Well this week will be all about desserts and who doesn't love desserts.
Cheesecake
1 package lemon gelatin
1 cup boiling water
1 - 8-oz package cream cheese
1 cup sugar
1 teaspoon vanilla
1 13-oz can evaporated milk
Pour milk into ice cube tray and chill until crystals form 1/2-inch from edge. Dissolve gelatin in boiling water and cool. Whip cream cheese, sugar, and vanilla. Whip chilled milk until soft peaks forms. Add gelatin mixture and then add cheese mixture.
Graham Cracker Crust
20 double graham crackers
1/2 cup butter, melted
2 Tablespoons sugar
Roll crackers to fine crumbs. Add sugar and butter. Spread half of crumbs into 13 x 9 x 2-inch pan. Spread cheese mixture on top of crumbs. Top with remaining crumbs and chill about 1 hour until firm.

Cheesecake Squares
Since I told you on Monday that I would put two recipes on here for each day, well Friday is not different , but it will be two dessert recipes....here is the first one for Friday...Cheesecake Squares
Cheese cake Squares
1/3 cup butter or margarine
1/3 cup brown sugar , packed
1 cup flour
1/2 cup nutmeats, chopped
1/4 cup granulated sugar
1 8-oz package cream cheese
1 egg
2 Tablespoon milk
1 teaspoon lemon juice
1/2 teaspoon vanilla
Cream butter and brown sugar until light and fluffy. Add flour and nutmeats and blend until mixture resembles crumbs. Set aside 1 cup. Press remaining mixture into 8-inch square pan and bake 15 minutes at 350 degrees. Combine granulated sugar and cream cheese. Beat until smooth. Add egg, milk, lemon juice and vanilla and beat well. Spread mixture over baked crust. Sprinkle reserved crumbs over top . Bake 25 minutes at 350 degrees Cool and cut into squares.

Cheese Cake
Who doesn`t like Cheese cake, this recipe is from 1968.
Cheese Cake
Mrs. Mary F. Martin
Crust
1 1/2 cups graham cracker crums
1/2 stick butter
2 Tablespoon sugar
Mixed together and line a 9-inch pie pan
Filling
3
packages cream cheese
2 eggs
1/2 teaspoon vanilla
1/2 cup sugar
1 small can pineapple, drained
Beat eggs, add sugar , vanilla and cheese and beat until smooth. Add pineapple. Pour into crust and bake 20 minutes at 375 degrees. cool.
Topping
1 cup sour cream
3 Tablespoon sugar
1/2 teaspoon vanilla
Beat sour cream, sugar and vanilla. Spread over pie and bake 8 minutes at 400 degrees. Chill.

Ice Cream Cone Cherry Lime Cheesecake
CRUST
3/4 cup ice cream cone crumbs
2 Tablespoons butter, soft
Pour crumbs in bottom of spring form pan or pie pan. Add butter and blend with fork or fingers. Spread evenly over bottom of pan. Bake 5 minutes at 375 degrees.

1/2 cup sugar
2 Tablespoons lime juice
1 1/2 teaspoon lime peel
Beat cream cheese , sour cream, eggs, sugar, lime juice and lime peel until smooth. Pour mixture into baked crust. Bake 20 minutes at 375 degrees.
SOUR CREAM TOPPING
1/2 cup dairy sour cream
1 1/2 teaspoon sugar
1 teaspoon vanilla or almond extract
1 can cherry pie filling
Combine sour cream, sugar and extract and spread over top of hot cheesecake. Bake 5 to 8 minutes longer at 450 degrees. chill. If springform pan is used, remove cheesecake from pan. Spread top with cherry pie filling. Chill

Cherry Delight
This is for those that like cherry cheesecake, it is similar .

Mrs. Larry E. Franklin
1/4 pound butter ,melted
2 cups graham cracker crumbs
1 8-oz package cream cheese, softened
1 cup confectioners sugar
1 cup pecans, broken
1/2 pint whipping cream, whipped
1 can cherries
Melt butter in 9 x 9-inch cake pan. Stir in graham cracker crumbs. Pat around bottom and sides. Bake 10 minutes at 325 degrees. Combine cream cheese and sugar. Mix well. Spread cream cheese mixture over cracker crust. Sprinkle pecans over cheese. whip cream almost to butter and spread over pecans. Top with cherries. Chill at least 24 hours.

1 cups graham cracker crumbs, finely ground
1/4 cup sugar
1/4 cup margarine or butter , melted
2 8-oz packages cream cheese, softened
2 eggs
1/3 cup sugar
1/2 cup evaporated milk
1 teaspoon vanilla
1 can cherry, peach or blueberry filling
combine graham cracker crumbs, sugar and melted butter or margarine and press onto bottom and sides of a 9-inch pie pan. Build up edge of crust about 1/4-inch above rim. Beat cream cheese until fluffy. add eggs and sugar and beat until smooth. Add milk gradually. Add vanilla and beat until smooth. Pour into crust. Bake 45 minutes at 300 degrees. Cool. Pie will settle as it cools. Top with pie filling. Chill.
Then chow down....
