Deep Dish Pie

This recipe calls for any pie filling, use whatever.....and is the last recipe from 1967 Silver Spoon Cookbook from the Kansan.

Deep Dish Pie
Mrs, R. E. Rice

1/2 stick margarine
3/4 cup sugar
3/4 cup flour
3/4 cup milk
1 teaspoon baking powder
1/4 teaspoon salt
1 can prepared pie filing mix , any flavor

Melt margarine in baking dish. Mix sugar, flour, salt and baking powder. Add milk. Batter will be thin. Pour batter on margarine in baking dish. DO NOT STIR. Spoon pie filling on top. Try to distribute evenly, but do not spread. Bake 40 minutes at 350 degrees.

Date Torte

I have decided to finish off the rest of  1967 cookbook this week......so next week will start another year of Kansas City Kansan`s Silver Spoon Cookbook.

Date Torte

1 cup dates, finley cut
1 teaspoon soda
1 cup hot water
1/2 cup butter
1 cup sugar
2 eggs
1 3/4 cup flour
1 Tablespoon cocoa
2 Tablespoon sugar
1 package chocolate chips
3/4 cup chopped nutmeats

Combine dates, soda and hot water. Let stand. Cream butter and sugar. Add eggs and date mixture. Sift flour with cocoa. Add to batter. Pour into 9 x 13-inch pan. Sprinkle with 2 Tablespoon sugar, chocolate chips and nutmeats. Bake 30 minutes at 350 degrees.

Spoon Date Pudding

Here is a date recipe..... from 1967.

Spoon Date Pudding

1 cup sugar
1 cup flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 egg
1 cup pecans, chopped
1 cup dates, chopped
2 cups hot water
1 cup brown sugar
2 Tablespoon butter

Combine sugar, flour, baking powder and salt. Add milk, egg, pecans and dates. Mix well and pour into 8 x 12-inch greased pan. Combine hot water, brown sugar and butter. Boil 10 minutes and pour over batter. Bake 45 minutes at 350 degrees. Dip with spoon and top with whipped cream.

Wanda` Chocolate Cake

Wanda`s Chocolate Cake

2 cups flour
2 cups sugar
1/2 cup buttermilk
1 teaspoon soda
1 teaspoon vanilla
1 teaspoon cinnamon
2 eggs, well beaten
1/4 pound margarine
1/2 cup shortening
4 Tablespoon cocoa
1 cup water

Mix flour and sugar. Melt margarine, shortening, cocoa and water. Bring to a boil. Add to flour and sugar. Add all ingredients except eggs and mix well. Add eggs and beat until smooth. Pour into 8 x 8-inch square pan. bake 30 to 45 minutes at 400 degrees. Serve warm with whipped cream.

Chocolate Pie

Who doesn`t like Chocolate!.....

Chocolate Pie

1 3/4 cup sugar
1/4 cup plus 1 Tablespoon cocoa
3 Tablespoon flour
2 1/2 Tablespoon cornstarch
1/4 teaspoon salt
2 egg yolks
1 3/4 cups milk
1 pastry shell

Mix dry ingredients in top of double boiler. Add milk. Cook, stirring constantly, until mixture starts to thicken. Beat egg yolks and add small amount of chocolate mixture. Add egg mixture to remainder of chocolate mixture in double boiler. Cook until thickened. Pour into baked pie shell. Top with meringue or whipped cream.

interesting fact about soup....

The word "restaurant" originally referred to soup rather than eating to an establishment. In the 18th century, Frenchman Boulinger, who sold soups to the public called them " magical restoratives" and the places where he sold soups came to be known as restaurants.

Blackberry Cake

With all those blackberries out there , thought it would be a good time to post this.....the blackberries I pick are done for this year.

