Ohio Lemon Pie

I love lemon Pie

Ohio Lemon Pie

2 large fresh lemons
2 cups sugar
4 eggs, well beaten
pastry for 2-crust 9-inch pie

Slice lemons as thinly as paper, rind and all. Combine with sugar. Mix well. Let stand 2 hours or longer. Blend occasionally. Add beaten eggs to lemon. Mix well. Turn into pastry -lined pie pan, arranging lemon slices evenly. Cover with top crust. Cut several slits near center. Bake 15 minutes at 450 degrees, Reduce heat to 375 degrees and bake 20 minutes or until knife inserted near edge of pie comes out clean. Cool

Walnut Cream pie

Walnut Cream Pie

1/2 cup sugar
5 Tablespoons flour
1/4 teaspoon salt
2 cups milk
2 egg yolks, beaten
1 Tablespoon butter
1/2 teaspoon vanilla
1/2 cup walnuts
1 baked pie shell
Meringue

Combine sugar, flour and salt. Add milk gradually. Cook over low heat 10 minutes, stirring constantly. Cool and stir in walnuts. Put in baked pie shell. Cover with meringue and bake until brown at 375 degrees.

Old fashioned Homemade ice cream

Ice cream is all about summer time...remember cranking that old ice cream maker and eating the rock salt on the ice.....memories.

Old Fashioned Homemade Ice Cream

1 1/2 quarts whipping cream
1/2 quart coffee cream
1 quart milk
1/2 teaspoon salt
1 Tablespoon vanilla
2 cups sugar
5 eggs, well beaten
1/2 cup honey

Beat eggs until frothy. Add sugar gradually. Mix well. Add remaining ingredients. Beat thoroughly. Pour into 1 gallon freezer. Freeze in crank freezer or electric freezer

Casserole Fruit Cobbler

Nothing says summer time then fruit cobbler....

Casserole Fruit cobbler

2 Tablespoon margarine
1 can prepared pie mix
1 cup sugar
1 cup flour
1 cup milk
1 teaspoon baking powder

Heat butter in oven in deep casserole. Heat prepared pie mix in another pan, just to simmer stage. Mix together sugar, flour, milk and baking powder. Remove casserole from oven. Pour batter in center. DO NOT STIR. Pour hot fruit mix into center of batter. DO NOT STIR. Put back in oven and bake until batter tests done.

Rainbow Cupcakes

These would be great at a birthday...

Rainbow Cupcakes

1 small box white cake mix
red, yellow, green and blue food coloring

Prepare cake mix according to directions. Fill paper cup cake liners 2/3 full. Drop different colors of food coloring on top of each cup cake. With handle of spoon, stir each cake slightly. Bake according to directions. When broken open, cake will have rainbow colors. Ice with any preferred icing.

Lemon Pound Cake

Second recipe for Monday....

Lemon Pound Cake

1 package yellow cake mix
1 package lemon instant pudding
4 eggs
3/4 cup water
2/3 cup salad oil

Combine all ingredients and beat at medium speed on electric mixer for 10 minutes. Pour batter in 2 well-greased loaf pans. Bake 50 to 60 minutes at 350 degrees. Ice with confectioners sugar icing, using lemon juice instead of water.

Spicy Refrigerator Cookies

1/2 stick margarine
1 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 1/4 cup flour, sifted
1 cup nutmeats, finely chopped

Cream sugar, margarine, egg and flavoring. Sift dry ingredients and add to mixture. Add nutmeats. Form dough into 1 1/2 inch rolls. Wrap in waxed paper and refrigerate. Slice very thinly and bake on greased sheets 8 to 10 minutes at 375 degrees. Dough maybe frozen. Makes 4 to 5 dozen.
