Chocolate Chip Cake

What`s better then Chocolate....mmmm nothing

Chocolate Chip Cake

2 cups flour plus 2 Tablespoons flour
1 1/2 cup sugar
4 teaspoon baking powder
1 teaspoon salt
1/2 cup shortening
1 cup milk
2/3 cup egg whites, unbeaten
1/2 cup semi-sweet tidbits
1 teaspoon vanilla

Sift flour, sugar and salt. Add shortening, milk and vanilla. Beat 2 minutes. Add egg whites. Beat 2 minutes longer. Fold in chocolate. Pour into greased cake pan. Bake at 350 degrees for 30 to 35 minutes.

Peanut Butter cookies

This recipe doesn`t have too many ingredients.

Peanut Butter Cookies

1 egg
1 cup sugar
1 cup peanut butter, crunchy
1 teaspoon vanilla

Beat egg and sugar together until light and fluffy. Add 1/2 cup peanut butter and continue beatin. Stir in remaining peanut butter. Add vanilla. Bake 6 to 8 minutes at 375 degrees. Chopped peanuts maybe added. ( there is no flour in these cookies).

Open Face Apple Pie

This would be great for tomorrow ....celebrate America...fireworks and apple pie is their anything better.

Open Face Apple Pie

1 cup water
1 cup sugar
5 large apples
2 Tablespoon margarine
2 Tablespoon flour
1 teaspoon lemon or orange peel
1/4 teaspoon nutmeg
1 Tablespoon brandy , whiskey or rum
1 9-inch baked pie shell
1 cup whipping cream, whipped  sugar to taste

Combine sugar and water and cook until sugar is dissolved. Peel apples, quarter, core and cut each quarter in half. Drop apple slices into syrup and cook until tender., but still hold shape. Let stand 10 minutes,. then remove apples from syrup with slotted spoon and place in bowl. Cream together butter and flour. Add to hot syrup and cook until thickened. Stir in lemon peel, nutmeg and rum. pour thickened syrup over apples and chill. Shortly before serving., pour in pastry crust. Top with whipped cream.

Poor Man`s Pudding



Poor Man`s Pudding

2 cups dry bread cubes
4 cups milk
1 cup sugar
1 Tablespoon butter
1/4 teaspoon salt
4 eggs, slightly beaten
1 teaspoon vanilla
4 Tablespoon cocoa

Soak bread in milk for 5 minutes. Add sugar, butter, cocoa and salt. Pour slowly over eggs. Add vanilla and mix well. Pour into greased 1 1/2 quart baking dish. Bake in pan of hot water about 1 hour at 350 degrees. Serve warm with butter sauce.

Butter Sauce

1/4 cup butter or margarine
2 Tablespoon flour
2 Tablespoon sugar
1 cup water, boiling
1 teaspoon vanilla

Melt butter., Add flour, and sugar. Stir and add boiling water. When ready to serve add vanilla. Stir over low heat.

Oatmeal Cookies

2 recipe for today

Oatmeal Cookies

1 cup brown sugar
1 cup shortening
2 eggs
1/2 cup milk
2 cup flour
1 cup oatmeal
3/4 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup raisins
nutmeats, if desired

Cream shortening and sugar and add eggs. sift flour , soda, cinnamon and salt. Combine with oatmeal. Add dry ingredients alternately with milk to sugar and shortening mixture. Add raisins and nutmeats. Drop by teaspoonful on greased baking sheet. Bake 15 minutes at 350 to 375 degrees.

Yeast Cookies

1 cup warm water
2 Tablespoons sugar
2 packages dry or compressed yeast
1 cup all-purpose flour
1 cup granulated sugar
1 cup brown sugar
1 cup shortening
3 eggs
2 teaspoon soda
2 Tablespoon hot water
2 teaspoon vanilla
1 teaspoon butter flavoring
2 teaspoon cinnamon
1 teaspoon ground cloves
3 cups flour
1/2 teaspoon salt
2 cups raisins

Combine milk, sugar, yeast and flour. Set aside for a few minutes. This is a sponge. Cream together the sugars and shortening. Add eggs. Dissolve soda, hot water and flavorings. Stir all ingredients together with sifted dry ingredients. Stir in raisins, then sponge. Cover with plastic wrap and let stand 1 hour. Do not stir or mix again. Spoon by teaspoon onto an oiled cookie sheet. Bake about 12 minutes at 350 degrees. Frost when cool.