Blackberry Cake

2 cup sugar
3/4 cup shortening
3 to 5 eggs
3 cup flour
1 teaspoon cinnamon
1/2 cup sour milk
1 cup blackberries, partly drained
1/2 teaspoon black pepper
1 teaspoon cloves
1 teaspoon allspice
1 teaspoon soda
1/4 cup hot water

Mix soda and hot water. Cream sugar, eggs and shortening. Sift flour, cinnamon, black pepper, cloves, allspice and salt . Add to creamed mixture. Add sour milk, mix well. Add soda and blackberries. Bake in 9 x 13-inch pan 35 minutes at 375 degrees

Golden Drops

Here is a cookie recipe using apricots

Golden Drops

1/2 cup dried apricots, finely cut
1 cup canned crushed pineapple with syrup
1/4 cup butter
1 cup brown sugar
2 eggs
1/2 cup rolled oats
1/2 cup coconut
1 Tablespoon orange rind, grated
2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon soda
1 teaspoon cinnamon

Combine apricots and pineapple. let stand several hours. Blend in butter and sugar. Add eggs and beat well. Stir in oatmeal, coconut, orange rind and mixed fruit. Stir in dry ingredients and combine well. Drop from a teaspoon on greased baking sheets. Bake about 12 minutes at 350 degrees.

Nellie`s Cherry Pie

Here is a recipe for cherry pie from 1967.

Nellie`s Cherry Pie

1 1/2 cups all-purpose flour
1 1/2 Tablespoons sugar
3/4 teaspoon salt
1/2 cup plus 1 Tablespoon shortening
1/2 cup ice water

Blend shortening into dry ingredients until size of peas. Mix in ice water  until blended. Roll out 1/4-inch thick on lightly floured board.

Filling

2 boxes frozen cherries (10-oz)
1 cup sugar
2 Tablespoons powdered tapioca or cornstarch
3/4 teaspoon red food coloring
1/4 teaspoon almond flavoring

Bring cherries to a boil. Stir in sugar and thickening together and gently pour into simmering cherries. Stir constantly. When transparent, remove from heat. Stir in coloring and flavoring. Pour into unbaked pie shell. Dampen outer edges of shell with milk or cream. Top with pastry. Flute edges. Brush top with with cream or melted butter. Lightly sprinkle with sugar. Bake 35 to 40 minutes at 425 minutes.

White fudge with Black Walnuts

Black Walnut season is just around the corner here in the Ozarks.


White Fudge with Black Walnuts

3 cups sugar
1/2 cup white corn syrup
1 cup half and half
1 teaspoon vanilla
1 rounded Tablespoon butter
1 cup Black walnuts

Cook sugar, corn syrup and half and half to soft ball stage. Remove from heat and add vanilla, butter and nutmeats. Beat until creamy and begins to set. Pour into buttered pan. Cool and cut.

Grandmother`s special loaf cake

Here is another recipe from 1967 desserts.

Grandmother`s Special Loaf Cake

2 cups sugar
1 cup butter
3 eggs
1cup milk
3 1/2 cup cake flour
1/2 teaspoon salt
1 1/4 teaspoon baking powder
1/4 teaspoon cream of tartar
1/4 teaspoon mace
1 teaspoon vanilla
1/4 teaspoon lemon extract

Cream butter and sugar until light and fluffy. Add eggs, unbeaten and one at a time. Sift flour and measure, but reserve 1 cup to be sifted with dry ingredients. Beginning with flour, alternate it in thirds with milk. End with reserved flour. Keep batter smooth. Add flavorings last. Bake in well-greased and floured pan at 350 degrees.

Banana Apple Betty

Here is a recipe from 1967 to take care of the those sells on bananas besides eating them and making banana bread or pudding.

Banana Apple Betty

2 tart apples, pared and cored
3 firm bananas
3/4 cup sugar
3 Tablespoons butter, melted
1/2 teaspoon cinnamon
1/4 teaspoon salt
3 cups soft bread crumbs

Slice apples and cut bananas crosswise into 1/2 -inch pieces. Combine fruit, sugar, cinnamon and salt. Mix bread crumbs with butter. Place alternate layers of crumbs and fruit into well-buttered baking dish. Use crumbs on top and bottom layers. Cover and bake 40 minutes at 375 degrees. Uncover and continue baking 5 minutes longer. Serve hot with cream.

Permelia`s Rhubarb Shortcake

Here is a rhubarb shortcake...we are still in 1967.

