Deep Dish Salmon Pie

I have not tried this as I just like salmon patties, don`t know about salmon pie.


Deep Dish Salmon Pie

Crust

1 1/2 cups flour
3 teaspoons baking powder
3 Tablespoons shortening
1/2 teaspoon salt
1/2 cup milk and water , mixed
3/4 cup cheese, grated
1 pimiento

Sift flour, baking powder and salt together. Cut in shortening. Add liquid to form soft dough. Roll out 8 x 12-inchs. Sprinkle with cheese and pimiento. Roll like jelly roll. cut in 8 slices. Flatten slightly. Place on top of creamed mixture.

Creamed salmon

6 Tablespoons flour
3 Tablespoons butter
2 small onion
1 green pepper
1 1/2 teaspoon salt
3 cups milk
1 tall can salmon
1 Tablespoon lemon juice

Cook chopped onion and pepper in butter until tender. Blend in flour and salt. Add milk slowly. Cook until sauce thickens. Add salmon. And lemon juice. Pour into greased casserole. Top with cheese roll. Bake 30 minutes at 450 degrees.
