Grandma`s baking powder biscuits

This is not my grandmother`s recipe. ....She did`t use a recipe, neither of them did, at least I don`t remember them using a recipe, any who here is the recipe from the 1967 Kansan Silver Spoon Cookbook.

Grandma`s Baking powder biscuits
Mrs. Tom Selby

2 cups flour, sifted
1/2 teaspoon salt
1 egg, unbeaten
4 teaspoons baking powder
2 Tablespoons sugar ( optional)
2/3 cup milk
1/2 teaspoon cream of tartar
1/2 cup shortening

Sift dry ingredients into a bowl. Add shortening and blend well. Pour milk in slowly and add egg. Stir until stiff. Turn dough onto floured board and knead 5 times. Roll out to 1/2-inch thick and cut using biscuit cutter. Bake 12 to 15 minutes at 450 degrees. Makes 12 to 14 biscuits.


* note , if don`t have biscuit cutter, can use a glass.

sweetenend condensed milk dressing

This is very good...of course it has to be with Sweetened Condensed milk in it ....and rich as well.

Sweetened Condensed Milk Dressing for fruit salad

1/2 teaspoon salt
1 teaspoon dry mustard
2 eggs
1/2 cup butter, melted
1 can sweetened condensed milk
3/4 cup white vinegar

Mix well and keep in cool place.

Onion Cheese Pie

This is a recipe from the Kansan`s Silver Spoon Cookbook of 1967, I have not tried this.

Onion Cheese Pie

1 1/3 cup water
1 teaspoon salt
2/3 cup white rice, uncooked
1/4 teaspoon curry powder
1/2 cup butter, melted
1 1/2 cup cracker crumbs
3 Tablespoon butter
2 cups onions, thinly sliced
1 cup milk
2 egg, beaten
1 1/2 cups sharp cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon curry powder
1/8 teaspoon black pepper

Place water, salt and rice in 2-quart saucepan. Bring to a boil. Cover , and simmer 14 minutes. turn off heat and leave covered until ready to use. Add curry powder to melted butter. Pour over cracker crumbs and mix well. Press crumbs over bottom and sides of greased 10-inch pie pan. Melt 3 Tablespoons butter in skiller and cook onions 5 minutes. Drain and place in lined pie pan. Combine rice with remaining ingredients. Mix well and pour over onions. Bake 45 minutes or until knife inserted in the center comes out clean at 325 degrees. Allow to stand a few minutes before cutting into wedges. Serves 6 to 8.

Pie Crust

This is a recipe for a pie crust from Silver Spoon Cookbook by The Kansan newspaper in 1967. i do not recommend using a syringe as the recipe calls for, use a spoon, as this is what I used.

Pie Crust

1 cup flour
1/4 teaspoon salt
5 1/2 Tablespoons shortening
3 Tablespoons ice water

Cut shortening into flour with paring knife. Squirt ice water into mixture after shortening has been cut into flour the size of small peas. Squirt ice water with a syringe and needle 5cc size. Roll crust out lightly. Bake until golden brown at 425 degrees.

As I stated before do not use a syringe and to belive this was in the paper... a total shock!

Applesauce Rolls

Applesauce Rolls

2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 heaping Tablespoon shortening
3/4 cup milk
1 cup applesauce, thick, strained
2/3 cup brown sugar
cinnamon
margarine

Sift together flour, baking powder and salt. Using a fork, mix in shortening. Slowly add milk to make a soft dough. Spoon dough onto floured board. Roll or pat into 4-inch thick retangle. Spread with applesauce. Sprinkle with brown sugar. Dot with margarine and sprinkle with cinnamon. Roll like jelly roll. Turn in ends and cut roll in half with sharp knife. Cut each half in six slices.
Place each slice in greased muffin tin and sprinkle each with more sugar and cinnamon. Top each with a dot of margarine. Bake 20 minutes at 425 degrees.

