Spice Cookies

These would be good to keep on hand for those snacks after school.

Spice Cookies

1/4 cup light syrup
1/4 cup dark syrup
1 Tablespoon molasses
1/4 cup sugar
3 Tablespoon butter
1 Tablespoon milk
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 egg
3/4 cup raisins, cooked

Combine syrups and molasses and heat to boiling point. Add sugar, butter and milk. Sift together flour, soda, salt and nutmeg, cinnamon, and allspice. Add to mixture. add egg and raisin. Mix well. Roll each teaspoon of dough in sugar and place on buttered cookie sheet. Bake 15 minutes at 350 degrees.

Brownie Mint Torte

Brownie Mint torte

3 egg whites
1/8 teaspoon salt
3/4 cup sugar
1/2 teaspoon vanilla
3/4 cup chocolate wafer crumbs, crunched
1/2 cup pecans, chopped
1 cup whipping cream, whipped
1/4 cup crushed peppermint stick candy
1 square ( 1-oz) unsweetened chocolate, shaved

Beat egg whites and salt until soft peaks form. Add sugar, 1 Tablespoons at a time, beating after each addition, until glossy. Beat in vanilla. Fold in crumbs and nutmeats. Spread in buttered 9-inch pie plate. Pile meringue high at sides. Bake 35 minutes at 325 degrees. Cool. Whip cream until stiff. Fold in crushed peppermint candy. Pile mixture into baked pie shell. Chill at least 3 hours. Trim with curls of shaved chocolate. Serves 6.

This would be around the holidays, when peppermint is everywhere in the stores.

Banana Tea Bread

I love Banana bread...this could be dessert as well.

1 3/4 cup flour,sifted
2 teaspoon baking powder
1.\/4 teaspoon soda
2 egg, well beaten
1 /2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
1 cup bananas, mashed ( 2 or 3)

Sift flour, baking powder, salt together. Beat shortening un till creamy. add sugar gradually and continue beating until light and fluffy. add eggs and beat well. add flour mixture alternately with bananas. Beat well after each addition until smooth. Pour into well greased bread pan. Bake 1 hour and 10 minutes at 350 degrees.

Cream cheese Salad

Here is a cream cheese recipe that is not a dessert , or it could be a dessert.

Cream Cheese Salad

1 cup red cinnamon candies
1 cup boiling water
1 package lemon gelatin
2 1/2 cups applesauce
2  8-oz packages cream cheese
1/2 cup black walnuts, chopped
 pinch salt

Pour boiling water over cinnamon candies. Let dissolve. Add gelatin and applesauce. Pour 1/2 mixture into 7 x 11 x 2-inch dish. Cool until congealed. add enough cream to cheese to make a spreading consistency. Add nutmeats and salt. Spread over first mixture. Add remaining gelatin mixture.

Chocolate Chip Oatmeal cookies

I love chocolate chip and oatmeal cookies.

Chocolate chip Oatmeal Cookies

1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
3 cups oatmeal
1 cup chocolate chips
1 cup flour
2 teaspoon baking powder
3/4 teaspoon soda
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup nutmeats

Cream together shortening, sugars and eggs until fluffy. Sift together flour, soda, baking powder and salt. Add to creamed mixture and beat well. Add oatmeal and vanilla and chocolate chips and nutmeats. Mix well. Drop by round teaspoons on greased cookie sheet about 2 inches apart. Bake 10 to 15 minutes at 350 degrees. Makes about 4 1/2 dozen.

Fudgies

Here is a cookie recipe from 1967.

Fudgies

3 Tablespoon cocoa
1/2 cup margarine
2 eggs
1/4 teaspoon vanilla
2 cups sugar
1/2 teaspoon salt
1 cup flour, sifted
1/2 to 1 cup walnuts, chopped

Melt cocoa and margarine. Remove from heat and beat in sugar. Next beat in eggs. Mix well. Add vanilla, salt, flour and nutmeats. Beat well. Pour into well-greased 8-inch square cake pan. Bake 30 minutes at 350 degrees. Cool 1/2 hour . Cut into squares.

Angel cake Dessert

This really isn`t a cake recipe, but it uses cake.

Angel cake dessert

2 packages raspberry gelatin
2 cups hot water
1/4 cup sugar
1 pint whipping cream
16 marshmallows, cut real fine
1 small can crushed pineapple, drained
1 loaf angel food cake, sliced in thirds

Combine gelatin, hot water and sugar. Refrigerate, let jell and whip with beater. combine whipping cream, marshmallows and pineapple. Add to cream. Fold in whipped gelatin. Put half gelatin in bottom of pan. Alternate layers of angel food cake and layers of mixture. Refrigerate until solid.

Coffee Bread Twist

Here doesn`t like coffee bread or rather cake?