Permelia`s Rhubarb Shortcake

4 cups rhubarb, chopped
 2 cups sugar
1/4 teaspoon salt
1/4 cup water
1 layer shortcake or plain cake
whipped cream or whipped dessert topping
bananas, sliced

Combine rhubarb, sugar, salt and water. Simmer over low heat until tender. Cool. Slice cake crosswise. Alternate a layer of cake, rhubarb sauce, sliced bananas and whipped cream.

pixie marshmallow Delight

Pixie`s Marshmallow Delight

1 box graham crackers
marshmallows
chocolate bars

Place graham crackers on cookie sheet. Put 1 square of chocolate on each cracker. Top with each piece of chocolate with marshmallow. Place in warm oven just long enough to melt marshmallow and chocolate. Top with another graham cracker to make a sandwich.

old-fashioned Applesauce cake

 I know it`s not apple time but here is a recipe for that applesauce

Old-fashioned Applesauce Cake

1 cup fat ( any cooking oil or shortening)
1 cup light brown sugar
1 cup white sugar
4 eggs
2 cup applesauce
4 cups all-purpose flour
1/2 cup black currents
1/2 cup seeded raisins
1/4 cup black walnuts
4 rounded teaspoons continuous action baking powder
1/2 teaspoon vanilla
6 drops lemon oil
1/2 teaspoon salt

do not over mix. Mix by hand or in electric mixer, shortening and sugar until well blended, but not creamed. Add eggs and mix only until blended. Measure flour and add baking powder. Sift only salt to flour and baking powder mixture. Alternately add flour mixture and applesauce, using flour mixture in 3 amounts. Add raisins and currents, then nutmeats. Add flavorings and mix slightly. Bake in stemed cake pan that has been lightly greased, but not floured at 325 degrees.

pineapple Dessert

Sorry I missed yesterday recipe. but here is todays

Pineapple Dessert

1/2 pound vanilla wafers, crushed
1 1/2 pound confectioners sugar
1/2 cup margarine or butter, melted
2 eggs, well beaten
1 cup crushed pineapple, drained ( no. 2 can)
1/2 pint cream, whipped
1/2 cup nutmeats, broken optional

Combine vanilla wafers , sugar and butter or margarine. Add eggs and mix. Place layer of 1/2 crumbs in 8 x 4-inch pan. Spread layer of pineapple, then layer of whipped cream. Sprinkle with nutmeats over and cover with whipped cream. Refrigerate 24 hours before serving.

Chcolate Cookies

I love chocolate......

Chocolate Cookies

1 cup brown sugar
1 cup butter, melted
1 1/.4 cup sifted flour
1/2 teaspoon soda
1/2 cup milk
1 egg
1 1/2 squares unsweetened chocolate, melted
1 cup nutmeats

Mix brown sugar and melted butter together. Add sifted flour, soda, beaten egg, milk and chocolate and nutmeats. Bake on greased and floured cookie sheets 9 to 10 minutes at 350 degrees.

Frosting

1 square unsweetened chocolate
2 Tablespoons hot water
3 Tablespoons butter
Confectioners sugar

Combine chocolate , hot water and butter. Add enough confectioners sugar to spread easily.

Pecan delight




Pecan Delight

1/2 pound butter
1 1/2 pounds confectioners sugar
6 egg yolks
1 cup pecans, broken
6 egg whites
1/2 teaspoon vanilla
1/2 teaspoon almond flavoring
4 1/2 dozen vanilla wafers

Cream butter and confectioners sugar. Add egg yolks, one at a time and beat after each addition. Add broken pecans. Add egg whites, stiffly beaten. Add flavorings. Crush wafers. Put 1/2 in bottom of pan. Fill with pecan mixture and top with crushed vanilla wafers. Let stand 24 hours. Serve with whipped cream or whipped dessert topping/

Cherry Dessert

Cherry Dessert

1 graham cracker crust
1 package whipped dessert topping
1 8-oz package cream cheese
1 can cherry pie filling

Reserve 3 Tablespoons graham cracker crumbs for topping. Mix whipped dessert topping as directed. add cream cheese and beat until smooth. Put in crust and top with pie filling. Sprinkle crumbs over cherries. Chill 2 to 3 hours before serving.
