Date Roll

25 graham crackers, rolled fine
1 cup dates, chopped
1 cup pecans, chopped
1 cup small marshmallows

Mix with a small amount of milk or cream to the consistency of biscuit dough. Roll out on bread board, sprinkle with confectioners sugar and roll up like jelly roll. Make the day before it is used. Slice and top with whipped cream. Serves 10 to 12.

Date Roll Candy

Here is the dessert for the week...I know it really isn`t candy making time of the year....but really cant you make candy any time of the year!

1 1/2 cup brown sugar
1 1/2 cup white sugar
1 cup milk
1 Tablespoon butter
1 small box of dates
1 cup nutmeats

Mix sugars, milk, and butter and boil slowly to soft ball stage in cold water. Take off heat and beat until stiff and creamy. Add dates and nutmeats and pour into wet towel and roll.

1/2 cup butter
 1 ( 3 oz) package cream cheese
1 cup flour, sifted
1/4 teaspoon salt
1/4 cup coconut
1/4 cup sugar
1 cup pitted dates , chopped
1/4 cup water
1 teaspoon grated orange rind
1/2 cup chopped walnuts
1/2 cup powdered sugar

Blend softened butter with cream cheese. Beat in electric mixer until light. work in flour and salt with fork until smooth. Roll in waxed paper and chill

FILLING

Combine dates , sugar, and water in small sauce pan. Stir over medium heat 3 to 5 minutes until thick. Add orange rind , nutmeats and coconut. Cool.
Divide dough in half and roll then on floured board. Cut in 2 1/2 -inch rounds. Place teaspoonful of filling on each round. Fold over and crimp edges together with fork. Prick tops. Bake 15 minutes at 375 degrees. Sprinkle with powdered sugar.

Marshmallow Date Roll

Here is the second dessert recipe for the day.....

Marshmallow Date Roll

2 cup dates, chopped
1/2 pound graham cracker, rolled fine
1/2 pound marshmallow, cut in pieces
1 cup whipping cream, whipped
1 teaspoon vanilla
1/4 cup maraschino cherries, chopped
1/2 cup walnuts, chopped

Fold in vanilla, marshmallow, nutmeats and dates into whipped cream. Reserve 3/4 cup graham cracker crumbs. Fold in remaining into mixture. Shape into a roll. Coat with reserves crumbs. Wrap in waxed paper. Chill several hours. Cut into slices.

Food For the Gods

Ok, I know their is only one God, but this is the name of the recipe.......

Food For the Gods

9 heaping Tablespoons cracker crums
2 cups sugar
1 heaping teaspoon baking powder
1 cup nutmeats, chopped
1/2 pound dates, chopped
6 eggs, separated

Mix cracker crumbs, sugar, baking powder, nutmeats and dates. Add beaten egg yolks. Mix well intil all is a crumbly mass. Beat egg whites very stiff. Fold in egg whites thoroughly. Bake in 9 x 13 x 2-inch cake pan for 3/4 hour at 325 degrees. Cool. Serve with whipped cream. Will keep a week if wraped in wax paper.

Date Nut Dessert

Here is a recipe using Dates........

Date Nut Dessert

3 egg whites
1 cup sugar
1 teaspoon vanilla
14 soda crackers, crushed
1/2 cup nutmeats, finely chopped
12 dates, finely chopped

Beat egg whites very stiff and continue beating while adding sugar and vanilla. Then add soda crackers, dates and nutmeats. Bake 20 minutes at 325 degrees. Serve with whipped cream. Serves6.

Butter Crunch Confecection Cookies

I admit I have not tried these, since I cannot make fudge or candy very good, I always have trouble with the different stages of cooking. of course this recipe has dates, and I don`t much like dates.

Butter Crunch Confection Cookies

1 package ( 8 oz) dates, chopped
1/2 cup water
Butter crunch ( recipe below)
1 can ( 4oz) coconut, toasted

Cook dates in water until thick. cool, ( Dates and water may be mixed in blender until thick)
Fold in 2 1/4 cups butter crunch and toasted coconut. Roll into cyclinder, 2 inches wide. Roll in rest of butter crunch to coat outside. Refrigerate several hours or overnight. Slice 1/4-inch thick for cookies.Makes 2 or 3 dozen.

Butter Crunch

1/2 cup butter or margarine
1/4 cup brown sugar, packed
1 cup all purpose flour
1/2 cup chopped pecans or walnuts

Heat oven to 400 degrees. Mix all ingredients by hand. Spread in ungreased 13 x 9 1/2 x 2-inch pan. Bake 15 minutes. Take from oven and stir with spoon. Cool. Makes 2 1/2 cups.


Ok, these wouldn`t be tht bad except for the dates.

Date Bars

Ok, here is a recipe using Dates...I really don`t care for Dates to eat, so this is for all those date lovers out there in blog land..

1 egg
1/2 cup sugar
1/2 cup butter or margarine, melted
1 cup dates, chopped and pitted
1/4 cup walnuts, chopped
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Beat eggs. Add sugar, and melted butter or margarine. Mix in dates and walnuts. Sift to combine flour, salt and baking powder and add to first mixture. Spread in greased pan. Bake 30 minutes at 350 degrees. Cool, cut into bars. Roll in powdered sugar.
