Here is another good recipe using gelatin from 1967 Kansan`s Silver Spoon cookbook. It seems like their is alot of gelatin recipes that were put in this book that the Kansan put out.
Lemon Gelatin With Cheese
Mrs. Herbert Lipp
2 packages lemon gelatin
2 cups water, hot
2 cups lemon-lime carbonated beverage
1 1/2 cups crushed pineapple, drained
3/4 cup grated carrots
1 cup whipped cream
parmesan cheese
Mix gelatin , boiling water and lemon-lime beverage. Pour into 9 x 13 glass dish. While still syrup, add drained crushed pineapple and grated carrots. Chill until firm. Whip cream and ice the chilled gelatin. sprinkle liberally with finely grated parmesan cheese.
