oysters
Place a bed of lettuce leaves on salad plate and lay 2 pineapple slices on each one. Using ice cream scoop, place a scoop of cottage cheese on top of pineapple slice. Over each salad , grate 1 slice of American cheese. Add a ring of smoked oysters. Serve immediately. Serves 2.

Apricot Salad
First off....Happy New Year everyone hope everyone had a great 2012 and if not hope 2013 will be better.

2 boxes orange gelatin
2 cups boiling water
1 can crushed pineapple, drained
1 can apricots, drained
juice from fruits
10 quartered marshmallow or 40 miniature marshmallows
Dissolve gelatin in boiling water. Add 1 cup juice, fruit and marshmallows. Pour into large baking dish and chill until firm.
Topping
1 cup juice from fruits
1/2 cup sugar
2 heaping Tablespoons flour
1 egg, beaten
2 Tablespoon margarine
1 package whipped dessert topping, prepared
1/4 cup cheese, grated
Melt margarine. Stir in flour, sugar and egg. Add juice and cook until thicken. When cool fold in prepared dessert topping. Spread over firm gelatin and sprinkle with cheese. Serves 15.

1 small can pimientos, finely cut

1 cup mayonnaise
1 cup nutmeats, finely chopped
1 cup whipped cream, whipped
Combine pineapple, pimientos, and marshmallows. Add cream cheese, mayonnaise and nutmeats. Add whipped cream. mix gently and chill.

2 envelopes unflavored gelatin
1/2 cup cold water
2 Tablespoon lemon juice
1 cup cheddar cheese, shredded
1 cup whipped dessert topping
Soak gelatin in cold water 10 minutes. Heat pineapple and sugar until sugar is dissolved. Add gelatin and lemon juice. When mixture is almost congealed add cheese and whipped cream.

24-hour Salad
Ok, a fruit salad is considered a dessert ...right, at least I think so...fruit is healthy....yummy. This would be good for Christmas dinner!

2 cups seeded white cherries or Tokay grapes
3 cups marshmallows
1 cup nutmeats
2 egg, beaten
juice of 1 lemon, strained
1/4 cup coffee cream
4 Tablespoon sugar
1/2 pint whipping cream
pinch salt
cook eggs, lemon juice, cream, sugar and salt in double boiler until thicken. cool and add whipping cream. Mix dressing with fruit, marshmallow and nutmeats. Refrigerate at least 24 hours.

3/4 cup sugar

6 ripe bananas
Combine eggs, lemon juice and sugar. Cook over low heat until thicken. Pour over marshmallow, pineapple and bananas. Serves 12.

Island Barbecued Ribs
When I make this recipe , I cheated abit making it. i will give first how the recipe call for , then how I fixed it. Again this recipe is from 1968.....my way is alot simpler for those that are busy out there.
Island Barbecued Ribs
Shirley Simpson
2 1/2 to 3 pounds ribs
1 Tablespoon lemon juice
1/2 cup brown sugar
1 ( 15 oz) can crushed pineapple
2 ( 8 oz) cans tomato sauce
Brown ribs in oven. Pour off fat and reduce heat. Sprinkle with lemon juice, brown sugar and pineapple. Pour tomato sauce over ribs and bake. This same sauce can be used over pork roast or backbones.
* I browned my ribs in skiller, then put in crockpot and then sprinkle with lemon juice, brown sugar and pineapple. Then pour tomato sauce over it and let cook for about 6-8 hours. ( I used pork ribs)

Cad`s Angel Pie
I know this recipe calls for crushed graham crackers, but when I made this pie , I bought a graham cracker crust and just rolled a few graham crackers fine to sprinkle on top....oooohhhh , it was so good.

15 graham crackers
1/2 pound marshmallows
1/2 cup milk
1 cup whipping cream, whipped
1 small can crushed pineapple ( I drained this)
Melt marshmallows with milk in top of double boiler. Cool. Whip cream and fold in marshmallow mixture. Fold in crushed pineapple. Roll graham crackers finely and line bottom of 9 or 10-inch glass pie pan with half the graham crackers. Pour filling in and cover with other half of graham crackers. Chill.

Here is a fruit salad that in the name has 5 fruits, but in reality it only has 2.