Coffee Bread Twist

1/3 cup shortening
3/4 cup milk, scalded
1/3 cup sugar
2 teaspoon salt
2 teaspoon orange rind, grated
2 eggs
4 to 4 1/2 cups flour
2 cakes yeast
1/4 cup lukewarm water

Mix scalded milk with sugar , salt and shortening. Let cool to lukewarm. place in large mixing bowl. Add eggs, orange rind and yeast, which has been softened in lukewarm water. Add most of flour. Mix well, turn onto floured board and lightly knead. Place in greased bowl . cover and let rise in warm place.

Filling

1 cup brown sugar
1/2 cup flour
1 Tablespoon orange rind, grated
1 cup pecans
1/2 cup butter

Combine sugar and flour. Add to melted butter and nutmeats. Mixture will be crumbly.

Punch down dough and divide into two parts. Roll out one part into about an 18 x 12-inch rectangle. Spread half of filling on surface and roll as for jelly roll. With sharp knife, cut roll lengthwise. Press ends of two strips together with cut surfaces upward. Braid two strips over on another. Press one end together and twist in a greased 18 x 12-inch baking pan. Let rise 75 minutes.

 Repeat process with remaining portion of dough. Bake 35 minutes at 325 degrees. Frost with confectioners sugar icing or brush with melted butter while hot and sprinkle with confectioners sugar.

Banana-Prune Cake

Keeping with the cake recipes, like I said I don`t like prunes


Banana-Prune Cake

2/3 cup shortening
2 1/2 cups cake flour, sifted
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1 cup fully ripe bananas, mashed ( 2 or 3)
2/3 cup milk
2 eggs
1 cup prunes, chopped, pitted and cooked
1/2 cup California walnuts, chopped

Stir softened shortening just to soften. Sift in dry ingredients. add bananas and half the milk. mix until all flour is dampened. Beat vigorously 2 minutes. Add eggs and remaining milk. Beat 2 minutes longer. Fold in prunes and nutmeats. Pour into paper lined 13 x 9 x2-inch pan. Bake 40 to 45 minutes at 350 degrees. let stand about 10 minutes before turning out of pan.

Pineapple-Cottage Cheese Salad

My hubby and I had somewhat of a version of this the other day for lunch with out the cheese and the oysters or lettuce.

Pineapple-Cottage cheese salad

2 to 4 lettuce leaves
4 sliced canned pineapple ( we used crushed)
4 scoops cottage cheese
2 slices American cheese
1 small can smoked oysters

Place a bed of lettuce leaves on salad plate and lay 2 pineapple slices on each one. Using ice cream scoop, place a scoop of cottage cheese on top of pineapple slice. Over each salad , grate 1 slice of American cheese. Add a ring of smoked oysters. Serve immediately. Serves 2.

Cocoa Chiffon Cake

Ok, here is another cake recipe and cocoa....ooohhhhhh.

Cocoa Chiffon Cake

3/4 cup boiling water
1/2 cup cocoa
1 3/4 cup cake flour
1 3/4 cups sugar
3 teaspoon baking powder
1 teaspoon salt
1/2 cup salad oil
7 egg yolks, unbeaten
1 teaspoon vanilla
1/4 teaspoon red food coloring
1 cup egg whites ( 7 or8)
1 teaspoon cream of tartar

Stir boiling water and cocoa until smooth. Sift cake flour, sugar, baking powder and salt. Make a well and add in order, salad oil, egg yolks, cooled cocoa mixture, vanilla and food coloring. Beat with spoon until smooth. Whip egg whites and cream of tartar until very stiff. Pour egg yolk mixture over egg whites. Fold in gently. pour into angel food cake pan. Bake 50 minutes at 325 degrees.

Mary`s Chocolate cake

So far we have had cake recipes, let`s keep with this cake thing.

Mary`s Chocolate cake

2 cups cake flour, sifted
1 cup butter
1 1/2 cups sugar
1 cup sour milk or buttermilk
2 eggs
2/3 can chocolate syrup ( 16 oz size)
1 teaspoon baking soda
1 teaspoon vanilla
pinch of salt

Mix butter until creamy. Add sugar. Add eggs and syrup. Sift flour , baking soda and salt once, then add to mixture, alternately with milk. Bake, either 2 - 9-inch cake pans or 1 -13x 9-inch pan 45 minutes at 375 degrees.

Oatmeal Cake and topping

I like when the recipe has the frosting included with the recipe.

Oatmeal Cake and topping

1 cup regular oatmeal
1 1/2 cup boiling water
1 cup brown sugar
1 cup white sugar
1/2 cup shortening
2 eggs
1teaspoon soda
1 1/2 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon salt

Pour boiling water over oatmeal and let stand 20 minutes. mix in all other ingredients . Bake in 8 x 12-inch pan 25 minutes at 350 degrees.

