Cottage Cheese Fruit Soup Salad
Mary Frances Spalding
1 package lemon gelatin
1 cup hot water
1/2 cup cold water
1 Tablespoon lemon juice
1/2 cup mayonnaise
1/4 teaspoon salt
1/2 cup diced grapefruit sections
3/4 cup cottage cheese
1/2 cup carrots, shredded
1/4 cup walnuts, chopped
Dissolve gelatin in hot water. Add cold water, lemon juice, mayonnaise, salt and pepper. Blend well with beater. Pour into freezing tray and quick chill in freezer 10 to 20 minutes, or until firm about 1-inch from edge and soft in center. Place in bowl and beat until fluffy. Fold in fruit, cheese , carrots and walnuts. Pour into individual molds and chill until set.
Unmold and garnish with salad greens. Serve with mayonnaise. Place a walnut half on top of each salad.

Salad

1 package lemon gelatin
1 small can crushed pineapple
1 dozen maraschino cherries , cut up
1 cup nutmeats,
2 bananas
12 marshmallows
1/2 pint whipping cream, whipped
Dissolve gelatin in 1 pint water . When it begins to thicken, add marshmallows, cut in small pieces, cherries, pineapple, bananas and nutmeats. Mix together and when it stets fold in whipped cream

Glorified Rice
I am not really much of a rice eater.....every once in a while I will eat rice...

1 cup cooked rice
1 cup crushed pineapple
1/2 cup nutmeats, chopped
1 cup cream, whipped
dissolve gelatin with boiling water. Add pineapple juice and refrigerate until it starts to thicken. Beat until frothy. Add rice, pineapple, nutmeats and whipped cream. mix and put in refrigerator until ready to serve.

1 package lime gelatin
1 cup hot water
1 cup, combined carrots, green peppers and celery, finely chopped
2 cups cottage cheese
dash onion juice
1/2 cup cream, whipped
1/2 cup mayonnaise
Dissolve gelatin in hot water. When it starts to jell, add cottage cheese, onion juice and vegetables. fold in whipping cream and mayonnaise. Pour into mold, chill and set.

1/4 cup pecans
1 Tablespoon maraschino cherries
1 cup whipping cream or whipped topping, whipped
Dissolve gelatin in hot water. Add cold water and chill until firmly set. Beat with fork or egg beater until fluffy. Fold in crushed pineapple. Fold in whipping cream or substitute and cherries. Chill until serving time. Serve on lettuce leaves.

Frozen Delight salad
Sorry about not putting a recipe up yesterday, but where the computer is at their is no heat in that room and with -5 degrees ....I think that is a little cold.

1 box lime gelatin
1 ( 3 oz ) cream cheese, softened to room temperature
1 box whipped cream dessert topping
3 Tablespoons salad dressing or mayonnaise
2 Tablespoon lemon juice or lime juice
1 9 No. 303 ) can fruit cocktail, well drained
3/4 cup pecans or walnuts , chopped
2 cups miniature marshmallows
few drops of green food coloring
Prepare gelatin according to directions, using only half the amount of hot and cold water. Let it chill until it begins to set. Whip cream cheese until light and fluffy, adding salad dressing, lemon or lime juice and food coloring. When gelatin has begun to set, whip it lightly and fold in dessert topping and cream cheese mixture. Add fruit cocktail, nutmeats and marshmallows. Pour into lightly greased mold or into cupcake papers, place in cupcake pans and freeze until firm. Serve on lettuce leaves and garnish with walnut halves and maraschino cherries. Will keep for several weeks in freezer

Black Cherry Gelatin Salad
Here is the salad for the week!
Black Cherry Gelatin Salad

1 package black cherry gelatin
1 cup boiling water
1 ( No. 1 ) can dark sweet cherries with juice
1/4 cup walnuts or pecans, chopped
Dissolve gelatin in water. Add cherries, juice and nutmeats. Place in refrigerator until set.
Second Layer
1 cup sweet cream, dessert topping
evaporated milk
'3/4 cup marshmallows, chopped
1 teaspoon vanilla
crushed graham crackers
Put marshmallow, cream in double boiler , heat until marshmallows dissolve. Cool, then add vanilla and cream. Place on top of gelatin mixture. Sprinkle with graham crackers on top.

dissolve gelatin and salt in boiling water. Add undrained pineapple and lemon juice. Chill until thick. Fold in carrots and pecans and chill until firm

Apple Glory Salad
Here is the salad recipe for the day.

