This is a long recipe...have not tried it since Saffron is so expensive....
Saint Luica Saffron Buns
Mrs. Vincent C. Solomon
1/4 cup milk
pinch of saffron, crushed
1/4 cup sugar
1/2 teaspoon salt
1 envelope active dry yeast or 1 cake compressed yeast
1/4 cup very warm water
2 eggs
3 cups sifted regular flour
1/2 cup butter or margarine, softened
Candied red and green cherries, cut in tiny squares
1 Tablespoon cold water
Scald milk with saffron , sugar and salt. Cool to lukewarm . Sprinkle or crumble yeast into very warm water. Stir until yeast dissolves, then stir in cooled milk mixture.
Beat eggs in small bowl ( save 1 Tablespoon) beat in yeast mixture. Stir in 1 1/2 cup flour until smooth. Beat in softened butter until completely blended then beat in remaining flour to make a stiff dough. Knead until smooth and elastic on a lightly floured pastry cloth. Place in warm place, away from draft, 1 hour until double in bulk.
Punch dough down: knead several times and divide into quarters.Working with 1 at a time, roll into a rope. Cut into 16 even pieces, then roll each into a 6-inchg long pencil thin strip. Cross each 2 strips on a large greased cookie sheet. Curl each end into a small coil and decorate each tip with a candied cherry square. Repeat with remaining dough to make 32 buns. Cover and let rise again 30 minutes or double in bulk. Stir in water into egg and brush over buns. Sprinkle lightly with granulated sugar, if you wish. Bake 12 minutes at 400 degrees or until golden brown. Remove from cookie sheet and cool on wire racks. Serve warm or cold.

Applesauce Cookies

3/4 cup shortening
1 cup brown sugar, packed
1 egg
1/2 cup applesauce
2 1/4 cup sifted flour
1/2 teaspoon soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon cloves
1 cup raisins
1/2 cup nutmeats
Cream shortening, sugar and egg. Add applesauce and blend in flour, slat and spices. Add raisins and nutmeats and drop by teaspoon on greased cookie sheet. Bake 10 to 12 minutes at 375 degrees.

1 1/2 cups applesauce
2 teaspoon soda
1 cup walnuts, chopped
1 teaspoon cinnamon
1/2 cup butter
2 cups flour
1 cup raisins
1/2 teaspoon cloves
pinch of salt
Add soda to applesauce. Mix sugar, butter and applesauce until well blended. Add remaining ingredients and mix well. Bake 30 minutes at 350 degrees. May be iced or served with whipped cream.

old-fashioned Applesauce cake
I know it`s not apple time but here is a recipe for that applesauce
Old-fashioned Applesauce Cake
1 cup fat ( any cooking oil or shortening)
1 cup light brown sugar
1 cup white sugar
4 eggs
2 cup applesauce
4 cups all-purpose flour
1/2 cup black currents
1/2 cup seeded raisins
1/4 cup black walnuts
4 rounded teaspoons continuous action baking powder
1/2 teaspoon vanilla
6 drops lemon oil
1/2 teaspoon salt
do not over mix. Mix by hand or in electric mixer, shortening and sugar until well blended, but not creamed. Add eggs and mix only until blended. Measure flour and add baking powder. Sift only salt to flour and baking powder mixture. Alternately add flour mixture and applesauce, using flour mixture in 3 amounts. Add raisins and currents, then nutmeats. Add flavorings and mix slightly. Bake in stemed cake pan that has been lightly greased, but not floured at 325 degrees.

Cream cheese Salad
Here is a cream cheese recipe that is not a dessert , or it could be a dessert.

1 cup red cinnamon candies
1 cup boiling water
1 package lemon gelatin
2 1/2 cups applesauce
2 8-oz packages cream cheese
1/2 cup black walnuts, chopped
pinch salt
Pour boiling water over cinnamon candies. Let dissolve. Add gelatin and applesauce. Pour 1/2 mixture into 7 x 11 x 2-inch dish. Cool until congealed. add enough cream to cheese to make a spreading consistency. Add nutmeats and salt. Spread over first mixture. Add remaining gelatin mixture.

Green Stuff
I know what a title to a recipe Green Stuff, considering lime gelatin is one of the ingredients, I would say so, the color is definitely green.

1 box lime gelatin
1 box whipped dessert topping
1 can applesauce
1 cup hot water
Add hot water to gelatin and cool until slightly thickened, but not congealed. Fold whipped topping into gelatin. Stir in applesauce. Refrigerate until firm.

Red Hot Gelatin Salad
It is red hot outside here in the ozarks, here is a salad to go along with the weather, lol and again from 1967.
Red Hot Gelatin Salad

3 packages cherry gelatin
6 cups water
1/4 cup red cinnamon candies ( Red Hots)
1 small can pineapple, crushed ,drained
1 small can applesauce
Mix all ingredients together and let set for 1 to 2 hours in refrigerator.

Here is a 7-cup salad from 1967.

1 package lime gelatin
1 6-oz bottle lemon-lime carbonated drink
1 small package marshmallow
1 3-oz package cream cheese
1 pint whipping cream
Bring applesauce to boil. Dissolve gelatin in applesauce. Blend and pour into mold or glass dish. Combine marshmallow, whipping cream and soft cream cheese. Blend and refrigerate overnight. Whip and spread over salad. Serves 8 to 12.

Lemon-Lime Salad
salad time is here, what am I talking about salad time is anytime. Lemon-Lime Salad Mrs. Donald Garrison 1 can applesauce 1 box lime gelatin 1 bottle lemon-lime carbonated beverage ( 6 oz) ( I know it`s hard to find a 6 oz bottle, use the pyrex measuring cup with ounces on it ) Combine gelatin and applesauce and heat until gelatin is dissolved. cool slightly and pour lemon-lime carbonated beverage into mixture. Mix well and chill.

Applesauce Rolls

2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 heaping Tablespoon shortening
3/4 cup milk
1 cup applesauce, thick, strained
2/3 cup brown sugar
cinnamon
margarine
Sift together flour, baking powder and salt. Using a fork, mix in shortening. Slowly add milk to make a soft dough. Spoon dough onto floured board. Roll or pat into 4-inch thick retangle. Spread with applesauce. Sprinkle with brown sugar. Dot with margarine and sprinkle with cinnamon. Roll like jelly roll. Turn in ends and cut roll in half with sharp knife. Cut each half in six slices.
Place each slice in greased muffin tin and sprinkle each with more sugar and cinnamon. Top each with a dot of margarine. Bake 20 minutes at 425 degrees.

This recipe comes the year 1967 out of the Kansan`s Silver Spoon Cookbook and is pretty good.

1 package lemon or lime gelatin
grated rind of 1/2 lemon
pinch of salt
1 bottle or 1 1/2 cups lemon-lime carbonated drink
Heat applesauce. Dissolve gelatin in applesauce. Add lemon juice and rind and salt. Combine and add lemon-lime drink. Refrigerate overnight.
It`s as simple as that!