Roasted Corn

Ok, I know it is really not the time for getting the grill ready, but you know that time is around the corner....or grill while it cold outside.....a unique idea.
This recipe was from an Advertisement that was in the Silver Spoon Cookbook of 1967 that Kansan Newspaper put out way back when. I don`t remember what it was advertizing, but anywho here is the recipe;

Foil Roasted Corn on the cob

4 corn on the cob
1/4 cup soft butter
salt
cracked pepper
celery salt
parsley flakes
1/2 cup grated American cheese

Wash and dehusk corn. Spread each ear with 1 Tablespoon soft butter. Then sprinkle each with a small amount of each seasonings. Lay each ear on an 8 x 8 inch piece of aluminum foil. Sprinkle each with 2 Tablespoons grated American cheese before wrapping securely. Lay corn on grid of patio grill. Roast 20 to 30 minutes depending on size. Turn several times.
4 servings

Alternate suggestions for seasoned butter for roasted corn
* Try 1 teaspoon anise seed with 2 Tablespoon butter, salt and cracked pepper.
* Try 1 Tablespoons chili sauce with 2 Tablespoon butter, salt and pepper
* Try 1 Tablespoon dill weed with 2 Tablespoons butter, salt and pepper

Lemon Curd Tarts

This recipe will finish the Appetizers and soup section of the 1967 Silver Spoon Cookbook by readers of the Kansan newspaper of that submitted recipes to them. They , far as I know do not put out this paper, or rather book. You may find the recipes here, at least for the ones I do have.


Lemon Curd Tarts
Irene Brown

grated rind of 2 lemons
1/2 cup lemon juice
2 cups sugar
1 cup butter
4 eggs, well beaten

Combine lemon rind and juice and sugar. Add butter and heat in double boiler until butter is melted. Mix eggs, cooking and stirring constantly until mixture piles on top of self, about 16 minutes.

Hot Ziggities

Yea, we are almost done with the recipes from appetizers and soups from 1967 Kansan`s Silver Spoon cookbook and all that will be left is main dishes, salads, breads and ooh the desserts....yummmy. Just one more recipe to go after this one.

This recipe calls for water chestnuts, yum.

Hot Ziggities
Mrs. H. L. Spencer

1 can water chestnuts, drained
1 cup soy sauce
bacon strips

Soak water chestnuts in soy sauce for 30 minutes. Remove water chestnuts and wrap each in bacon. Secure with toothpick. Broil until bacon is crisp. Serve warm

Cabbage Burger Casserole

I am not a big fan of cooked cabbage, so I have not tried this one. It is from the Kansan`s Silver Spoon Cookbook of 1967.

Cabbage Burger Casserole

1/2 small cabbage
1/3 cup onion
1/2 cup rice, uncooked
3/4 pound ground beef
1 teaspoon salt
1 cup tomato sauce
1 1/2 cups water
2 Tablespoons oil

Brown rice and onion in oil. Add meat and cook. cut up cabbage. Put 1/2 in bottom of baking dish. Put meat mixture.Add salt. Warm sauce. Add rest of cabbage. Pour sacue over all. Cover and bake 1 hour at 400 degrees.

Banana Nut Cake

This recipe can also be made as cupcakes. I made these back in the summer and didn`t want to heat up the house with the oven ( gas) and I made these in my toaster oven. The recipes that need to baked now are made in their because my gas oven is out of commission right now.....anywhoo here is the recipe.

Banana Nut Cake

2 cups flour ,sifted
1 1/4 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1 cup bananas, mashed
1/2 cup nutmeats, coarsely chopped ( walnuts preferred)
1/2 cup shortening or margarine
1 1/2 cups sugar
2 eggs , well beaten
1 teaspoon vanilla
3/4 cup buttermilk

Sift together flour, baking powder, soda and salt. Cream shortening and sugar thoroughly. Add egs and beat well. Add bananas and nutmeats and beat well. Add flour to creamed mixture alternately with milk, a small amount at a time. Beat well after each addition. Add vanilla and bake in 2 layers 25 to 30 minutes at 375 degrees. Ice with favorite icing. Put sliced bananas between layers.

Rich Sweet Dough

This dough also would for cinnamon rolls....yummy

Rich Sweet Dough

3/4 cup milk
1/2 cup sugar
2 teaspoon salt
1/2 cup margarine
1/2 cup warm water
2 packages or cakes yeast, active or dry
1 egg
4 cups flour, sifted

Scald milk. Stir in sugar, salt and margarine. Cool to lukewarm. Measure warm water into large warm bowl. Sprinkle or crumble in yeast. Stir until dissolved. Stir in lukewarm milk mixture, egg and half the flour. Beat until smooth. Stir in remaining flour to make a stiff batter. Cover tightly with waxed paper or aluminum foil. Refrigerate dough at least 2 hours. Dough may be kept in refrigerator 3 days. To use, cut off amount needed and shape as desired.