1 package ( 3 oz) lime gelatin
3/4 teaspoon salt
1 cup boiling water
1 cup cold water
dash pepper
4 teaspoons vinegar
1 cup cabbage, shredded
1 cup tart apple, diced and pared
6 stuffed olives, thinly sliced
Dissolve gelatin and salt in boiling water. Add cold water, pepper and vinegar. Chill until slightly thickened. Fold in cabbage and apples. Arrange olive slices on bottom of a 1 1/2 quart mold, then fill mold with gelatin mixture. Unmold on crisp lettuce. Serve with mayonnaise and garnish with more olives., if desired. Serves 6.

Lime gelatin Salad

1 package lime gelatin
1 3/4 cup boiling water
1/4 cup vinegar and water ( equal parts)
pinch of salt
1/2 cup sliced stuffed olives
1/2 cup small sweet pickles, sliced
1/2 cup drained crushed pineapple
1/2 cup blanched slivered almonds
Add water and vinegar to lime gelatin and stir to dissolve. After it starts to thickened, add pickles, pineapple, olives and slivered almonds. Mix well and let chill.

Crown Jewel Cake
Here is a cake recipe that uses jello....that's not really a cake....
Crown jewel Cake

1 package each of black cherry raspberry , lime and strawberry gelatin
3 cups boiling water
2 cups cold water
1 cup pineapple juice
1/4 cup sugar
1 cup cold milk
1 teaspoon vanilla
2 envelopes whipped dessert topping
flake coconut
Prepare black cherry , lime and strawberry gelatin using 1 cup hot water and 1/2 cup cold water for each. pour into 8 x 8 x 2-inch separate pans and chill until firm. Heat pineapple juice and dissolve raspberry gelatin in it. Add 1/2 cup cold water and chill until syrupy. Combine milk, vanilla and whipped dessert topping in a bowl. blend , then beat until mixture forms soft peaks. Fold into raspberry gelatin. Cut black cherry, strawberry and lime gelatin into 1/2-inch cubes. Fold into raspberry gelatin mixture. Pour into 9-inch angel food cake pan. Chill 8 hours. Unmold and spread tops and sides with additional whipped dessert topping. Sprinkle with flaked coconut, tinted pink, if desired. Other colors gelatin may be substituted in this recipe.

Eay Cranberry Salad
Cranberries aren`t just for the fall/Winter holidays.....here is a cranberry recipe from 1968.
Easy Cranberry Salad

1 package cherry ( or red ) gelatin
1 jar orange and cranberry relish( I used just plain cranberry sauce)
Nutmeats, finely chopped, if desired
Dissolve gelatin as directed on package and while still warm, add orange and cranberry relish and nutmeats. Refrigerate.

2 packages cream cheese
1 large can crushed pineapple
juice from crushed pineapple
1 small can pimientos
1/2 cup celery, chopped
2/3 cup walnuts, chopped
1/2 pint whipping cream, whipped
1/8 teaspoon salt
Boil pineapple juice and mix with gelatin. When it begins to jell, add crushed pineapple and cheese mashed with pimientos, celery and walnuts. Fold in whipping cream and place in mold. Chill.

K, this recipe was in the appetizer/salad portion of the 1968 cookbook, I think it would be great for dessert.

1 package grape of raspberry gelatin
1 pint vanilla ice cream
1 can fruit cocktail
Combine hot water and gelatin. Add ice cream and stir until melted. Add fruit cocktail and stir until well mixed.

