This is a recipe from the Kansan`s Silver Spoon Cookbook of 1967, I have not tried this.
Onion Cheese Pie
Mrs. Lucille Allison
1 1/3 cup water
1 teaspoon salt
2/3 cup white rice, uncooked
1/4 teaspoon curry powder
1/2 cup butter, melted
1 1/2 cup cracker crumbs
3 Tablespoon butter
2 cups onions, thinly sliced
1 cup milk
2 egg, beaten
1 1/2 cups sharp cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon curry powder
1/8 teaspoon black pepper
Place water, salt and rice in 2-quart saucepan. Bring to a boil. Cover , and simmer 14 minutes. turn off heat and leave covered until ready to use. Add curry powder to melted butter. Pour over cracker crumbs and mix well. Press crumbs over bottom and sides of greased 10-inch pie pan. Melt 3 Tablespoons butter in skiller and cook onions 5 minutes. Drain and place in lined pie pan. Combine rice with remaining ingredients. Mix well and pour over onions. Bake 45 minutes or until knife inserted in the center comes out clean at 325 degrees. Allow to stand a few minutes before cutting into wedges. Serves 6 to 8.
