Marmalade Bread
Mary France Spalding
3 cups enriched flour, sifted
3 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon soda
1 cup English walnuts
1 1/2 cup orange marmalade
1 egg, beaten
3/4 cup orange juice
1/4 cup vegetable oil
sift together dry ingredients. Reserve 1/4 cup marmalade. combine remaining 1 1/4 cups marmalade , egg, orange juice and oil. Add to flour mixture, stirring until moisten. Stir in nutmeats. Bake in 9 1/2 x 5 x 3-inch greased loaf pan about 1 hour at 350 degrees. Remove from pan and place on baking sheet. Spread top with reserved marmalade and return to oven about 1 minutes or until glazed . Cool on rack.

Orange Loaf Cake
Here is a loaf cake using orange rind....
Orange Loaf Cake
Shirley Simpson
2 cups sifted cake flour
1 1/2 cups granulated sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shortening
1/2 cup orange juice
1 Tablespoon orange rind, grated
2 eggs
Sift together into mixing bowl cake flour, sugar, baking powder and salt. Add shortening, ornage juice and rind. Beat vigorously for 2 minutes. If using electric mixer, use medium speed. Add eggs and beat for 2 more minutes. Pour into waxed paper -lined 4 x 9 x 3-inch loaf pan. This cake has a texture similar to pound cake. Set on cookie sheet and bake 1 hour at 350 degrees. Cool cake on rack. Remove from pan while still warm.
Icing
1 cup sifted confectioners sugar
2 Tablespoon orange juice
1 teaspoon orange rind, grated
Combine ingredients and mix until smooth. Glaze cake while it is still warm.

Mandarin Salad
I like Mandarin oranges when they are really sweet. This is the last salad recipe from the 1967 Kansas City Kansan Silver Spoon Cookbook .
Mandarin Salad

1 package orange gelatin
1 cup boiling water
1 6-oz can orange juice concentrate
1 11-oz can mandarin oranges, drained
can cold water
2 Tablespoon lemon juice
1 9-oz can crushed pineapple, undrained
Dissolve gelatin in boiling water. Add orange concentrate, water, lemon juice and pineapple. Let stand until mixture thickens. Add oranges and chill until firm. Before serving top with whipped cream. Serves 6.

Orange Crunch Muffins
Ok , here is a bread recipe I know I didn`t put on last friday...it was a very busy day, two docotrs appointments.
Orange Crunch Muffins
Mrs. Marvin Custer
2 cups flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup grape nuts
2 eggs, slightly beaten
1 cup orange juice
1 Tablespoon peel
1/3 cup salad oil or melted shortening
Sift flour, baking powder and soda. Add salt and sugar. Add eggs, orange juice, peel and oil. Stir in grape nuts and pour immediatley into paper cups in muffin tins. Fill 2/3 full and bake 20 minutes at 375 degrees. Makes 12 to 15.

Sweet and Hot Chicken
This recipe was the award winner in the main dish catergory of the Kansan`s Silver Spoon Cookbook of 1968, It was published May 31, 1968.I did do things alittle different when I made it though.
Sweet and Hot Chicken
Mrs. Vincent C. Solomon
1/2 cup butter ( used Margarine)
1/2 cup red current jelly ( or light colored tart jelly)
1/4 cup Worcestershire sauce
1 large clove garlic, minced
1 Tablespoon mustard
1 teaspoon powdered ginger
1 cup orange juice
3 dashes Tabasco sauce
1 quartered chicken or 2 to 4 cornish hens( I used chicken tenders)
Combine all ingredients, except chickens and heat, stirring until jelly is melted and sauce is smooth. Cool. Place chicken in baking dish and pour sauce over it and let marinate over night. Turn occussionally. ( I only marinated it for 6 hours)
Topping 4 Tablespoons butter
2 Tablespoon mustard
1/4 cup brown sugar
Combine these ingredients and spread over chicken the next morning. Place lid on baking dish and cook1 hour at 350 degrees. Uncover and increase temperature to 400 degrees. Baste frequently until chicken is even dark brown. Serve with rice.