For braided coffee cake, Divide dough in half. Roll each half into oblong about 16 inchs by 8 inches in size. For a filling use a 1-pound 6-oz can prepared pie filling. Spread half the filling down center third of each oblong. Cut 15 splits in lenth along each side of filling, making strips about 1-inch wide.
Fold strips at an angle across filling, alternateing from side to side. Place on greased baking sheet. If desired form a ring. Place one in the other and seal thoroughly and firmly. Cover and let rise in warm place until double in bulk, about 1 hour. Bake about 35 minutes at 350 degrees

Cranberry Salad

here is another great cranberry salad recipe from 1967 Kansan`s Silver Spoon Cookbook


Cranberry Salad
Mrs. Herbert Lipp

1 pound cranberries
3/4 cup small marshmallows
1 cup sugar
1 pint whipping cream
1 cup crushed pineapple, drained

Grind cranberries. Add sugar and let stand 2 hours in small bowl. Whip cream and add marshmallows. Let stand 2 hours. Combine mixtures and add pineapple. Let stand several hours in refrigerator before serving.

Country Club Vegetables Beef Soup

This is good on a cold winter`s night, like tonight, or maybe last here in the ozarks when it got down to 1 degree.



Country Club Vegetables Beef soup

6 cups water
1 large bay leaf
3 Tablespoons beef base ( can use a beef bouillon cube)
1 teaspoon celery salt
1/2 teaspoon garlic salt
1 teaspoon black pepper
1 cup celery, chopped
1/2 cup onion, chopped ( Or did what I did and use a whole one)
1/2 cup green pepper, chopped
2 cups raw potatoes, chopped
2 pounds chopped stew meat
1/4 cup alphabet spaghetti ( or use any pasta like Zita)
1 No. 303 can diced carrots ( I used a frozen package of peas and carrots)
1 No. 303 can French Style green beans ( regular cut is just fine)
1 No. 303 can corn
1 No. 303 can whole tomatoes ( or can use diced tomatoes with basil, garlic and oregano....makes it abit spicer)
1/2 cup catsup
2 Tablespoon worcestershire sauce
1/3 teaspoon tabasco sauce

Combine water, meat and seasonings, raw vegetables and spaghetti. Bring to a boil and simmer 45 minutes. Stir in canned vegetables including juice and liquid seasonings. Simmer at least 30 minutes before serving.

Beef Stroganoff

Here is a simple recipe.

Beef Stroganoff

2 pounds round steak
1 can bouillon soup
1 cup water
1 Tablespoons cornstartch
1 teaspoon salt
1 Tablespoon soy sauce
1 can mushroom soup

Remove fat from steak. Cut into 2-inch squares. Flour lightly and brown. Add can of bouillon soup and water mixed with cornstartch. Add salt and soy sauce. cover and simmer at least 1 1/2 hours or until fork tender. Add mushroom soup and stir until creamy. Serve over mashed potatoes or noodles

Cola Cake

Yummy....it`s all that needs to be said.

2 cups flour
2 cups sugar
1 cup cola beverage
1/2 cup butter
1/2 cup shortening ( omitted this, use either butter or shortening, not both)
3 Tablespoons cocoa
2 eggs, well beaten
1 teaspoon vanilla
1 1/2 cup miniature marshmallows
1 teaspoon soda
1/2 cup buttermilk
6 Tablespoons cola beverage
3 Tablespoons cocoa
1/2 cup butter
1 box confectioners sugar ( 3 cups)
1 teaspoon vanilla
1 cup nutmeats

Sift together flour and sugar. Boil cola beverage, 1/2 cup butter or shorteing and 3 Tablespoons cocoa. Add to flour and sugar mixture. Combine eggs, vanilla , marshmallows, soda and buttermilk. mix with flour and sugar mixture and pour into greased 9 x 13 inch pan. Bake 60 minutes at 300 degrees. Five minutes before cake is done, boil 6 Tablespoons cola beverage, 3 Tablespoons cocoa and 1/2 cup butter. Remove from heat and add confectioners sugar , vanilla and nutmeats and spread over hot cake.

Banana Tea Bread

Their is alot of banana bread recipes in the Silver Spoon Cookbook of 1967. Of course banana bread is always good,......yummy

Banana Tea Bread

1 3/4 cup flour, sifted
2 teaspoons baking powder
1/4 teaspoon soda
1/2 teaspoon salt
1/2 cup shortening
3/4 cup sugar
2 eggs, beaten
1 cup bananas, mashed

Sift flour, baking powder, soda and salt. Beat shortening until creamy. Add sugar gradually. Beat until light and creamy. Add eggs and flour. Mix with banana. Bake in 8 1/2 x 4 1/2 x 3-inch pan. Bake 1 hour and 10 minutes at 350 degrees.


