Glacier Cucmber Salad

Here is a salad for those cucumbers.....

Glacier Cucumber Salad

2 Tablespoon sugar
1 1/2 teaspoon salt
1 cup commercial sour cream
3 Tablespoon onion, grated
1 to 2 Tablespoon white vinegar
3 cucumbers, peeled and thinly sliced

Combine sugar, salt, sour cream, grated onion and vinegar. Arrange layers of cucumber slices and dressing in a glass bowl, ending with dressing. Cover and chill several hours.

Sweet Pickle Spears

Pickle Spears are very good......yummy, wish my garden would have produced enough cucumbers this year to use this recipe, maybe next year.

Sweet Pickle Spears

4 pounds small pickling cucumbers
4 cups sugar
3 1/4 cup distilled vinegar
3 Tablespoon salt
4 teaspoon celery seed
4 teaspoon turmeric
1 1/2 teaspoon mustard seed

Wash cucumbers, trim ends. Cut into quarters, lengthwise. Carefully pour boiling water over cucumbers, let stand 2 hours.
  Prepare home canning jars and lids according to manufacturing instructions.
Drain and pack cucumbers into hot jars, leaving 1/4-inch head space. Heat remaining ingredients to a boil. Carefully pour hot liquid over cucumbers leaving 1/4-inch head space. Remove air bubbles with a non-metallic spatula. Adjust caps.
  Process 10 minutes in boiling water bath canner. Makes about ten 8-oz jars.

Ham in cucumbers

Here is a different way of serving ham and cucumbers and again this recipe is from 1967.

Ham in Cucumber

3 cucumbers, cut in half lengthwise
1 package cornbread mix
1/2 cup smoked ham, chopped fine
1 egg
1 onion, chopped
parsley
pepper
salt

Scoop out pulp of cucumber. Mix cornbread according to package directions. Combine with cucumber pulp and smoked ham. Add egg, chopped onion, parsley, pepper and salt. Fry in vegetable oil. When done, fill cucumbers cases and bake until brown. Garnish with grated cheese.