Topping

1 stick butter
1/2 cup brown sugar
1/4 cup cream of evaporated milk
1 cup nutmeats
1 cup coconut
1 teaspoon vanilla

Melt butter. Add other ingredients and spread on cake. Put cake back into oven on broiler rack until coconut browns.

Prune cake With Topping

I don`t like prunes, but here is a recipe calling for prunes!

Prune cake with Topping

1 cup cooking oil
1 1/2 cups sugar
1 cup buttermilk
2 cups flour
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon soda
1 cup cooked prunes, chopped
1 cup nutmeats, chopped
1 teaspoon vanilla

Combine oil; sugar, buttermilk and eggs. Mix well. Sift flour, cinnamon, allspice, cloves, and soda. Add to first mixture and mix well. Add prunes, nutmeats and vanilla. Bake in oblong pan at 350 degrees.

Topping

1 cup sugar
1/2 cup buttermilk
1 teaspoon soda

Combine and bring to a boil. Boil 5 minutes, using large pan as this will foam while cooking. Pour over cake.

Kentucky Cherry Pecan Cake

I this I will double post again with dessert recipes, so each day their will be a dessert recipe,.....as a person could not have too many desserts right!

Kentucky Cherry Pecan Cake

1 pound butter
3 cups sugar
1/2 teaspoon mace
8 eggs, separated
3 cups cake flour
1/3 cup bourbon
1 pound red glace cherries, finely chopped
4 cups pecans, finely chopped

Grease and flour 2 - 9 x5x 3-inch loaf pans. In very large mixing bowl, thoroughly beat butter with 2 cups sugar and mace until light and fluffy. Gradually and thoroughly beat in egg yolks. Stir in 2 3/4 cups flour, alternately with bourbon. Sprinkle remaining 1/4 cup flour over cherries and toss. Stir into cake batter with pecans. Beat egg whites until soft peaks form, then gradually beat in 1 cup sugar until very stiff. Fold into cake batter. Turn into prepared pans and bake 1 1/4 to 1 1/2 hours at 350 degrees or until cake tested inserted in center comes out clean.

Versatile Dough

This dough can be used different ways.

Versatile dough

3 packages dry yeast
1/2 cup warm water
1 cup sugar
2 teaspoon salt
3 eggs
1 1/2 cups warm milk
1/2 cup cooking oil
5 to 6 cups flour

Dissolve yeast and sugar in warm water for 5 minutes. Add salt, eggs, one at a time, warm milk and oil. Beat until consistency of eggnog. Add flour, 1 cup at a time, blending well. When dough begins to take on a " ball" form, blend in 1 more cup of flour. Let rise until double in bulk. Punch down of floured board and use a rolling pin, fold  and roll again for 3 minutes. Let rise until double again. Repeat procedure. The second time, shape dough into desired forms of dinner rolls or doughnuts. Roll out thinly and sprinkle with sweet roll " goodies" for breakfast rolls or coffee cakes.

For hamburger buns, roll dough no more than 1/4 -inch thick and place 2 together on pan. When doubled in size again, bake 20 minutes at 375 degrees.

Ice Cream Cone Cherry Lime Cheesecake

Who doesn`t like cheesecake, not I.

Ice Cream Cone Cherry Lime Cheesecake

CRUST

3/4 cup ice cream cone crumbs
2 Tablespoons butter, soft

Pour crumbs in bottom of spring form pan or pie pan. Add butter and blend with fork or fingers. Spread evenly over bottom of pan. Bake 5 minutes at 375 degrees.

CHEESECAKE

1 8-oz package cream cheese
1/2 cup dairy sour cream
2 eggs
1/2 cup sugar
2 Tablespoons lime juice
1 1/2 teaspoon lime peel

Beat cream cheese , sour cream, eggs, sugar, lime juice and lime peel until smooth. Pour mixture into baked crust. Bake 20 minutes at 375 degrees.

SOUR CREAM TOPPING

1/2 cup dairy sour cream
1 1/2 teaspoon sugar
1 teaspoon vanilla or almond extract
1 can cherry pie filling

Combine sour cream, sugar and extract and spread over top of hot cheesecake. Bake 5 to 8 minutes longer at 450 degrees. chill. If springform pan is used, remove cheesecake from pan. Spread top with cherry pie filling. Chill

Gail`s Bean Salad

Picnic time is coming up, why not save this recipe for those wonderful picnics or the spring/summer get togethers.