Note if it tests done it is done, I made mine in a toaster oven , oven times may vary.

Crab Louie

Crab meat is hard to find , at least fresh , so I have not tried this as of yet .


Crab Louie

lettuce cups
3 cups crab meat
3 eggs, hard boiled and sliced
chopped chives
1/2 cup french dressing
1/2 cup chili sauce
2 Tablespoons mayonnaise
salt and pepper to taste

Arrange lettuce leaves around the inside of a salad bowl. Place a bed of shredded lettuce in bottom of bowl. Place crab meat on top of lettuce, spreading evenly. Spread egg slices on top of crab meat and sprinkle with chives. Combine remaining ingredients. Mix well and pour over top of crab meat. Serves 6.

Beef and Cheese Balls

These would be great for the superbowl party coming up in February or any party for that matter.


Beef and Cheese Balls

1 3-oz package cream cheese
small amount cream
salt and pepper
garlic powder to taste
1 package dried beef

Combine cream cheese , cream, salt, pepper and garlic powder. Shape into balls. Mince dried beef and rool cheese balls in it.

Deep Dish Salmon Pie

I have not tried this as I just like salmon patties, don`t know about salmon pie.


Deep Dish Salmon Pie

Crust

1 1/2 cups flour
3 teaspoons baking powder
3 Tablespoons shortening
1/2 teaspoon salt
1/2 cup milk and water , mixed
3/4 cup cheese, grated
1 pimiento

Sift flour, baking powder and salt together. Cut in shortening. Add liquid to form soft dough. Roll out 8 x 12-inchs. Sprinkle with cheese and pimiento. Roll like jelly roll. cut in 8 slices. Flatten slightly. Place on top of creamed mixture.

Creamed salmon

6 Tablespoons flour
3 Tablespoons butter
2 small onion
1 green pepper
1 1/2 teaspoon salt
3 cups milk
1 tall can salmon
1 Tablespoon lemon juice

Cook chopped onion and pepper in butter until tender. Blend in flour and salt. Add milk slowly. Cook until sauce thickens. Add salmon. And lemon juice. Pour into greased casserole. Top with cheese roll. Bake 30 minutes at 450 degrees.

Pear Blush Crunch

This dessert is yummy to say the least.....

5 cups fresh pears, sliced
1/4 cup water
1 Tablespoon lemon juice
1/2 cup sugar
1/2 cup flour, sifted
1/8 teaspoon salt
1/4 cup butter or margarine
1/4 cup cinnamon candies ( red Hots is what I used)

Peel, core and slice pears into a greased 1 quart casserole. Pour water and lemon juice over them. Mix sugar, flour, and salt and cut in butter or margarine. Mix cinnamon candies. Sprinkle the crumb-candy mixture over pears. Bake 40 minutes at 375 degrees. Serves 6.

Butter Semmeln

This is a very good bread.

Butter Semmeln

1/2 cake yeast
1/4 cup warm water
1/2 cup mashed potatoes
1 cup granulated sugar
1/2 cup butter
2 cups milk, scalded
2 eggs, beaten
1/2 teaspoon salt
6 cups flour
2 Tablespoons butter, melted
1/4 cup confectioners sugar

Start batter in early evening. Soften yeast in water. Add mashed potatoes and 1/2 cup sugar. Let stand in warm place for 4 hours. Add butter to scalded milk and cool to lukewarm. add eggs, remaining sugar and salt and combine with yeast mixture. Sift in flour and knead thoroughly. Cover and let rise until morning. Roll to about1/4 -inch thick, brush with melted butter and cut into 2-inch squares. Turn up corners toward center. Place about 2 inches apart on greased baking sheet and let rise until light. Bake 20 minutes at 450 degrees. Remove from oven, brush with melted butter and sprinkle with confectioners sugar. Makes about 30 rolls.


Remember this was back in the year 1967.

Whole Meal Salad

This salad recipe is from the 1967 Kansan`s Silver Spoon Cookbook and was a not award winner, I think it should have won something as it is really good.

Whole Meal Salad

1 head lettuce
2 ripe tomatoes
2 stalks celery
1 small onion
6 green olives
radishes
green pepper
1 can tuna
3 slices bologna
3 slices cheese
2 cups corn chips or cheese crackers
leftover meats, chopped ( I used chicken)

Chop all green vegetables into desired size and mix. Drain tuna. Add tuna, bologna, cheese, corn chips and leftover meats. Serve with an assotment of salad dressings and crackers and rolls.




Then Enjoy!!!!!!!
