Tomato-Corn Boheme
Mrs. Paul Grimsley
1 No. 303 can tomatoes
1 No. 303 can whole kernal corn, well drained
3/4 cup celery, diced
1 large onion, finely chopped
1/4 cup margarine or butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup buttered cracker crumbs
Combine all ingredients except cracker crumbs in well greased 2-quart casserole. Cover with crumbs and bake covered 1 hour at 375 degrees.

Tomato Cheese Delight
Here a recipe for a light lunch or supper or hey , it could be breakfast.

1 tomato
lettuce shell
1/2 cup cottage cheese
1 Maraschino cherry
Cut tomato in quarters, 3/4 way thru. place cottage cheese in tomato and top with cherry.

Okra and Tomato Casserole
Okra is a acquired taste. This could be a main dish.
Okra and Tomato Casserole
Mrs. Lester E. Mickelson
1 meduim can okra, drained and rinsed with water
1 medium size can tomatoes, drained ( save juice)
2 slices soft buttered bread, cubed
1 package pimiento cheese ( 8 slices), cubed ( save 2 slices)
4 to 6 slices bacon for topping
Grease Shallow 7 x 10 x 2-inch pan. make 2 layers of okra, tomatoes, bread and cheese. Cut bacon into 1-inch pieces and spread over entire top. Tuck 2 pieces of cubed cheese around bacon. Spoon tomato juice carefully over bacon. Do not salt. Bake 45 minutes at 350 degrees.

Lick-A-Dab
Here`s simple recipe
Lick-A-Dab
Mrs. Lewis Clodfelter
1 1/2 pound ground bbef
salt and pepper to taste
sliced potatoes
sliced onions
1 can red beans or pork and beans
2 cans tomatoes
bacon
Brush a large deep baking dish with butter. Spread ground beef on bottom;salt and pepper to taste. cover with layers of potatoes, onions, beans and tomatoes. ( Small amount of sugar maybe added to tomatoes). Top with bacon. cover and bake for 2 hours in moderate oven.
*brown the ground beef
** moderate oven temp 350degrees.

Stuffed Tomato-Tuna Salad
What is better then homegrown tomatoes stuffed with tuna salad for lunch, or a light dinner.
Stuffed Tomato_Tuna salad
4 medium sized tomatoes
1 Tablespoon salt
lettuce leaves
Remove skins from tomatoes, Scoop out hollow at the stem end of each tomato. Add 1/4 teaspoon salt to the inside of each tomato. Invert on tray and chill 1 hour.
Tuna Salad
1 ( 6 1/2-oz) can grated tuna
1/4 cup onion,diced
1/4 cup celery, chopped
3 small sweet pickles, chopped
1/2 cup mayonnaiuse
1/4 teaspoon salt
1/4 teaspoon black pepper
Mix all ingredients and toss lightly. Remove tomatoes from refrigerator and fill each tomato with salad. Arrange on freshly washed lettuce leaves. Serves 4.

2 cups canned tomatoes
1 1/2 cups soft bread crumbs
3 eggs, separated
3/4 cup shrp cheese, grated
1 teaspoon salt
Mix tomatoes and bread crumbs to make a thick paste. Add cheese and salt. Separate eggs and add yolks, then fold in stiffly beaten egg whites. Bake in greased baking dish 45 minutes at 350 degrees.

Meat Ball- Tomato -Rice Bake
Here is another recipe from Kansan`s Silver Spoon Cookbook of 1967. I know everyone out there in blog land is getting tired of this year of 1967, hey, it was a good year, and their is many more recipes from this paper that needs to put on the web.
Meat Ball-Tomato-Rice Bake
Mrs. Mary Frances Spalding
1 Tablespoons butter or margarine
1/2 cup fresh mushrooms, chopped or 2 -oz can
1 Tablespoons onion, chopped
1 Tablespoon flour
2 Tablespoons cream
3/4 cup Sharp American cheese, shredded
1 1/2 pounds lean ground beef
1 Tablespoon Worcestershire sauce
1 teaspoon salt
1 cup packaged precooked rice
2 cans stewed tomatoes ( 1 pound)
Heat tomatoes in butter. Sauet onions and mushrooms 5 minutes. Take from heat. Stir in flour, cream and cheese. Stir over low heat until cheese melts. Chill. Shape into 4 to 5 balls. Mix meat , salt and Worcestershire sauce. Shape into 5 thick patties and make a depressions in center of each. place meat in 2-qt baking dish. Bake 10 minutes at 450 degrees. pour rice around meat. Spoon tomatoes over it. Bake 10 minutes longer. Top meat with cheese balls and return to oven until cheese melts. Serves 4.

Stuffed Tomato salad
Ok this recipe has more then one recipe with it and salad recipe could in fact be made with out stuffing the tomato.. this recipe is again from 1967 Kansan`s silver Spoon Cookbook, or rather this group of recipes.
Stuffed Tomato Salad

1 tomato for each serving
Wash tomato. Remove core and cut tomato into quarters, almost to base. spread apart. Salt and chill thoroughly. just before serving fill with one of salads. Serve on crisp lettuce leaves with mayonnaise.
Egg salad
1 hard boiled egg
pickle relish
celery, chopped
onion, minced
seasoning to taste
mayonnaise
Chop egg and add other ingredients, using just enough mayonnaise to moisten.
Fish salad
1/2 cup crab, shrimp or lobster meat
1/2 cup celery, chopped
onion,minced
seasoning to taste
mayonnaise
Combine ingredients, using just enough mayonnaise to moisten
Chickin slad
1/2 cup chicken, minced
1/2 cup celery, chopped
seasoning to taste
mayonnaise
Combine ingredients,m using just enough mayonnaise to moisten.
Cottage cheese
Mix cottage cheese with tomato pulp and minced onion or mix with chopped chives or chopped parsley.