Cherry Enchantment Pie
Here is a recipe for those cherry pie lovers out there.
Cherry Enchantment Pie
1 3/4 cup water
1/4 cup red cinnamon candies
Bring water to a boil. Add cinnamon candies and stir until candies are dissolved. Set aside 1/4 cup of this liquid to cool and be used in crust.
Pie Crust
1 cup flour
1/2 teaspoon salt
1/3 cup shortening
1/4 cup cinnamon candy liquid
Combine flour and salt. Cut in shortening, using pastry blender or knife, until mixture is the size of small peas. Sprinkle liquid, a little at a time, over mixture while tossing and stirring lightly with fork until dough is moist enough to hold together. Shape into ball. Roll out on floured board to a circle 1 1/2 inches larger then inverted pie pan. Fit loosely into pan. Flute rim. Prick with fork. Bake 10 minutes at 425 degrees. cool.
Filling
1 cup cinnamon candy liquid
1 3-oz package cherry flavored gelatin
1 cup applesauce
1 package pink icing mix
Maraschino cherries
Bring liquid to boil. Pour over gelatin, stirring until gelatin is well dissolved. Add applesauce and blend well. Place in refrigerator until partially set. Prepare frosting mix according to package directions, using 1/2 cup cinnamon candy liquid in place of water. Fold half of frosting into partially set gelatin mixture. Pour into pie shell. Return to refrigerator. When completely set, spread rest of frosting on top. Garnish with cherries. Makes 1 - 9-inch pie.

Angel cake Dessert
This really isn`t a cake recipe, but it uses cake.

1 loaf angel food cake, sliced in thirds
Combine gelatin, hot water and sugar. Refrigerate, let jell and whip with beater. combine whipping cream, marshmallows and pineapple. Add to cream. Fold in whipped gelatin. Put half gelatin in bottom of pan. Alternate layers of angel food cake and layers of mixture. Refrigerate until solid.

Apricot Salad
First off....Happy New Year everyone hope everyone had a great 2012 and if not hope 2013 will be better.
Apricot Salad

2 boxes orange gelatin
2 cups boiling water
1 can crushed pineapple, drained
1 can apricots, drained
juice from fruits
10 quartered marshmallow or 40 miniature marshmallows
Dissolve gelatin in boiling water. Add 1 cup juice, fruit and marshmallows. Pour into large baking dish and chill until firm.
Topping
1 cup juice from fruits
1/2 cup sugar
2 heaping Tablespoons flour
1 egg, beaten
2 Tablespoon margarine
1 package whipped dessert topping, prepared
1/4 cup cheese, grated
Melt margarine. Stir in flour, sugar and egg. Add juice and cook until thicken. When cool fold in prepared dessert topping. Spread over firm gelatin and sprinkle with cheese. Serves 15.

Triple Orange Ring Mold
This recipe is under salads, but I think it could be a dessert also...You do usually eat jello for dessert.

2 package orange gelatin
2 1/2 cups boiling water
1 can mandarin ornages ( 11-oz), drained
1 pint orange sherbet
Dissolve gelatin in boiling water. Add juice from orange. Mix well. When mixture is thick, but not solid, beat with rotary beater until frothy. Add sherbet and mandarin oranges. Blend well. Pour into 10-inch ring mold. Chill. Unmold when ready to serve and garnish with water cress. Serves6.

Carrot Celery Salad
Carrot Celery Salad
1 box celery gelatin ( don`t know if it is still available, I haven`t never seen it)
1 or 2 carrots
1 cup celery, diced
3 or 4 radishes
garlic salt to taste
salt
Prepare gelatin unsing 1 1/2 cups hot water and 1/2 cup cold water. Pour into 10 x 6 x 2-inch pan. Slice carrots into rounds. Dice radishes. Combine all ingredients and chill.

Prepare gelatin unsing 1 1/2 cups hot water and 1/2 cup cold water. Pour into 10 x 6 x 2-inch pan. Slice carrots into rounds. Dice radishes. Combine all ingredients and chill.

Black Raspberry Gelatin Salad
Here is another gelatin salad from the year 1967...boy they ate alot of gelatin back then...I would eat more gelatin or rather make it more if my frig didn`t freeze things.
Black Raspberry Gelatin Salad

1 package black raspberry gelatin
1 cup hot water
juice from 1 can blueberries
whipped dessert topping
Reserve 6 Tablespoons blueberry juice. Combine gelatin, water and remaining blueberry juice. Cool. Whip dessert topping and add 6 Tablespoons blueberry juice. Combine with gelatin after it has jelled.