Gail`s Bean Salad

1 can ( No. 303 ) lima beans
1 can (No. 303) green beans
1 can (No. 303) wax beans
1 can (No. 303) kidney beans
1 can (No. 303) can red beans
2 can bean sprouts
2 can chick peas ( Garbanzos)
1 green pepper, in very thin rings, then halved
1 large sweet onion, cut in very thin rings , then halved
1 red onion, cut in rings, then halved
3 cups sugar
 3 cups vinegar

Slowly heat sugar and vinegar, stirring constantly. Cool. Drain canned vegetables and liquid to mixture. Add onions and peppers. Mix well. Let stand in large covered pot 24 hours. Put in covered jars for storage. Can be kept refrigerated 3 months.

Snack Cracker Pecan Delight

Who doesn`t like snack crackers!

Snack Cracker Pecan Delight

6 egg whites
2 cups sugar
2 teaspoon baking powder
1 Tablespoon vanilla
40 round plain snack crackers, finely rolled into crumbs
1 3/4 cups pecans, chopped

Beat egg whites until stiff. Gradually add sugar, baking powder and vanilla. Fold in cracker crumbs and pecans. Pour mixture into 13 x 9 -inch greased cake pan. Bake 35 minutes at 350 degrees.Cool. Cut in squares. Top with whipped cream and maraschino cherry.

Brownie Pie

I have decided that this week a dessert recipe for each day besides the other recipes.

Brownie Pie

3 egg whites
dash of salt
3/4 cup sugar
3/4 cup fine chocolate wafers crumbs
1/2 cup California walnuts, chopped
1/2 teaspoon vanilla
sweetened whipping cream

Beat egg whites and salt until soft peaks form. Gradually add sugar , beating until stiff peaks form. Fold in crumbs, nutmeats and vanilla. Spread evenly in lightly buttered 9-inch pie plate. Bake 35 minutes at 325 degrees. cool thoroughly. Spread top with sweetened whipped cream. Chill 3 to 4 hours. Trim with shaved unsweetened chocolate.

Easy Apple Pudding

I am putting two recipes today.

Easy Apple Pudding

4 medium apples, pared and sliced
1/2 cup brown sugar
1 cup graham cracker crumbs
3/4 cup water
3 Tablespoons lemon juice

Combine all ingredients and mix well, but carefully. Turn into greased baking dish and bake 30 minutes at 375 degrees or until apples are just tender.

Skillet Country Cake

Sorry about not posting yesterday, but the weather has been so nice , I have been working outside in the garden .

Skillet Country Cake

2 eggs
1 cup sugar
1/2 cup margarine
1 cup sweet milk
2 1/2 teaspoon baking powder
2 cups cake flour
1 teaspoon vanilla

Cream margarine. Add sugar and beat well. Add eggs, one at a time, beating after each addition. Sift flour and baking powder. Add alternately with milk to the creamed mixture. Add vanilla. Pour into greased iron or heavy skillet. Bake 25 to 30 minutes at 350 degrees. Serve warm with butter, jelly or marmalade.

Seafood salad

I like seafood!

Seafood Salad

2 cups tuna or salmon, flaked
2 cups celery, chopped
1/4 cup sweet pickle, chopped
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon onion, if desired
2 hard cooked eggs
mayonnaise
1/2 teaspoon green pepper, chopped

Flake fish lightly. add celery, pickles, salt, pepper and onion, if desired. Moisten with mayonnaise. Serve on crisp lettuce. Garnish with slice of eggs. Sprinkle with paprika.

SDtrawberry Rhubarb Pie

Strawberry season is upon us, here a recipe to try using them.

Strawberry Rhubarb Pie

1 1/2 cups sugar
3 Tablespoons quick-cooking tapioca
1/4 teaspoon salt
1/4 teaspoon nutmeg
3 cups rhubarb, cut in 1/2-inch pieces ( I used frozen)
1 package frozen strawberries
1 Tablespoon butter or margarine
1 pie crust and lattice top

Combine sugar, salt , nutmeg and tapioca. Add rhubarb and strawberries and mix well.Let mixture stand for 20 or 30 minutes. Pour into pie plate and dot with butter or margarine. Top with a lattice crust. Bake 35 to 40 minutes at 400 degrees. Serve warm with ice cream or whipped cream.

Heavenly Hash Falmbe

This recipe has grapes and bananas and pineapple....good combination!

Heavenly Hash Flambe

1 pint whipping cream
1 small bunch red grapes, seeded and halved
2 or 3 bananas, sliced
1/2 cup black walnuts, chopped
1 small can pineapple chunks
2 or 3 dozen miniature marshmallows
1/2 cup sugar
8 cubes sugar
1/4 cup brandy

Whip cream until stiff peaks foam. Fold in sugar. Add all fruits and marshmallows and fold in with spoon. Place in parfait glasses., Soak 8 cubes and serve flaming. Serves 8.
